In recent years, feeding disorders have been described in detail, and various assessment and treatment methods for these disorders have been reported. Within the literature, an emphasis has been placed on functional variables responsible for the onset and maintenance of feeding disorders, yet little has been reported on the relationship between feeding disorders and other forms of psychopathology. Therefore, the relationship between depression and feeding disorders was assessed. Three groups of individuals were compared across subscales and individual items on the Screening Tool for Feeding Problems (STEP) to assess for differences in problematic feeding behavior. An Anthropological Examination Of Classic Maya Burials From Moho Cay, Belize: Skeletal And Dental Evidence Of Demography, Diet And Health, Erin Suzanne Lund

In the Maya area, archaeological excavations have yielded an abundance of skeletal material from a multitude of sites throughout Belize, Guatemala, Mexico, El Salvador and Honduras. In 1979, a series of excavations led by Heather McKillop at Moho Cay, Belize, revealed a number of human interments. This thesis analyzes the Moho Cay skeletal collection composed of remains from eight discrete Late Classic (A.D. 600-800) burials and nine other archaeological units. Skeletal and dental analysis of the remains included assessing minimum number of individuals per burial and establishing age and sex for each individual. The bones were also examined for signs …

Dietary fat is related to cardiovascular disease and numerous intensive, controlled clinical trials have successfully reduced dietary fat in symptomatic populations. However, there has been less success in large, community-based studies with healthy or mildly at-risk populations. Little is known about predictors associated with actual change in dietary fat intake and this is an important omission because dietary interventions are more likely to be successful if they are based on factors known to influence behavior. Steam frothing of milk is required to produce an acceptable foam for many espresso coffee drinks. Specific aspects of composition and processing may affect the foaming properties of milk. The aim of this study was to determine the effect of fat content, heat treatment, free fatty acid addition and storage time on the frothing properties of milk. The four treatments included: fat content (0.08% and 3.25%), pasteurization temperatures (171°F for 15 seconds and 210°F for 45 seconds), pre and post-pasteurization addition of lauric acid solution (0.0% and 2.0% of 0.5 M concentration) and storage time (1 and 10 days). Purpose: The purpose of this investigation was to examine the relationship between average weekly swimming distance and age with body composition in adult female endurance swimmers. Methods: Thirty-five women, aged 21-73 yr. volunteered to participate. Weekly swimming distance was determined from a self-reported exercise log. Body composition was estimated by dual-energy x-ray absorptiometry (DXA), waist circumference, abdominal sagittal diameter, and skinfold thickness measures. Associations between swimming distance and age with body composition were examined using regression analysis. Streptococcus iniae causes meningoencephalitis and death in cultured fish species and soft-tissue infection in humans. We recently reported that S. iniae is responsible for local tissue necrosis and bacteremia in a murine subcutaneous infection model. The ability to cause bacteremia in this model is associated with a genetic profile unique to strains responsible for disease in fish and humans (J. D. Fuller, D. J. Bast, V. Nizet, D. E. Low, and J. C. S. de Azavedo, Infect. Immun. 69:1994-2000, 2001). S. iniae produces a cytolysin that confers a hemolytic phenotype on blood agar media. In this study, we characterized the …

Organic matter is the result of concentrating a few non-metals that are relatively rare in the earth’s crust. Most of these essential elements are in a rough proportionality within phylogenetic groupings. Life is thus working against a concentration gradient to extract or accumulate these elements, and this metabolic work is accomplished in interrelated and often subtle ways for many other elements. The physiological requirement to sustain these elemental ratios (commonly discussed in terms of the N∶P ratios, but also C∶N, C∶P, and Si∶N ratios) constrains organization at the cellular, organism, and community level. Objective: To evaluate the performance of the body mass index (BMI), waist circumference, waist-to-hip ratio (WHR), and waist-to-height ratio (WHTR) in predicting incident diabetes in Jamaica. Research Methods and Procedures: A cohort of 728 non-diabetic adults (290 men and 438 women), ages 25 to 74 years and residents of Spanish Town, Jamaica, were followed for a mean of 4 years. Participants had fasting and 2-hour postchallenge glucose concentrations measured at baseline and follow-up. Results: There were 51 cases of incident diabetes (17 men and 34 women). All indices were independent predictors of diabetes, and none was clearly superior. The area …

Background: The prevalence of obesity is higher among populations in industrialized than in developing countries. Objective: We sought to compare the relations of activity energy expenditure (AEE) with adiposity and weight change in 2 black populations with different levels of obesity. Design: Total daily energy expenditure (TDEE) and resting energy expenditure (REE) were measured and AEE was calculated in 58 Nigerian and 34 US black women and men. Weight was remeasured after ≥1 y in a subset of participants. AEE adjusted for body size and TDEE adjusted for REE were calculated with the use of the residual regression method. The …

The objective was to determine the effect of a peptide sweetener, Aspartame, compared to a carbohydrate sweetener, sucrose, on the microstructure of yogurt. Microstructure was determined by transmission and scanning electron microscopy. Without the sweeteners, casein micelles, that make up the yogurt matrix, were observed in single longitudinal polymers. When Aspartame was used, casein micelles formed double longitudinal polymers. In comparison sugar caused casein micelles to form clusters. Data show that type of sweetener impacts state of association of casein micelles and thus effects microstructure.

