Research Question: How can farmers' markets best implement the Supplemental Nutrition Assistance Program (SNAP) to increase sales and provide low income individuals with access to fresh, local produce?

This paper will discuss the use of SNAP benefits (formerly known as food stamps) at farmers' markets, with particular emphasis on the Cache Valley Gardener's Market as an example. Lack of access to adequate food is a major issue in the US. The purpose of this research study was to evaluate the effect of a weight loss program on individual participant attendance, total club usage and membership attrition. This retrospective study involved a fitness gym located in Utah County, Utah with a total membership of 1,100. The number of clients participating in the weight loss program between December 2011 and May 2012 was 36 (32 females and 4 males). This study examines the protein deficiency in Tanzania from a livelihood, decision based perspective, by looking at household decisions concerning meat protein consumption and production, in the Bangatan village area. More specifically it examines decisions regarding selling livestock rather than consuming it, the purpose of this cash generation, and globalization’s effects on these livelihood decisions. This thesis discusses the importance of school gardens. First, two current environmental and societal problems are highlighted: the industrialized food system and what Richard Louv has termed, "Nature Deficit Disorder," in children. School gardens are then presented as an effective tool that can address and remedy such issues. Lastly, a how-to manual for implementing such projects in schools is provided as well as a few sample lesson plans to be used in conjunction with the garden in each subject across the curriculum.

Anemia pada wanita pekerja masih merupakan masalah kesehatan yang dapat menurunkan produktivitas kerja. Penelitian ini bertujuan untuk membandingkan zat besi dengan dan tanpa vitamin C terhadap kadar hemoglobin. Jenis penelitian yang digunakan yaitu Quasy Experimental dengan Pre Test and Post Test Control Group Design. Populasi penelitian berjumlah 600 orang dan sampel berjumlah 60 orang. Two studies were conducted to determine the relative effect of various combinations of antioxidants on vitamin A oxidation and isomerization in nonfat dry milk (NDM). In the first study, one lot of pasteurized unfortified skim milk was divided, fortified with vitamins A and D and one of 11 antioxidant treatments, and spray dried. A control batch from the same lot was also fortified with vitamins A and D and spray dried. Samples were analyzed for total vitamin A bioactivity after zero, one, and two weeks of storage. After two weeks at 50°C, the only NDM samples that did not experience …

Emergency preparedness steps taken by individuals in Utah households were evaluated in 3 studies. Study 1 evaluated the 2011 landline and cell phone Behavioral Risk Factor Surveillance System Survey and General Preparedness Optional Module results from two states, Louisiana and Utah, to find factors from demographic and medical data that can be used to predict emergency preparedness in individuals. Stepwise logistical regression analysis ascertained the ability of chosen variables to predict individuals' preparedness. Objective: To compare the fruit, vegetable, and sugar sweetened beverage intake of college students who do and do not participate in dinner groups. Also, to determine if dinner group participation affects college students' perception of their overall health and adequacy of their fruit and vegetable intake. Design: A quantitative study of college students' fruit, vegetable, and sugar sweetened beverage intake through a one-time online survey. Commercial institutions have many factors to consider when implementing an effective recycling program. This study examined the effectiveness of three different types of recycling bins on recycling accuracy by determining the percent weight of recyclable material placed in the recycling bins, comparing the percent weight of recyclable material by type of container used, and examining whether a change in signage increased recycling accuracy. Data were collected over 6 weeks totaling 30 days from 3 different recycling bin types at a Midwest university medical center. Five bin locations for each bin type were used. Mozzarella cheese is currently the highest consumed cheese in the United States. The popularity of mozzarella cheese is typically attributed to the high consumption rates of pizza cheese and string cheese; both of which are low moisture part skim (LMPS) mozzarella cheese. A single serving of LMPS mozzarella cheese contains approximately 8% of the daily value (DV) for sodium, a mineral which is currently consumed in excess among most Americans. Rats learn to prefer flavors associated with postingestive effects of nutrients. The physiological signals underlying this postingestive reward are unknown. We have previously shown that rats readily learn to prefer a flavor that was consumed early in a multi-flavored meal when glucose is infused intragastrically (IG), suggesting rapid postingestive reward onset. The present experiments investigate the timing of postingestive fat reward, by providing distinctive flavors in the first and second halves of meals accompanied by IG fat infusion. Binturongs (Arctictis binturong) are the largest of Asian civets and, due to their highly frugivorous diet, are expected to play an important role in seed dispersal processes. To study the effect of binturong gut passage on seed viability, we fed 10 captive binturongs with fruits of longan (Dimocarpus longan), papaya (Carica papaya) and chiku (Manilkara zapota), collected the seeds they defaecated, and planted these to determine seed germination rate and time. Of the defaecated seeds, 90.4% passed through binturong gut intact in under nine hours, and 99.4% passed in under 33 hours. Chiku seeds had the highest germination rate (35.7% …

