Recent secondary analyses have associated supplemental calcium use with increased risk for myocardial infarction and cardiovascular-related death in healthy, older adults. Subsequent concern over the safety of calcium supplements has spurred a calcium controversy, because calcium is a shortfall essential nutrient that is critical for bone health and a mainstay of osteoporosis prevention and treatment. The proposed mechanism by which calcium intake may detriment cardiovascular health is through the acceleration of coronary artery calcification (CAC), a clinical indicator of coronary artery disease (CAD) that has been associated with mortality risk. We extend the existing literature on food taxes targeting obesity. We systematically incorporate the implicit substitution between added sugars and solid fats into a comprehensive food demand system and evaluate the effect of taxes on sugars and fats. The approach conditions how food and obesity taxes affect total calorie intake. The proposed methodology accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a calibrated demand system in addition to the substitution among food groups, using recent food intake data and existing demand …

Angus-cross steers (n = 128; initial BW = 270 ± 3.8 kg) were used in a 3-yr study to assess effects of forage species grazed before slaughter versus concentrate finishing on carcass and meat quality. At the completion of the stockering phase, steers were randomly allotted to mixed pasture (MP; n = 36/yr) or corn-silage concentrate (CON; n = 12/yr) finishing treatments. At 40 d before harvest, MP steers were randomly divided into 3 forage species treatments: alfalfa (AL), pearl millet (PM), or mixed pasture (MP). The objective of this study was to develop an instrument to measure the child friendliness of restaurants using a combination of previous literature and focus groups. The pilot study consisted of a thirty-six item survey instrument that was distributed to forty individuals. Among the forty individuals who received the survey instrument, thirty-three of them completed the survey. A panel of experts reviethe survey results using cognitive factor analysis. The experts were asked to place each item of the survey instrument into categories. From this, five factors emerged. These included: facilities, service, atmosphere, activities, and menu. This study was designed to assess whether symptoms, functional measures, and reported disabilities were associated with vitamin B12 (B12) deficiency when defined in three ways. Participants, aged 60 or more years of age, in 1999–2002 National Health and Nutrition Examination Surveys (NHANES) were categorized in relation to three previously used definitions of B12 deficiency: (1) serum B12 < 148 pmol/L; (2) serum B12 < 200 pmol/L and serum homocysteine > 20 μmol/L; and (3) serum B12 < 258 pmol/L or serum methylmalonic acid > 0.21 μmol/L. Functional measures of peripheral neuropathy, balance, cognitive function, gait speed, along with self-reported disability (including activities of daily living) were examined with standardized instruments by trained NHANES interviewers and technicians. Children in food-insecure households are more likely to experience poorer health function and worse academic achievement. To investigate the relation between economic environmental factors and food insecurity among children, we examined the relation between general and specific food prices (fast food, fruits and vegetables, beverages) and risk of low (LFS) and very low food security (VLFS) status among low-income American households with children. Numerous epidemiology studies suggest a correlation between exposures to polychlorinated biphenyls (PCBs) and the development and severity of type 2 diabetes (T2D); however, mechanisms remain largely unknown. Previous studies demonstrated that PCBs that are ligands of the aryl hydrocarbon receptor (AhR) promote the expression of proinflammatory cytokines, including tumor necrosis factor-α (TNF-α), that are linked to insulin resistance in adipocytes. Background: The purpose of this project was to determine if differences exist in strength, comprehensiveness, perceived implementation, and barriers of school wellness policies between public school districts of varying size in South Dakota. Methods: All public school districts within South Dakota (N=151) were contacted and asked to submit their current wellness policy. The strength and comprehensiveness of each written policy was assessed via WellSAT. Chronic hemodialysis (HD) patients have an increased risk of cardio vascular diseases (CVD) driven by dyslipidemia, oxidative stress and inflammation. Vitamin E isomers (tochopherols and tocotrienols) are fat-soluble anti oxidants. Tocotrienol isomers (T3) are fewer studies than tochopherol isomers, but they have multifaceted effects on oxidative stress, inflammation and lipid metabolism. The National School Lunch Program (NSLP) is a federally supported school meal program. Abstract
Background
Previously, we reported that ProAlgaZyme (PAZ) and its biologically active fraction improved plasma lipids in hypercholesterolemic hamsters, by significantly increasing the high density lipoprotein cholesterol (HDL-C) while reducing non-HDL cholesterol and the ratio of total cholesterol/HDL-C. Moreover, hepatic mRNA expression of genes involved in HDL/reverse cholesterol transport were significantly increased, while cholesteryl ester transfer protein (CETP) expression was partially inhibited. In the current study, we investigated the therapeutic efficacy of the biologically active fraction of PAZ (BaP) on the plasma lipid and plasma metabolomic profiles in diet induced hypercholesterolemic hamsters.

