Influence Of "Added" Whey Protein Isolate On Probiotic Properties Of Yogurt Culture Bacteria And Yogurt Characteristics, Luis Alfonso Vargas Lopez

LSU Master's Theses

Consumers are becoming conscious of their diet, increasing protein intake and avoiding carbohydrates and fats. Whey proteins have branch chain amino acids responsible for muscle building. Whey protein isolate (WPI) contains more than 90% protein. The effect of incremental addition of WPI on probiotic characteristics of pure cultures and cultures in yogurt and yogurt characteristics are not known. The hypothesis was that “added” WPI will influence the characteristics of yogurt culture bacteria in pure form and in yogurt. The objectives were: to determine the influence of added WPI on (1) acid and bile tolerance, growth and protease activity of pure …

The Use Of Duddingtonia Flagrans For Gastrointestinal Parasitic Nematode Control In Feces Of Exotic Artiodactylids At Disney's Animal Kingdom®, Jenna Terry Jan 2013

The Use Of Duddingtonia Flagrans For Gastrointestinal Parasitic Nematode Control In Feces Of Exotic Artiodactylids At Disney's Animal Kingdom®, Jenna Terry

LSU Master's Theses

Gastrointestinal nematodes (GIN) are parasites of major concern for domestic and exotic ruminant species around the world. In the past, zoological facilities used anthelmintics as their primary control method. Challenges in accurate dosing and administration of anthelmintics to exotic hoofstock contributed to the development of resistant nematode populations in zoological settings. The historic dependency on anthelmintics to control GIN populations is no longer an option. Biological alternatives are urgently needed, in both exotic and domestic ruminants, in the war against resistance. One such alternative is the use of the nematophagous fungus, Duddingtonia flagrans. Three independent studies were conducted: A nine …

On Human Biological Diversity : Variation In Sexual Dimorphism Of The Skull Between African-Americans And European-Americans, Amanda Grace Kittoe

LSU Master's Theses

This study assesses sexual dimorphism of the skull in samples of African-Americans (AA) and European-Americans (EA). Morphology of the cranium is classically referenced as an indicator of sexual dimorphism in the fields of bioarchaeology and forensic anthropology. Variation in size and shape of cranial elements has been found to differ significantly between ancestral populations. Abundant research suggests that patterns of sexual dimorphism also vary between ancestries. This study uses a sample of 55 AA females, 50 AA males, 49 EA females, and 49 EA males from the Hamann-Todd Collection at the Cleveland Museum of Natural History and the WM Bass …

Determination Of Cane Berry Pomaces Benefits Through In Vitro Model For Human Colonic Fermentation, M'Famara Goita Jan 2013

Determination Of Cane Berry Pomaces Benefits Through In Vitro Model For Human Colonic Fermentation, M'Famara Goita

LSU Master's Theses

Cane berry pomaces have traditionally been considered waste products with little or no value. Yet these pomaces’ high levels of phenolic compounds such as anthocyanins, is a good source of dietary fiber. Because the pomaces are low in sugar and rich in fiber and dietary antioxidants, they have potential as food ingredients for the health food market. The pomace delivers health benefits associated with high fiber and the antioxidant polyphenolic compounds associated with whole fruits and juices without the high sugar content. Some dietary fibers are substrates for anaerobic fermentation by the microbiome in the lower gastrointestinal (GI) tract. The …

Insulin Secretagogue Activity Of Ellagic Acid-Rich Muscadine (Vitis Rotundifolia) And Indian Gooseberry (Emblica Officinalis) Extracts On Pancreatic Beta Cells, Srikanth Earpina

LSU Master's Theses

Diabetes is an inflammatory disease associated with hyperglycemia. Chronic exposure of pancreatic â-cells to glucolipotoxicity stimulates a low-grade inflammation associated with the release of pro-inflammatory cytokines such as interleukin-1â (IL-1â). Increased levels of IL-1â can initially lead to decreased insulin secretion and finally â-cell death. Ellagic acid and quercetin have been reported to be anti-inflammatory in several studies. Vitis rotundifolia (muscadine) or Emblica officinalis (amla) are good sources of ellagic acid and quercetin. Ellagic acid or quercetin is bioavailable as is or are metabolized into bioavailable urolithins or isorhamnetin, respectively. The objective of this study was to evaluate the effect …

Changes In Anthocyanins Throughout The Processing Of Muscadine (Vitis Rotundifolia) Wine, Luke Aaron Mumphrey

LSU Master's Theses

Grapes from Vitis rotundifolia ( Muscadine) are rich sources of different phenolic compounds, (e.g. ellagic acid, myricetin, quercetin, kaempferol, resveratrol, etc.) which are purported to provide health benefits, possibly as antioxidants. Anthocyanins, a pigmented subgroup of the flavonoid group, are responsible for intense pigmentation in the grapes. Maximizing anthocyanins in products is a priority for color, and preservation of potential health benefits. This research focused on measuring changes in the anthocyanins as wine is produced commercially from a single crop of Vitis rotundifolia var. Ison grapes. Samples were taken at points throughout the vintification process, and phenolics and anthocyanins were …

