Rising feed costs, environmental pollution concerns targeted at animal agriculture, a worldwide focus on sustainability and the never ending battle to improve production and efficiency within the poultry industry challenges nutritionists to focus on products to improve nutrient digestibility and decrease feed costs while at the same time maximizing performance. The research presented in this dissertation focuses on improving nutrient utilization of protein sources with protein liberating enzymes currently available commercially. The research also conducted addresses the addition of crystalline amino acids valine and isoleucine and their effect on improving efficiency of broilers.

Two separate series of experiments were conducted to determine: 1) the influence of dietary arginine supplementation in late gestation on reproductive performance, and 2) the impact of a whole yeast product in gestation, lactation, and weaned pig diets on reproductive, growth, and immune parameters.
In the first study 99 sows were provided a control diet, or the control diet supplemented with 1% L-arginine from gestation d 93 to 110. Compared to control-fed sows, no differences were observed in reproductive parameters, however a tendency for increased gestational weight gain was observed for sows provided supplemental arginine.

In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. Background: Walking for exercise remains the most frequently reported leisure-time activity, likely because it is simple, inexpensive, and easily incorporated into most people's lifestyle. Pedometers are simple, convenient, and economical tools that can be used to quantify step-determined physical activity. Few studies have attempted to define the direct relationship between dynamic changes in pedometer-determined steps/day and changes in anthropometric and clinical outcomes. Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

Training and competing in desert environments may exacerbate concerns related to disordered eating, supplement use, and hydration in some student athlete populations. A survey administered equitably to both genders solicited self-reported responses from members of 18 different teams over four years from a southwestern United States university athletic program. More than 1,700 athletes responded to 42 items on the questionnaire. Teams, not individual student athletes, were the units of measure for statistical analyses. Initial analysis of results indicated that there were no overt concerns regarding dietary behaviors due to training and competing in the desert environment. Further analysis subjected the …

Children’s food choices are influenced by the media, television advertising, focusing directly at infants and toddlers. This literature review presents multiple studies that explain how TV advertising of fast food, sugary cereals and other foods high in calories, fat, sugar, sodium and low in nutrients are contributing to the increase rates of childhood obesity. It is concluded that children are exposed to high amounts of food advertisements which affect young children’s food choices and poor food consumption. Native and naturalized bioactive plants of the Canadian and American temperate biome are examined for their health and performance enhancement properties. Some of these plants are now being used as natural health products, and many have a long history as traditional foods and/or medicines with indigenous groups. Fatigue is a condition that negatively impacts quality of life and occurs in about twenty four percent of adults worldwide. Many factors may contribute to fatigue. One factor is the macronutrient composition of a person’s diet, particularly, the amount of simple carbohydrates. This paper is a review of the current literature and examines the relationship of carbohydrate consumption and fatigue to determine if a diet low in simple carbohydrates results in an improvement in fatigue ratings. The purpose of this study was to determine the food behaviors of nutritionally high-risk seniors as a function of their racial background, gender, marital status, and education level. A total of 69 seniors were identified to be at high nutritional risk using the Nutrition Screening Initiative (NSI) checklist. A supplemental questionnaire (SQ) was created to examine the risk factors in relation to the participant’s demographic background. Key results indicated that Asians practiced healthy food behaviors and women were more likely to eat alone (p≤0.05). Married participants (90.9%) were most likely to consume 2 meals or more each day. Objective. To examine the association between different marital transitions and changes in body mass index (BMI) and body weight. Methods. A systematic literature search was conducted for peer-reviewed articles published between January 1990 and December 2011. Longitudinal studies were included if they compared dependent variables, such as BMI or weight, before and after a change in marital status. Results. Twenty articles were included: 4 articles described only transitions into marriage and/or cohabitation, 2 articles described only transitions out of marriage and/or cohabitation, and 14 articles described both. Overall, transitions into marriage were associated with weight gain, whereas transitions out of …
School Food Environment The Frontline For Childhood Obesity Prevention: A Mixed-Method Study Of Nutritional Competencies And Skills Of School Nutrition Professionals In Nebraska, Zainab Rida

The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.

