Residential Summer Camp: A New Venue For Nutrition Education And Physical Activity Promotion, Alison K. Ventura, Barry A. Garst

Background

Millions of children attend residential summer camps each year. However, few studies have examined the potential of camps for obesity prevention efforts. Research in the domain of positive youth development has shown that camp programs as short as one week have both short- and long-term positive effects on self-esteem, self-efficacy and other youth outcomes. The objective of the present study was to highlight the potential of resident camps as promising venues for the promotion of healthy eating and physical activity behaviors in the children who attend.

An Educational Video And Research Experiment On The Longevity Of Chicken Eggs, Kyle Patrick Mcdonald

The purpose of this project was to create a video designed to educate the public about chicken egg storage and refrigeration. The information in the video was based on a research experiment performed by the author, which was designed to measure the chronological decline of internal egg quality over a ten-week period. By creating an educational video about the longevity of chicken eggs, it is hoped that consumers will learn to keep their eggs past their sell-by dates. This project includes an educational video as well as an outline for a research project.

Coffee is a popular and well-loved beverage consumed worldwide by millions of people every day. While most patrons of coffee do so because of its unique and satisfying taste, consumers may be unaware of the potential beneficial health effects it also imparts. The antioxidants found in green coffee beans collectively known as chlorogenic acids (CGA) and caffeine are two of the most abundant bioactive compounds present in coffee. As the prevalence of vitamin D deficiency continues to grow, mounting evidence supporting its link with chronic disease strengthens suggesting vitamin D’s candidacy in the prevention and treatment of multiple disease states and their complications. Dietary guidelines, however, do not take sun exposure into account. The present study sought to explore the impact of sun exposure on vitamin D status (serum 25(OH)D), and identify other significant determinants of serum levels which may have the greatest effects on overall health. The prevalence of obesity in US adolescents has more than tripled in the past 35 years, and the greatest impact has been among low-income and minority racial/ethnic populations. Adolescents report inadequate fruit and vegetable intake, an overconsumption of sweetened beverages, and a high reliance on fast food locations for meals or snacks; increasing the risk of adolescent obesity. Determinants Of Food Insecurity Among Vulnerable White And Latino Households: Contextualizing The Impact Of Sociodemographic And Household-Level Factors, Alexandra Lund

Household-level characteristics have been shown to be associated with food insecurity but studies among vulnerable populations are sparse. A food security assessment was developed to determine food security and collect sociodemographic and household level data across San Luis Obispo County. The assessments were administered to vulnerable groups through interviews at multiple sites across the County. Three household characteristics (marital status, number of children in the household and number of workers in the household) were examined in this analysis. A total of 808 surveys were collected, 69% in English and 31% in Spanish. Through ethnicity-stratified sequentially adjusted logistic regression models, the …

This research study was conducted to determine the effectiveness of using facilitated group discussion (FGD), a less traditional method of nutrition education, for increasing parents’ feelings of self-efficacy in their ability to make nutrition-related decisions, and to set and enforce nutrition-related boundaries with their children.

Biofilms are present in virtually every solid-liquid contact surface and are partially responsible for some diseases and water cleaning. They are a community of a variety of organisms that live symbiotically and are bound together by extracellular polymeric substances, or EPS. Biofilms go through five stages of development. These include initial and irreversible attachments, maturations I and II, and dispersion. In the dental world, biofilms are often associated with mouth infections including dental caries, gingivitis and periodontitis. Milk quality criteria and limits for somatic cell count (SCC) established in many countries make it difficult to maintain SCC of bulk tank goat milk below the threshold, due to non-infection factors linked to goat physiology. The aim of this study was to objectively verify the effects of SCC on fresh caprine milk cheese. Somatic cells were recovered from pooled healthy goat milk, and added to low SCC raw or pasteurised goat milk. Miniature cheeses were made and evaluated after 1 and 7 d. Somatic cells had a major effect on lipolysis, increasing free fatty acids regardless of whether milk …

The Cal Poly Goat Program was established in the Summer of 2012 to provide vegetation management services on the Cal Poly campus and to allow students to gain hands on experience with goats. Student interest in adding goats as an additional species in the Animal Science Department spurred the realization and development of the program. The department also experienced demand for goats to use for vegetation management at the animal units and around various facilities on campus. The Goat Program integrates Cal Poly’s hands-on, ‘Learn by Doing’ philosophy with sustainable management practices to serve the needs of students as well …