Some Effects Of Nutrient And Flooding Stress Manipulation On Coastal Louisiana Wetland Vegetation, James Stephen Ialeggio Jan 2013

Some Effects Of Nutrient And Flooding Stress Manipulation On Coastal Louisiana Wetland Vegetation, James Stephen Ialeggio

LSU Master's Theses

Freshwater diversions are a relatively recently utilized tool in wetland loss mitigation that stimulate an organic accretion response in marsh vegetation, which is based in root production and thus belowground biomass. The effectiveness of freshwater diversions in slowing marsh loss probably varies across a gradient of the factors they supply: decreased salinity, increased nutrient concentrations, and increased inundation. Flooding stress is commonly thought to be the overriding factor limiting wetland vegetation growth, however its influence may vary across salinity and nutrients. Therefore, plugs of Spartina patens were planted in four “marsh organs” consisting each of 36 sediment-filled PVC pipes of …

Validation Of The Remote Food Photography Method To Quantify Intake Of Infant Formula, Abby Duhe Jan 2013

Validation Of The Remote Food Photography Method To Quantify Intake Of Infant Formula, Abby Duhe

LSU Master's Theses

Childhood obesity rates have more than tripled since the 1970s, and this increased prevalence is cause for concern as childhood obesity increases the risk of adult obesity and other comorbid diseases. Evidence suggests that the origins of obesity can be identified in infanthood. Accurate methods of assessing food intake in infants can be utilized to establish effective feeding practices in infanthood and to assess the relationship between infant feeding practices and the risk of childhood obesity. Current methods are either subjective or have limited ability for widespread use beyond clinical research settings due to cost and high burden. The aim …

In this study, the author sought to identify the relationship between childhood sexual abuse, obesity, (specifically, body mass index [BMI]), and attitudes toward obesity among lesbian and bisexual women. Eighty-five sexual minority females completed a survey. Childhood sexual abuse was found to be positively correlated with …

Marr Family Transcriptional Regulators From Streptomyces Coelicolor, Hao Huang Jan 2013

Marr Family Transcriptional Regulators From Streptomyces Coelicolor, Hao Huang

LSU Doctoral Dissertations

A family of transcriptional regulators that ubiquitously exists in prokaryotes is the multiple antibiotic resistance regulator (MarR) family. These transcriptional regulators participate in many cellular processes and can provide valuable knowledge about transcriptional regulation in response to specific conditions. The closely related MarR homologs TamR (trans-aconitate methyltransferase regulator) and PecS in Streptomyces coelicolor were studied to investigate their potential role in this bacterium. In Streptomyces coelicolor, the gene (SCO3133), which encodes TamR, is oriented divergently from the tam gene, which encodes trans-aconitate methyltransferase. TamR was found to regulate several target genes, which encode several enzymes closely related to the citric …

Essays On The Impact Of Income On Family And Child Well-Being, Christian Werner Raschke Jan 2013

Essays On The Impact Of Income On Family And Child Well-Being, Christian Werner Raschke

LSU Doctoral Dissertations

In this dissertation I offer three independent studies that each contribute to the literature on the impact of income on family and child well-being. I present three essays that investigate three different contexts and sources of income variation. First, I investigate the extent to which an unconditional cash transfer to families in Germany that is intended to benefit children actually translates into an improvement in the circumstances related to child well-being. Next, I analyze how shocks to mothers’ earnings impact their demand for health inputs during pregnancy, and how this affects the health of the newborn child. The fourth chapter …

Effect Of Bitterness Blockers And Salt Substitutes On The Quality Of Low Sodium White Cheddar Cheese, Kennet Mariano Carabante Jan 2013

Effect Of Bitterness Blockers And Salt Substitutes On The Quality Of Low Sodium White Cheddar Cheese, Kennet Mariano Carabante

LSU Master's Theses

Reducing added salt in processed foods is one of the major challenges facing food industry worldwide. Salt (NaCl) replacement in a Cheddar cheese has been successfully achieved up to 25%, which qualifies it as “reduced sodium”. However, a low sodium cheddar cheese (less than 140 mg Na/ 50 g cheese) requires at least 50% of salt reduction. Bitterness is one obstacle for development of an acceptable low sodium cheddar cheese. In this study, sensory optimization of low sodium white cheddar cheese was performed. A 3-component mixture design was used: NaCl (30-60%), KCl (45-65%) and glycine (5-10%). A fixed level of …

Role Of Retrotransposons As A Major Source Of Intra- And Inter-Individual Epigenetic Variations In The Mammalian Genome, Muhammad Badre Ekram Jan 2013

Role Of Retrotransposons As A Major Source Of Intra- And Inter-Individual Epigenetic Variations In The Mammalian Genome, Muhammad Badre Ekram