This paper aims to demonstrate my independent study project internship at the Mullumbimby Community Garden (MCG), an interactive learning site for the citizens of Byron Shire. As an intern I spent 152.5 hours from October 29th to November 23rd planting, planning projects, attending meetings, and helping to educate about the importance of sustainable food production. More specifically, I focused on the development of the Children’s Garden, building vertical garden beds, planting the sensory garden, attending meetings, and helping to design and analyze costs for new structures to be implemented in the near future.

I studied the traditional wild protein collection techniques of the Naso people in the Syellick community Naso Territory, Bocas del Toro for 15 days during the end of November. The goal of this research was to record the various hunting techniques used by the Naso and determine whether those practices will disappear after the passing of this generation. I used informal and unstructured interviews as well as participant, objective, and passive observation (Master of Business Administration).

The Mid-Day Meal Scheme (MDMS)—the world’s largest school lunch program—was launched by India’s central government in August 1995 with the lofty goals of “enhancing enrollment, retention, and attendance while simultaneously improving nutritional levels among children.”[1] 17 years later, particularly following prominent Supreme Court orders in November 2001 and April 2004, MDMS has become a key program for the government, now serving about 105 million primary and upper-primary schoolchildren in 1.2 million schools.[2] When implemented properly, MDMS has had a noticeable positive impact on student attendance and enrollment, alongside a reduction in teacher absenteeism. Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. This study explored the current medical nutrition therapy (MNT) provided to adult patients undergoing hematopoietic stem cell transplantation (HSCT) and examined the current and desired role of registered dietitians (RDs) in providing MNT. A total of 60 RDs (57% response rate) responded to an electronic questionnaire. Descriptive statistics and χ2 analyses (SPSS, version 18) were used. Results revealed the primary form of diet was oral, and for patients on nutrition support, parenteral nutrition (PN) was used more frequently (16%–31%) than enteral nutrition (EN) (5%–9%; P ≤ .05). Objective To investigate the impact of fortification by comparing food records and selected biochemical indicators of nutritional status pre- and post-fortification.
Design Mean intake from 24 h recalls (n 142) was compared with the Estimated Average Requirement (EAR) to determine the proportion with inadequate intake. In a subsample (n 34), diet and serum retinol, folate, ferritin and Zn were compared pre- and post-fortification for fortified nutrients vitamin A, thiamin, riboflavin, niacin, folic acid, Fe and Zn.

Sarapan pagi merupakan kegiatan makan yang paling penting dalam memenuhi kebutuhan energi dan zat gizi dalam sehari. Kegiatan ini bertujuan untuk mengetahui pengaruh komunikasi, informasi, dan edukasi (KIE) gizi terhadap perilaku sarapan pagi siswa sekolah dasar di Kabupaten Bogor. Desain studi penelitian ini adalah kuasi-eksperimental, pre-post intervention. Hasil penelitian menunjukkan bahwa setelah dilakukan kegiatan KIE gizi diperoleh peningkatan skor rata-rata pengetahuan dan perilaku siswa terhadap kebiasaan sarapan pagi (nilai p < 0,05). Media yang digunakan adalah kartu bergambar, kartu kuartet, ular tangga, tebak gambar, teka teki silang (TTS), leaflet, poster, dan lomba cerdas cermat. Peran ibu sebagai penyedia sarapan pagi bagi siswa sangat penting terutama dalam menghindari kebosanan siswa terhadap menu yang disediakan. Sebaiknya pihak sekolah bekerja sama dengan Persatuan Orang Tua Murid dan puskesmas untuk menggiatkan kembali Usaha Kesehatan Sekolah dengan melakukan kegiatan promosi kesehatan bagi ibu/pengasuh siswa, khususnya tentang bagaimana merencanakan menu sarapan pagi yang enak, praktis, dan sehat bagi siswa.

Lingkar lengan atas (LiLA) telah digunakan sebagai indikator proksi terhadap risiko kekurangan energi kronis (KEK) untuk ibu hamil di Indonesia karena tidak terdapat data berat badan prahamil pada sebagian besar ibu hamil. Selama ini, ambang batas LiLA yang digunakan adalah 23,5 cm. Penelitian ini bertujuan untuk menguji validitas LiLA terhadap indeks massa tubuh (IMT) yang merupakan indikator yang lebih baik untuk mengetahui status gizi wanita dewasa.
