College students are one of the most at-risk population groups for food poisoning, due to risky food safety behaviors. Using the Likert Scale, undergraduate students were asked to participate in a Food Safety Survey which was completed by 499 students ages 18–25. Data was analyzed using SPSS and AMOS statistical software. Four conceptual definitions regarding food safety were defined as: general food safety, bacterial food safety, produce food safety, and politics associated with food safety. Knowledge seems to be an important factor in shaping students attitudes regarding general and bacterial safety. Ethnicity plays a role in how people view the …

Background: Poor dietary choices and increasingly sedentary lifestyles mean childhood obesity is an increasing problem. Parents have the capacity to significantly affect the food choice of children; therefore by improving their self-efficacy, their nutrition knowledge, attitudes and behaviour, and by providing access to sound nutritional information, the health of children may be improved.
Purpose: This research sought to gather preliminary information required to inform the development of nutrition education materials for parents, which will parallel those currently under development for teaching children in schools as part of the Australian curriculum. Background: Anatabine (ANA), a minor tobacco alkaloid found in the Solanaceae family of plants, may exhibit anti-inflammatory activity, which may be useful to aid in recovery from exercise-induced muscle damage. The purpose of this study, therefore, was to examine the effects of ANA supplementation on the recovery of isometric strength and selected non-invasive indicators of muscle damage.
Methods: A double-blinded, placebo-controlled, crossover design was used to study eighteen men (mean ± SD age = 22.2 ± 3.1 yrs; body mass = 80.3 ± 15.7 kg) who participated in two randomly-ordered conditions separated by a washout period. The ANA condition consisted …

Human biotin requirements are unknown and the identification of reliable markers of biotin status is necessary to fill this knowledge gap. Here, we used an outpatient feeding protocol to create states of biotin deficiency, sufficiency and supplementation in sixteen healthy men and women. A total of twenty possible markers of biotin status were assessed, including the abundance of biotinylated carboxylases in lymphocytes, the expression of genes from biotin metabolism and the urinary excretion of biotin and organic acids. Only the abundance of biotinylated 3-methylcrotonyl-CoA carboxylase (holo-MCC) and propionyl-CoA carboxylase (holo-PCC) allowed for distinguishing biotin-deficient and biotin-sufficient individuals. Purpose: This study aimed to examine the acute effects of dynamic stretching on concentric leg extensor and flexor peak torque, eccentric leg flexor peak torque, and the conventional and functional hamstring–quadriceps (H:Q) ratios.

Polyphenols are compounds found in foods such as tea, coffee, cocoa, olive oil, and red wine and have been studied to determine if their intake may modify cardiovascular disease (CVD) risk. Historically, biologic actions of polyphenols have been attributed to antioxidant activities, but recent evidence suggests that immunomodulatory and vasodilatory properties of polyphenols may also contribute to CVD risk reduction. These properties will be discussed, and recent epidemiological evidence and intervention trials will be reviewed. Further identification of polyphenols in foods and accurate assessment of exposures through measurement of biomarkers (i.e., polyphenol metabolites) could provide the needed impetus to examine …

Oxidative stress is involved in age-related cognitive decline. The dietary antioxidants, carotenoids, tocopherols, and vitamin A may play a role in the prevention or delay in cognitive decline. In this study, sera were obtained from 78 octogenarians and 220 centenarians from the Georgia Centenarian Study. Brain tissues were obtained from 47 centenarian decedents. Samples were analyzed for carotenoids, 𝛼-tocopherol, and retinol using HPLC. Analyte concentrations were compared with cognitive tests designed to evaluate global cognition, dementia, depression and cognitive domains (memory, processing speed, attention, and executive functioning). Rats learn to prefer flavors associated with postingestive effects of nutrients. The physiological signals underlying this postingestive reward are unknown. We have previously shown that rats readily learn to prefer a flavor that was consumed early in a multi-flavored meal when glucose is infused intragastrically (IG), suggesting rapid postingestive reward onset. The present experiments investigate the timing of postingestive fat reward, by providing distinctive flavors in the first and second halves of meals accompanied by IG fat infusion. Flavor development in low-fat Cheddar cheese is typified by delayed or muted evolution of desirable flavor and aroma, and a propensity to acquire undesirable meaty-brothy or burnt-brothy off-flavor notes early in ripening. The biochemical basis for these flavor deficiencies is unclear, but flavor production in bacterial-ripened cheese is known to rely on microorganisms and enzymes present in the cheese matrix. Lipid removal fundamentally alters cheese composition, which can modify the cheese microenvironment in ways that may affect growth and enzymatic activity of starter or nonstarter lactic acid bacteria (NSLAB). Snap-Ed nutrition education classes and food demonstrations allow for observation and modeling of correct food safety practices. Through the Utah State University’s Supplemental Nutrition Assistance Program-Education (SNAPEd), low-income participants completing four or more nutrition education lessons completed a retrospective post/pre behavior questionnaire. Results demonstrated increased intent to follow food safety practices by properly cooking, chilling, and separating food items, as well as properly cleaning food preparation surfaces.

