The bioactive compound vitamin E is essential for human health. It has been reported to reduce the risk of cancer, cardiovascular disease, diabetes and aging. One of the main concerns about the availability of vitamin E is the stability, or lack thereof, associated with the processing and storage of it. Degradation could occur when vitamin E is exposed to light, temperature or oxygen, which results in the loss of efficacy. Glycogen is the storage polysaccharide in a spectrum of organisms ranging from yeast to humans. Glycogen has a highly branched structure somewhat resembling a tree or shrub, with the branch points formed by glucose molecules being joined by α 1,6-glycosidic linkages. These linkages are formed by the action of branching enzyme. Branching of glycogen is critical to health, with a lack of branching causing glycogen storage disease type IV, which is fatal in humans by age 2. Reducing the particle size of sodium chloride crystal would increase its dissolution rate leading to a more efficient transfer of the ions to the taste buds and hence perhaps a saltier perception of foods. The objective of this study was to develop submicrosalt by using a nanospray drying method, its use in surface salted cheese crackers and evaluating their physico-chemical, microbiological and sensory characteristics. Hepatitis A virus (HAV) infection is the leading worldwide cause of acute viral hepatitis, and its outbreaks often occur from fecal contaminated shellfish. HAV is extremely stable in the environment and can survive 3~10 months in water. In addition, HAV can be bio-concentrated by shellfish by as much as 100 fold from fecal contaminated waters. Bacteriophage MS2 is used widely as a surrogate for HAV, and its presence has been proven to be a reliable indication of the presence of HAV. The primary purpose of the study is to investigate the trends in soil nutrient levels from soil samples submitted to the LSU AgCenter soil testing and plant analysis laboratory during 2008 to 2012. This study indicates the trend for soil pH, soil phosphorus and soil potassium for corn, cotton, rice, grain sorghum, soybeans, and sugarcane. These six crops were analyzed in this study because of the economic significance to the Louisiana agricultural industry. The research problem of this thesis was to compare strategies and costs of protecting impatiens in greenhouse culture from western flower thrips that would provide a plant of acceptable quality to the market and would address the issue of development of resistance to commonly used pesticides by evaluating biopesticides. Partial budgets based on alternative strategies were identified. Six control strategies were identified from a combination of commercial growers, research experts and biopesticide recommendations from product distributors. Our lab created ionizing radiation (IR) resistant populations of E. coli MG1655 through twenty cycles of exposure to IR and outgrowth. To identify the genetic alterations responsible for increased IR tolerance, a total of seven isolates from the evolved final population were re-sequenced. However, the individual isolates sequence analysis revealed wide variety of unique genomic alterations with little overlap between the seven isolates and therefore, did not reveal the clear picture of the mutations responsible for IR resistance. Phosphorus (P) is an essential nutrient for all life forms, including plants, but is a limited agricultural resource whose future availability is in question. Therefore, identification of alternative forms of P fertilizers is important. Poultry litter ash (PLA), a byproduct of bioenergy production, contains high concentrations of P comparable to conventional fertilizers. Forms of P contained in PLA have been characterized as having low water solubility. The current study investigated the relationship between burnout, wellness, and altruistic motivation of entry level, live in and live on residence life staff. The literature review consists of empirical research for each construct presented (burnout, wellness, and altruism). The study sampled utilized were live-in and live on full time, entry level residence life personnel employed at predominately white public and private institutions in the southeastern part of the United States. Multiple regression analysis was used answer specific research questions. Consumers with full-time jobs prefer microwavable-frozen-meals for convenience when lack time to cook. Microwaves do not require a medium for heat transfer and provide quick heating even in low thermal conductivity foods, which does not occur in conventional heating. The main problem in utilizing microwave-heating for cooking is the non-uniform temperature distribution in foods which may result in insufficient lethality of microorganisms in some part. Transcription of retrotransposons is usually repressed by DNA methylation, but a few elements partially escape this repression mechanism. I used two approaches as my dissertation study to identify unmethylated