LSU Doctoral Dissertations

Transcription of retrotransposons is usually repressed by DNA methylation, but a few elements partially escape this repression mechanism. I used two approaches as my dissertation study to identify unmethylated intracisternal A-particles (IAPs) and also to understand why some of IAPs escape DNA methylation-mediated repression. Firstly, I sought to catalog the retrotransposons (LTRs and LINEs only) in the mouse genome known as ‘epialleles’ which escape the repression variably even in individuals with an identical genome sequence. Using bioinformatic approaches, 143 candidate epialleles were first identified based on their promoter activity and association with active histone modification marks. Detailed methylation analyses suggested …

Heart failure (HF) has become a major health problem with its high prevalence, poor clinical outcomes, and large health-care costs. Compared with medical intervention, the prevention of HF through lifestyle approaches is free of side effect. Therefore, the prevention of HF through lifestyle approaches is of special interest. In this project, we aim to investigate 1) the association of different levels of occupational, commuting and leisure-time physical activity with HF risk; 2) the association of coffee consumption with HF risk; 3) the role of lifestyle factors in explaining the risk of HF; and 4) the association between antihypertensive drug treatment …

Examining Neotropical Primate Community Structure At Regional And Local Scales : Insights From Taxonomic And Phylogenetic Approaches, Maria Mercedes Gavilanez Jan 2013

Examining Neotropical Primate Community Structure At Regional And Local Scales : Insights From Taxonomic And Phylogenetic Approaches, Maria Mercedes Gavilanez

LSU Doctoral Dissertations

Understanding mechanisms underlying distribution of biodiversity remains a central issue in ecology. I integrate ecological and phylogenetic information at multiple spatial scales to better understand neotropical primate distribution and community structure. I investigate the variation within species ranges in relation to species richness and patterns of species relatedness. Results suggest positive associations among species throughout their distributions, whereby species tend to present higher richness within their ranges than average richness for the entire taxon. However, comparing empirical distributions to a null model of range cohesion suggests mechanisms other than dispersal are setting a limit to the number of species capable …

Nonprofit Organizations In The Making Of Civic Community : Exploring How The Structure Of Nonprofit Sectors Matters For Community Wellbeing, Sarah Prater Walsh

LSU Doctoral Dissertations

In this dissertation, through the lens of the civic community perspective, I examine the role of nonprofit organizations in enhancing community wellbeing. The primary contribution of this dissertation to existing literature on civic communities is the theoretical development of the concept of civically engaging institutions. I take a multifaceted approach to the understanding and investigation of civically engaged institutions, in which I expand the concept beyond civic congregations and associations, to include all organizations categorized as nonprofit. Synthesizing literatures on nonprofit organizations and civic communities, I argue that nonprofits can be considered locally oriented and civically engaged as they are …

Psychological Biases Affect Hedonic Ratings, Wannita Jirangrat Jan 2013

Psychological Biases Affect Hedonic Ratings, Wannita Jirangrat

LSU Doctoral Dissertations

Psychological biases in consumer testing may lead to misinterpretation of results and lower experimental power. Reports on various hedonic scales associated with psychological biases induced by sample presentation are limited in the literature. An appropriate experimental protocol could enable sensory scientists to accurately determine if a product is more or less liked. Overall, in this study some drawbacks of hedonic scales were revealed and some recommendations were made under specific circumstances. A more powerful design (SPRCBD) helped minimize positional and First Serving Order (FSO) biases in consumer tests by extracting more explained variances, resulting in decreased Type-II error in the …

Studying Mechanisms Of Ionizing Radiation Resistance In Bacteria: Evidence For Multiple Pathways, Kathiresan Selvam

LSU Doctoral Dissertations

Our lab created ionizing radiation (IR) resistant populations of E. coli MG1655 through twenty cycles of exposure to IR and outgrowth. To identify the genetic alterations responsible for increased IR tolerance, a total of seven isolates from the evolved final population were re-sequenced. However, the individual isolates sequence analysis revealed wide variety of unique genomic alterations with little overlap between the seven isolates and therefore, did not reveal the clear picture of the mutations responsible for IR resistance. Our current research focused on distinguishing the relevant mutations from the non-relevant mutations that contribute to IR resistance by using two methods: …

Development Of Safe And Ready To Eat Frozen Oyster Products Using Microwave Steam-Venting Technology, Luis Alberto Espinoza Jan 2013

Development Of Safe And Ready To Eat Frozen Oyster Products Using Microwave Steam-Venting Technology, Luis Alberto Espinoza

LSU Doctoral Dissertations

The Gulf Coast region, principally Louisiana, leads the nation in oyster production. The National Marine Fisheries Service reported that 19.7 million pounds of oyster meat, valued at $62.3 million dollars were harvested from the Gulf Coast region in 2010. One of the main concerns for this industry is the health risk associated with the consumption of oysters, particularly for at-risk populations. Oysters are filter feeders. They tend to concentrate microbes present in surrounding waters, some of which can cause severe illness in susceptible humans. Among pathogens that contaminate the gastrointestinal system of oysters, Vibrio spp (especially V. parahaemolyticus and V. …
