Livestock feeders operate on a narrow margin of profit. Their profit generally depends on rapid and efficient live weight gains rather than on a wide spread between buying and selling price of the animals. The need for efficient meat production has prompted agricultural scientists to develop and investigate a desperate array of compounds having growth stimulating properties and thereby aid the livestock feeder in improving rate and efficiency of gain. The market situation of inedible animal fats has changed dramatically in recent years. Lard and tallow are not currently used to the extent that they once were in the manufacturing …

Tenderness in meat is a most important characteristic. Meat that has acceptable color, finish and flavor will still be rejected if it is not tender. Tenderness is also a very elusive characteristic and difficult to evaluate. Objective measurements of tenderness have been devised in an attempt to associate tenderness with a more stable factor such as connective tissue, amount of finish, age and size of muscle fibers. These measurements are not entirely successful. Subjective measurements such as taste panels give a better indication of over-all acceptability of meat but do not yield a definite value for tenderness. Experiments on rigor …

The outstanding importance of the vast member of microorganisms in the rumen to the nutritional physiology of the ruminant makes it imperative that the factors influencing the numbers and types of these organism be thoroughly understood. A knowledge of when these ruminal fluctuations occur and their causes, whether it be due to external environment or dietary change, would be of significant value in the preparation of rations which could stimulate the ruminal flora to their maximum efficiency and in turn receive maximum feed efficiency from the animal. The swine industry is a multi-million dollar business in the United States, concentrated primarily in the Corn Belt area. In South Dakota, which is located on the fringe of the Corn Belt, swine production is an important part of the economy of the state, which ranks ninth among all states, in hog numbers. Sphaerophorus necrophorus is of considerable economic importance since it is the cause of many pathological conditions in a wide variety of animals. One such condition is liver abscess of cattle. This one costs the packing industry several million dollars a year. Grant (15) suggested that a selective medium be devised for the isolation and cultivation of S. necrophorus. Becrens (2) has used a veal infusion medium containing brilliant green for the isolation of the organism. The present methods used for determination of fat and protein contents of meat samples are complicated, elaborate, expensive and time-consuming. A large number of these analyses must be made daily in the meat packing industry. A procedure which would decrease the time and expense of these fat and protein determinations and yet maintain the accuracy of the present “official” methods of analysis would be of immeasurable value to the industry. Since biblical times man has depended upon the cow for nourishment. The cow’s contribution to human and animal welfare has been tremendous. These contributions may be increased by artificially producing antibodies in milk. In view of recent experiments the established theory that antibodies cannot pass the intestinal wall after the animal is a few days of age may not be true. Much information has been gathered to support this theory. Since the mammary gland is capable of producing a considerable quantity of antibodies and since antibodies inhibit disease, the milk should be an excellent source of antibodies for disease protection …

The term “selective matings” implies the selection of a sire to breed to each female on an individual, rather than a group or herd basis. Mating systems, other than random mating, may be classed either as the mating of like to like or as the mating of unlikes. This likeness or unlikeness may be based either on blood relationship or on individual appearance. The beef cattle outlook at present is one which demands attention if the needs of the future are to be met. The United States Department of Agriculture has estimated a need for one-third more meat production by 1975. Such an increase is attributable only to the rising population demands and does not reflect increased purchasing power. Investigation into the growth requirements of Sphaerophorus necrophorus (Flugge, 1886) Prevot, 1938 presents a difficult area for study. Only a few such investigations have been attempted in the past for this highly pleomorphic, gram negative, and thread like micro-organism. At present, there is a great deal of confusion concerning its growth characteristics. The development of a chemically defined medium will certainly play an important role in obtaining consistent growth characteristics which are more typical of the organics. Farmers and ranchers have been faced with the problem of bloat for many centuries. Thus far there has been little concrete evidence form research in determining the cause, finding a cure or a preventive for bloat. Numerous preventives for bloat have been practically useless. Investigators have used oils and paraffin’s as prophylactic and therapeutic measure against legume bloat. Antibiotics have been used as preventatives with some success, antifoaming agents have little effect and are of short duration. Tranquilizers, a comparatively a new group of compounds, have produced spectacular results in combatting stress conditions in animals. The ideal effect of tranquilizers …

An aquatic environment involves many complex relationships biologically, physically, and chemically. Many of these relationships are difficult to measure or are little understood. In nature, aquatic environments accommodate many types of aquatic life. Ecological disturbances may cause the environment to become unfit for economically important forms of life. Human interferences often causes polluted waters and naturally occurring disturbances are common. A disturbance of this kind is one of the major problems of fisheries management in the northern Great Plains area – seasonal anaerobosis of fish or other aquatic animals and plants, commonly known as winter kill.