Metabolic hormones and their axes, including the target tissues and receptors, regulate the tissue specific utilization of nutrients with in the body. The purpose of this research was to understand the hormonal control of complex nutrient partitioning mechanisms involved in young, growing animals. Specifically, this involved the investigation of metabolic hormones and the regulation of growth in two common species of phocids (true seals): harbor seal (Phoca vitulina) and Northern elephant seal (Mirounga angustirostris) pups. Benefits of consuming fruits and vegetables are documented, yet more than 75 percent of Americans do not eat the recommended servings advised by the current Dietary Guidelines for Americans and MyPlate. Through a self-reported post/pre behavior checklist, the Utah State University Supplemental Nutrition Assistance Program–Education (SNAP-Ed) demonstrated an increase in fruit and vegetable consumption in low-income individuals through consistent education incorporating four or more lessons over a period of five years.

The metabolic hormones ghrelin, growth hormone, and insulin-like growth factor I are influenced by developmental age, sex, and nutritional status in domestic and free-ranging species. However the role these hormones play has not previously been explored in sub-tropical/ tropical mammals. Furthermore, the seasonality of species with less dynamic environmental cues, such as the West Indian manatee, have not been studied. Background/Objective: Since 2006, the Australian food industry has promoted its front-of-pack (FOP) food labelling system-the Daily Intake Guide (DIG)-as a success story of industry self-regulation. With over 4000 products already voluntary featuring the DIG, the industry argues that government regulation of FOP nutrition labelling is simply unnecessary. However, no independent audit of the industry's self-regulation has ever been undertaken and we present the first such Australian data.

Sickle cell anemia (SCA) is a genetic disease that affects mostly individuals of African and/or Hispanic descent, with the majority of cases in sub-Saharan Africa. Individuals with this disease show slowed growth, delayed sexual maturity, and poor immunologic function. These complications could partly be explained by the state of undernutrition associated with the disease. Proposed mechanism of undernutrition include protein hypermetabolism, decreased dietary intake possibly from interleukin-6-related appetite suppression, increased cardiac energy demand/expenditure, and increased red cell turnover. All the above mechanisms manifest as increased resting energy expenditure. Nutritional intervention utilizing single or multiple nutrient supplementation has led to improved …

Chronic diseases affect both, developed and developing countries around the world. In the U.S., cardiovascular diseases (CVD) are the leading cause of death for all groups including Hispanics (Heron, 2009). Hispanics are disproportionally affected by CVD and experience risk factors at higher rates than non-Hispanic whites (Swenson, 2002). Although CVD are among the most expensive and widespread health problems, they are among the most preventable. Program Pemberian Makanan Pendamping ASI (MP-ASI) berupa bubur untuk 6-11 bulan dan biskuit untuk 12-24 bulan dan bertujuan untuk meningkatkan status gizi pada anak, terutama pada keluarga miskin. Tujuan penelitian ini mengevaluasi berbagai faktor yang memengaruhi berat badan tidak naik pada baduta keluarga miskin setelah pemberian program MP-ASI kementerian kesehatan. Penelitian ini dilakukan pada 82 ibu baduta yang menerima MP-ASI dengan desain studi kasus kontrol menggunakan data primer dan sekunder. Analisis dilakukan dengan regresi multivariat. Many Mexican women consume inadequate amounts of folic acid. Fortification of the corn tortilla could be an effective way to help increase the folic acid levels among the Mexican population. Previous studies have shown significant folic acid losses in fortified tortilla dough (masa) as it is held before baking. This loss in folic acid could be due to degradation by lactic acid bacteria naturally present in the masa. The microflora of traditionally made nixtamalized corn masa from six tortilla mills in Guadalajara, Mexico were isolated and characterized, and their effect on folic acid content was evaluated. It is well established that poor nutritional status leaves HIV-positive substance abusers especially vulnerable to an increased risk of opportunistic infections and other illnesses. Socioecological frameworks have been useful for identifying multiple influences on health risks, leading to the development and evaluation of promising community-based interventions for diseases such as cancer and diabetes. This article presents a conceptual model, based on the socioecological approach, to examine the mechanisms and pathways by which the various contextual factors unique to HIV-positive African American women with substance abuse disorders intersect to impact their nutritional health outcomes. Creating Healthful Food Environments Through Policy Change: A Toolkit for Faith-Based Organizations provides practical information to members of the faith-based community for use when developing, adopting, and implementing a food and beverage policy within their organization. For the purposes of this Toolkit, the term “food and beverage policy” refers to a policy officially adopted by a faith-based organization (FBO) (e.g., a church, parish, temple, mosque) requiring that the food it purchases, provides, or sells to members and guests meets guidelines established by public health authorities.
