The study of coprolites from earlier cultures represents a great opportunity to study an “unaltered” composition of the intestinal microbiota. To test this, pre-Columbian coprolites from two cultures, the Huecoid and Saladoid, were evaluated for the presence of DNA, proteins and lipids by cytochemical staining, human and/or dog-specific Bacteroides spp. by PCR, as well as bacteria, fungi and archaea using Terminal Restriction Fragment analyses. DNA, proteins and lipids, and human-specific Bacteroides DNA were detected in all coprolites. Multidimensional scaling analyses resulted in spatial arrangements of microbial profiles by culture, further supported by cluster analysis and ANOSIM. Differences between the microbial …

With the substantial increase in demand for wine, enhanced knowledge of consumers’ preferences for wine can help give wineries an opportunity to improve sales and bring in new marketing techniques. The purpose of this project was to create middle school agriculture curriculum for the top three agriculture commodities in Humboldt County. It was designed and created specifically for Humboldt County to educate the upcoming generations about the unique and diverse agriculture industry Humboldt County provides. It is hoped that this easy and ready to use curriculum will get the students interested and involved in the agriculture industry in the future years. Effects of two types of chelating agents on proteolysis and texture properties of low fat Cheddar cheese (LFC) were analyzed and compared to full fat Cheddar (FFC) control during ripening for 120 days at 8°C. We hypothesized that chelating agents would bind calcium ions from cheese matrix to give a softer curd due to a decrease of protein-protein interactions and simultaneously increasing moisture content. Cheese milk containing (0.59% fat) was divided into three lots (A, B & C). Sodium citrate (3Na) and disodium EDTA (EDTA) were added to A & B at the rate of (0.02% and 0.2% respectively. C …

Our design for this project began with building a strong understanding of the current production process. A meeting with the manager, Anna Nakayama, provided a detailed overview of the entire process and outlined some areas of concern. In addition, she provided us with access to critical data such as standard operating procedures and inventory spreadsheets. From there, time studies were conducted for each of the 8 types of chocolate. These time studies helped identify three main issues facing Cal Poly Chocolates. Women’s food purchasing and eating habits have been studied in detail, but are still not entirely understood. Prior research has sought to segment the female food shopper market, but typically use only demographic characteristics. In this study, fifty females were recruited in San Luis Obispo, CA from March 2012 to May 2012 to keep an electronic food-time diary for one week. By collecting information through surveys distributed using a smartphone application, SurveySwipe, the study investigated the amount of time expended for each meal, as well as the manner in which the meal was prepared or purchased, and the context surrounding …

Alexandre Family EcoDairy Farms (AFEF) is a family dairy farm, producing organic milk in northern California. In the last decade, AFEF has been expanding in value added natural food enterprises, including pastured free-range eggs, pastured pork and grass-fed beef.
This study focuses on the analysis of an organic grass-fed ground beef from dairy-beef cross steers coming from AFEF. The grass fed beef enterprise was analyzed by adopting a UC Davis cost and returns study, modifying it to AFEF production limitations and conditions. EXECUTIVE SUMMARY
Today there is much talk about different sources for biofuel to replace the decreasing supply of fossil fuels. Algae seem very promising with its abundance across the globe and relatively simple growing conditions. Lipids can be extracted from this organism which is then converted to biofuel. Although biofuel production from algae is not economically viable at this stage, researchers are suggesting using the by-products of algae for supplemental and healthcare use. If true, this could justify the economics of obtaining fuel from algae by creating more markets from various algae products.

The objective of this study was to examine the influence of age on food intake, tissue and organ mass and NF-ĸB and SIRT6 levels in various tissues. The transcription factor, Nuclear Factor Kappa-B (NF-ĸB), is associated with both catabolic and anabolic pathways of muscle metabolism and may be involved in age-related muscle loss. SIRT6 is a member of the sirtuin family of proteins that function as protein lysine deacetylases and are associated with longevity in a number of organisms. Acculturation, the shift from one culture’s values, beliefs and practices to those of a new culture, may have both negative and positive health effects on immigrants. Prompted by residents and local organizations, cities are hoping to capture the benefits that urban agriculture provides. Research has shown that urban agriculture renews and beautifies neighborhoods, provides healthy food choices, increases public health, has the potential to help with stormwater runoff, creates jobs, and fosters community. Transit agencies at all levels of government monitor trends in services, operations, and ridership using performance indicators. Federal and state agencies use these performance indicators in the appropriation of funds to transit agencies. Public transportation is subsidized through federal, state and local programs while only a portion of the operating expenses are covered through rider fares. In order to gather information on riders and travel patterns, transit agencies primarily focus on current transit riders, many of which are transit dependent populations. Current research shows moderate alcohol consumption is associated with decreased risk of diabetes and excessive consumption or binge drinking can cause insulin resistance and diabetes. In 2010, diabetes was the seventh leading cause of death in the United Statesand was responsible for significant health complications: blindness, kidney failure, and limb amputations, and is a large national economic burden. Fasting blood glucose (FBG) is a tool used to help diagnose diabetes. Abnormally high FBG, ≥100 mg/dl, is indicative of diabetes and pre-diabetes. The purpose of this study was to identify the effect of attire on high school athletic directors’ perceptions of an athletic trainer’s professional knowledge and competence. We studied root kinematics in relation to temperature and genome size variation in teosinte (Zea mays subspecies parviglumis) and corn (Zea mays subspecies mays). Corn had significantly faster radicle growth than teosinte when grown at a constant temperature. Both species exhibited variation in seed size and for each species larger seeds had faster root growth. Genome size was not significantly correlated with faster radicle growth rates across multiple land races of corn. To examine temperature dependent growth in corn and teosinte, a germinated seedling was grown at multiple temperatures. Growth rates at these temperatures were used …

Social Media websites are rapidly being overrun by advertisements, but is this blitz of advertising destroying the social media experience? Twitter, one of today’s most popular social media sites, increased its revenues from $45,000,000 in 2010 to $259 million in 2013. This exponential growth is surprising given the large portion of Twitter users who are between the ages of 18 to 25 with lower annual incomes. Poly(lactic-co-glycolic acid) (PLGA) is one of the most commonly used copolymers for electrospinning in tissue engineering applications. However, most research has not focused on the copolymer itself in regards to how long it can be used effectively and if varying the concentrations of polylactic acid (PLA) and polyglycolic acid (PGA) affect the resulting properties. Diabetes mellitus is a disease in which insulin hormone is ineffective or no longer produced. Multiple pathophysiologies can cause either insulin dependent diabetes mellitus (IDDM) or insulin independent diabetes mellitus (IIDM), which can lead to chronic hyperglycemia and an array of short and long term health risks. Prior research has shown that IDDM patients have dyslipidemia, and experiments infusing lipids directly into the blood result in heightened insulin resistance. The hypothesis that dyslipidemia increases insulin resistance was tested by performing oral glucose tolerance tests across three treatment conditions. Participants were nondiabetic college-aged students. Data from a control group was gathered …