intracisternal A-particles (IAPs) and also to understand why some of IAPs escape DNA methylation-mediated repression. Firstly, I sought to catalog the retrotransposons (LTRs and LINEs only) in the mouse genome known as ‘epialleles’ which escape the repression variably even in individuals with an identical genome sequence. "Vibrio parahaemolyticus" (Vp) and "Vibrio vulnificus" (Vv) are halophilic bacteria naturally occurring in estuarine environments that may concentrate in filter feeding shellfish. Consumption of raw or under-cooked seafood contaminated with Vp or Vv may lead to the development of acute gastroenteritis or fatal septicemia in at-risk individuals, respectively. There is a pronounced public awareness about herbal remedies. Garlic and ginger have antibacterial properties and prevent cardiovascular diseases. Onion and turmeric decrease the risk of diabetes and like garlic, they have anticancer properties. Streptococcus thermophilus, Lactobacillus bulgaricus and Lactobacillus acidophilus are lactic acid bacteria that produce lactase and reduce the symptoms of malabsorption. Understanding mechanisms underlying distribution of biodiversity remains a central issue in ecology. I integrate ecological and phylogenetic information at multiple spatial scales to better understand neotropical primate distribution and community structure. I investigate the variation within species ranges in relation to species richness and patterns of species relatedness. Results suggest positive associations among species throughout their distributions, whereby species tend to present higher richness within their ranges than average richness for the entire taxon. However, comparing empirical distributions to a null model of range cohesion suggests mechanisms other than dispersal are setting a limit to the number of species capable …

Matrix-assisted laser desorption ionization (MALDI) time of flight mass spectrometry was used to identify shrimp at the species level using commercial mass spectral fingerprint matching software (Bruker Biotyper). In the first step, a mass spectrum reference database was constructed from the analysis of six shrimp species that are commercially important in the United States: L. setiferus, F. azticus, S. brevirostris, P. robustus, P. dispar and P. platyceros. In the second step, the reference database was tested using 74 unknown shrimp samples from these six species. Reducing added salt in processed foods is one of the major challenges facing food industry worldwide. Salt (NaCl) replacement in a Cheddar cheese has been successfully achieved up to 25%, which qualifies it as “reduced sodium”. However, a low sodium cheddar cheese (less than 140 mg Na/ 50 g cheese) requires at least 50% of salt reduction. Bitterness is one obstacle for development of an acceptable low sodium cheddar cheese. The primary contribution of this dissertation to existing literature on civic communities is the theoretical development of the concept of civically engaging institutions. Eighteen neonatal Holstein bull calves (38.85 ± 4.71 kg) were assigned to one of two treatments at birth to determine the effect of feeding time on growth, nutrient intake, metabolic hormone secretion, and energy metabolism. Regularly fed calves (n = 9) were fed MR daily at 0630 h, and irregularly fed calves (n = 9) at 1030, 0800, 0630, 0830, 0530, 0930, and 0730 Monday through Sunday. Psychological biases in consumer testing may lead to misinterpretation of results and lower experimental power. Reports on various hedonic scales associated with psychological biases induced by sample presentation are limited in the literature. An appropriate experimental protocol could enable sensory scientists to accurately determine if a product is more or less liked. Overall, in this study some drawbacks of hedonic scales were revealed and some recommendations were made under specific circumstances. The cryopreservation of equine expanded blastocysts (>300 um) has been largely unsuccessful primarily due to the low permeability to cryoprotectants and the large size of the equine embryo. Mechanical alternatives may provide means to overcome the capsule barrier and the relative large embryo size. Alternative or supplemental management activities may be necessary to restore and enhance oyster production on Louisiana public oyster reefs. The production of wild oysters is variable due to anthropogenic and environmental factors that affect recruitment, growth and survival. In many professional practice settings, it is very likely that social workers will work with female clients who identify as lesbian or bisexual. These sexual minority females are more likely to be overweight or obese, have a history of childhood sexual abuse, and have more positive attitudes toward overweight and obesity than heterosexual women. In this study, the author sought to identify the relationship between childhood sexual abuse, obesity, (specifically, body mass index [BMI]), and attitudes toward obesity among lesbian and bisexual women.