This study details the construction and performance testing of a mixed mode solar dryer using a combination of direct and indirect solar energy to dry food. One major benefit of this dryer design is its construction. It was simple to construct and was made with low cost materials, to make it feasible for use in developing countries. Previous research has identified several design factors that affect performance and efficiency: product loading density, number of trays, position of the absorber, and chimney type. Here, we report that filamentation, intercellular adherence, and biofilm develop- ment were inhibited during interactions between Candida albicans and Pseudomonas aeruginosa through the action of P. aeruginosa-produced phenazines. While phenazines are toxic to C. albicans at millimolar concentrations, we found that lower concentrations of any of three different phenazines (pyocyanin, phenazine methosulfate, and phenazine-1-carboxylate) allowed growth but affected the development of C. albicans wrinkled colony biofilms and inhibited the fungal yeast-to-filament transition. Phenazines impaired C. albicans growth on nonfermentable carbon sources and led to increased production of fer- mentation products (ethanol, glycerol, and …

The banana passion fruit (Passiflora tripartita Breiter, Passifloraceae) known as “tumbo” is very appreciated in tropical and subtropical countries of South America. Methanolic extracts from peel and the fruit juice of P. tripartita growing in Chile were analyzed for antioxidant capacity as well as for flavonoid and phenolic content. A chromatographic method was developed for the rapid identification of the main phenolics in the samples by HPLC-DAD and HPLC-MS. The fast fingerprint analysis allowed the detection of eighteen flavonoid C-glycosides and four flavonoid O-glycoside derivatives which were characterized by UV spectra and ESI-MS-MS analysis. The ‘‘organic food’’ market is the fastest growing food sector, yet it is unclear whether organically raised food is nutritionally superior to conventionally grown food and whether consuming organic food bestows health benefits. In order to evaluate potential health benefits of organic foods, we used the well-characterized fruit fly Drosophila melanogaster as a model system. Fruit flies were raised on diets consisting of extracts of either conventionally or organically raised produce (bananas, potatoes, raisins, soy beans). This quantitative study examined the individual employee selection changes that occur in cafeteria purchases after the implementation of nutritional information point of purchase campaign in a hospital worksite. The study utilized data received from daily sales. Twelve selected variables were obtained from the labeling campaign. One entrée, soup, side item, and dessert were chosen from each of the nutrition color categories: red, yellow, and green. Consumer interest in probiotic bifidobacteria is increasing, but industry efforts to secure high cell viability in foods is determined by these anaerobes’ sensitivity to oxidative stress. To address this limitation, we investigated genetic and physiological responses of two fully sequenced Bifidobacterium animalis subsp. lactis strains, BL-04 and DSM 10140, to hydrogen peroxide (H2O2) stress. Although the genome sequences for these strains are highly clonal, prior work showed they differ in both intrinsic and inducible H2O2 resistance. CONTEXT: The National Children's Study (NCS) is a longitudinal study of environmental influences on children's health. Recruitment of a representative birth cohort that will be followed until 21 years of age requires unique approaches across the nationwide study communities.

Food insecure individuals often consume nutritionally inadequate diets. Using a weighted plate waste analysis, we examined whether adult guests of 2 independently operated meal centers were served and consumed Food and Drug Administration–recommended serving sizes (reference amount customarily consumed; RACC) of protein, starch, fruit, vegetables, and bread for the dinner meal. In both centers, guests were served and consumed more than 100% of RACC for protein. Regardless of amount served and independent of whether guests took seconds, consumption of fruit and vegetables was less than RACC. Larger servings of vegetables, but not of protein or starch, resulted in more plate …