In order to study the influence of the vacuum evaporation (VE) process on the functionality of whey protein concentrates (WPC's), Cheddar WPC's were produced with and without VE, viz. by i) ultrafiltration (UF) and spray drying (SD) (UFSD), and by ii) UF, VE and SD (UFVESD). Geling properties and interfacial microstructure around residual fat were studied by transmission electron microscopy. Both WPC's were hydrated with 0.1 M NaCl at pH 7.0 (10% protein w/v) and gels were made in glass tubes by heating for 15 min at 90°C. A longitudinal study was conducted on the differential faecal egg counts, haematocrits and body condition scores of sheep belonging to resource-poor farmers at Rust de Winter, Gauteng province, and Kraaipan, North West Province, South Africa. The animals were scored for level of anaemia using the FAMACHA© method, an assay for the clinical evaluation of anaemia caused by Haemonchus spp. Periods of higher Haemonchus egg counts occurred from October to March for sheep at Rust de Winter and from September/October to February or April for sheep at Kraaipan. The aim of this study was to test short-term and long-term reliability of venous outflow (VO) indices using the venous occlusion plethysmography technique. A secondary purpose was to compare venous measures to age, gender and various anthropometrical measures. The study group consisted of apparently healthy males and females, aged 18 to 80 years. A Tn7-based transposition system carrying a kanamycin resistance gene has been used to disrupt a known virulence gene of Brucella melitensis 16M and Brucella abortus 2308 in-vitro. The suicide plasmid pBAvirB1::kan-29 was created, in part, by cloning the B. abortus virB1 gene into a vector that is not stably maintained in Brucella spp. The cloned virB1 gene was then mutagenized by in-vitro transposition of a Tn7-based transposon. This construct was used in-vivo to insert a disrupted virB1 gene in place of the wild type virB1 found in B. abortus 2308 and B. melitensis 16M by homologous recombination. The resulting virB1 …

Little is known regarding the feeding behavior of many shark species. Even less is known about shark feeding habits in Louisiana coastal waters. The stomach contents of gillnet-captured blacktip sharks (n=356), Carcharhinus limbatus, and Atlantic sharpnose sharks (n=55), Rhizoprionodon terraenovae, were examined in this study. Roughly half of the blacktip stomachs (52%) and sharpnose stomachs (45%) contained prey items. The primary prey item in terms of percent number, occurrence, and weight for blacktips and sharpnose was the gulf menhaden, Brevoortia patronus. Both blacktips and sharpnose appear to mainly be piscivores; however, no members of Sciaenidae, the most common family of …

This study analyzes cutmarks on the femora from the Poole-Rose ossuary as evidence of postmortem cultural modification related to the Feast of the Dead. The ossuary is located in southern Ontario, Canada, and dates to A.D. 1550 ±50. The Feast of the Dead is a burial custom associated with the Huron and other groups of the Great Lakes. The relative size of the population is compared to other indigenous North American skeletal populations. Women experience more weight gain than men postcessation and are more aware of nicotine’s weight suppressing effects than men. Postcessation weight gain in women can be largely accounted for by significant increases in high fat foods from pre- to postcessation. Overeating found in the luteal phase, further compounds the increased caloric intake found postcessation. Few studies have evaluated the long-term effects of smoking cessation on macronutrient content and weight gain; and most have relied on self-report data. Due to its high market value, Florida pompano (Trachinotus carolinus) has long been regarded as a promising species for aquaculture. Although pompano exhibit several favorable traits for culture, previous studies have indicated that fish larger than 200 g exhibit poor growth. This study was conducted to determine the effects of different feeding strategies on production characteristics of pompano raised in closed recirculating systems. Transverse (Harris) lines are lines of opacity that extend across the medullary cavity in long bones; they are sometimes are also found in irregular bones. Predominantly, Harris lines are seen in radiographs of the tibiae. Many scholars believe that these lines of opacity are caused by nutritional interruptions during growth, while others believe these lines to be indicators of stress recovery, rather than interruption. The Poole-Rose ossuary, a prehistoric Native Canadian population from Ontario, Canada, represents a Late Woodland period communal burial that has been radio-carbon dated to 1550 A.D. +/- 50 years. The location and attributes of this ossuary, a secondary burial deposit, led the site's excavator, Dr. Heather McKillop, to believe that it is a part of the "Feast of the Dead" ceremony. Due to commingling of the individuals, the human remains from this ossuary have been analyzed by element. Quality deterioration of smoked catfish is caused by lipid oxidation and microbial spoilage. Smoked catfish can be cross-contaminated during processing and may harbor several pathogens, e.g., Listeria monocytogenes, and Salmonella spp. Lipid oxidation causes unpleasant flavor, thus making smoked fish unacceptable. Hydroperoxides and free radicals, formed during oxidation, may directly react with fish tissues to promote complex reactions. Through such complex reactions, physicochemical properties of smoked catfish may be adversely affected. A combination of smoking and treatments with antimicrobial agents and antioxidants would retard microbial spoilage, extend shelf life, and enhance safety of smoked catfish.