Obesity and hyperlipidemia have become major concerns in the United States over the past 30 years. Alpha-Cyclodextrin (á-CD), a naturally occurring soluble dietary fiber, has been shown to reduce dietary fat absorption and improve blood lipid levels in an animal model (mouse and rat) and in human studies. Kidney disease is defined by a loss of kidney function over time [1]. It is expressed in terms of glomerular filtration rate at five stages calculated by the MDRD formula [5]. The fifth stage (<15 mL/min/1.73m2) is designed as end stage renal disease requiring renal replacement therapy in the form of hemodialysis [5]. This requires the use of an artificial kidney (dialyzer) to filter out by-products from the blood for excretion [8]. The issue arises when toxin accumulation due to decreased renal function, dialytic factors such as incompatible dialyzer membranes reacting with blood, and co-morbid conditions such as infection or diabetes mellitus [3]. This increases inflammation within the body, leading to a negative nutrient/energy balance, resulting in a loss of body mass thereby increasing the mortality risk [10]. Tocotrienols (T3), a more potent and underutilized form of Vitamin E, are being administered to attenuate this increase in inflammation via supplementation in addition to food intake. In order to attend to this issue, the nutritional status was assessed utilizing three measures: examining nutrient intake profiles (while supplementation was taken into consideration), obtaining anthropometric findings of body mass index, and analyzing biochemical profiles of serum albumin and pro-inflammatory markers (i.e. IL-6). This data was obtained via a randomized, double blind, placebo-controlled study of 81 dialysis patients. At two times over the course of 16 weeks, blood collection for serum albumin and inflammatory markers was analyzed and dietary intake was assessed using 24-hour diet recalls and Nutritionist Pro software. Statistical analyses of paired t-tests and correlation studies revealed no significant differences between the two groups later showing no noticeable effect of T3 supplementation. Reasoning may be multifactorial such as underestimation of food intake, transcription of diet recalls may not be truly representative, or T3 supplements may not have had an effect on the nutritional statuses. It may be beneficial for patients to receive more extensive nutritional counseling as opposed to nutritional supplementation to ensure compliancy with recommended intakes.

Reactive oxygen species and free radicals are associated with the negative effects of aging. Enzymatic and non-enzymatic mechanisms can defend cell structures from free radical damage. Selenium is an essential trace element necessary for cellular functions in the human body. A positive correlation between low serum selenium levels with the morbidity and mortality of a range of cancers has been illustrated in numerous studies. In a cross-sectional pilot study, we examined eating behaviors in patients (N= 24) approximately 6 years after gastric bypass surgery. Anthropometric measures, personal interviews, and 7 days of food records were collected. A mean body mass index of 33.7±8 was reported, with 75%(18/24) sustaining a weight loss 50% or more of their excess body weight. A mean total caloric intake of 1429±411 cal was reported: 43% carbohydrate, 17% protein, and 39% fat. A dietary supplement is defined as a product taken orally that contains a "dietary ingredient" (vitamins, minerals, herbs, amino acids, enzymes, etc.), and is intended to supplement one's diet. Dietary supplements include plant extracts and concentrates from foods. Supplements help provide required nutrients to fulfill nutritional levels for daily training or competitive performance, and can help remedy nutritional deficiencies. Therefore, it is important that sports professionals have a thorough knowledge of these supplement products. Eating disorders and disordered eating habits and behaviors were measured using the Eating Disorders Inventory-3 Referral Form (EDI-3 RF). The sample consisted of 159 elite, collegiate student athletes, males and females, aged 18 to 22. Five sports were represented, including basketball, gymnastics, soccer, swimming & diving, and volleyball. Overall, findings support the position that athletes, as a distinct population, and specifically female athletes and those that participate in lean sports, are at an increased risk for disordered eating behaviors and diagnosable eating disorders.
