All-purpose wheat flour is a useful long-term storage commodity, but is subject to off-odor formation. Although flour stored in a low oxygen atmosphere should inhibit rancid odor formation, it elicits consumer complaints about odor. The purpose of this study was to examine off-odor development in all-purpose wheat flour during ambient and elevated storage by determining the effect of low oxygen atmosphere and enrichment-bleaching on quality as measured by, free fatty acids (FFA), flour descriptive sensory analysis, conjugated dienes, headspace volatiles, bread consumer sensory analysis, color, loaf volume, and vitamin analysis. This project was designed to help smallholder farmers in Eastern Africa learn how to develop a dehydrated banana mash using solar technology. This project was inspired by the need of finding a beneficial means of preserving excess banana crops in the region. One of the major varieties of bananas produced in Eastern Africa is the Eastern African highland banana. These cooking bananas, also known as plantains, are the primary production crop in the region. In order to better assist practitioners and better serve persons with autism spectrum disorders (ASD) and their families, it is vital for professionals to systematically evaluate the existing body of literature and synthesize its scientific evidence, so that the efficacy of research can be translated to evidence-based practices (EBPs) (Wheeler, 2007; Zhang & Wheeler, 2011). This research synthesis evaluated adherence to EBP standards and analyzed the effectiveness of gluten-free and casein-free (GFCF) diets for individuals with ASD. Introduction The incidence of preventable chronic diseases is disproportionally high among African Americans and could be reduced through diet and physical activity interventions. Our objective was to systematically review the literature on clinical outcomes of diet and physical activity interventions conducted among adult African American populations in the United States. Methods We used the Preferred Reporting Items for Systematic Review and Meta Analysis construct in our review. We searched Medline (PubMed and Ovid), Cochrane, and DARE databases and restricted our search to articles published in English from January 2000 through December 2011. The aim of this study is to investigate the physical properties of aqueous solutions of pectin (PA) containing sunflower wax (SFW), which are used as a basis for producing edible films. The stability and the rheological and microstructural characteristics of SFW/PA mixtures were evaluated. SFW/PA mixtures formed oil-in-water emulsions that were milky and opaque in appearance and were stable towards phase separation. Polarized micrographs revealed the presence of wax crystals, whose size decreased as pectin concentration increased. The rheological behavior of the aqueous solutions of pectin containing different amounts of SFW were best described by the generalized power law model …

The objective of this study was to examine the influence of age on food intake, tissue and organ mass and NF-ĸB and SIRT6 levels in various tissues. The transcription factor, Nuclear Factor Kappa-B (NF-ĸB), is associated with both catabolic and anabolic pathways of muscle metabolism and may be involved in age-related muscle loss. SIRT6 is a member of the sirtuin family of proteins that function as protein lysine deacetylases and are associated with longevity in a number of organisms. Current research shows moderate alcohol consumption is associated with decreased risk of diabetes and excessive consumption or binge drinking can cause insulin resistance and diabetes. In 2010, diabetes was the seventh leading cause of death in the United Statesand was responsible for significant health complications: blindness, kidney failure, and limb amputations, and is a large national economic burden. Fasting blood glucose (FBG) is a tool used to help diagnose diabetes. Abnormally high FBG, ≥100 mg/dl, is indicative of diabetes and pre-diabetes. Vitamin D is well known for its role in calcium regulation and bone health, but emerging literature tells of vitamin D’s central role in other vital body processes, such as: signaling gene response, protein synthesis, hormone synthesis, immune response, plus, cell turnover and regeneration. The discovery of the vitamin D receptor within the muscle suggested a significant role for vitamin D in muscle tissue function. PCBs bind to environmental particles; however, potential toxicity exhibited by such complexes is not well understood. The aim of the present study is to study the hypothesis that assembling onto nanoparticles can influence the PCB153-induced brain endothelial toxicity via interaction with the toll-like receptor 4 (TLR4). To address this hypothesis, TLR4-deficient and wild type control mice (males, 10 week old) were exposed to PCB153 (5 ng/g body weight) bound to chemically inert silica nanoparticles (PCB153-NPs), PCB153 alone, silica nanoparticles (NPs; diameter, 20 nm), or vehicle. Background: Lifestyle interventions, including weight loss, exercise and diet, have a significant impact on diabetes prevention. Medical Nutrition Therapy (MNT) provided by a Registered Dietitian Nutritionist (RDN) is an essential part of any intervention approach. Several visits with an RDN have shown effective results. However, multiple visits become prohibitive, especially in rural areas, due to inaccessibility and cost when not covered by insurance.

Breastfeeding rates for the southern portion of the United States are low compared to the rest of the country. This study sought to determine the effectiveness of electronic delivery of breastfeeding education compared to written education in regards to intention to breastfeed in a convenience sample of pregnant women in coastal Louisiana and Mississippi. The final sample included 147 women randomized into one of three groups to complete the six week education intervention study. Mississippi has recently established the first week of October as statewide Farm to School (F2S) Week, providing Mississippi the opportunity to improve the health status of children while improving the local economy. The study aimed to measure Mississippi school districts' participation during F2S Week 2012 and identify perceived barriers and future interest of participation among child nutrition directors (CND). An electronic survey was sent to the 156 CNDs in the state of Mississippi participating in the National School Lunch Program. Obesity is postulated to be one of the major risk factors for pancreatic cancer, and recently it was indicated that an elevated body mass index (BMI correlates strongly with a decrease in patient survival. Despite the evident relationship, the molecular mechanisms involved are unclear. Oncogenic mutation of K-Ras is found early and is universal in pancreatic cancer. Extensive evidence indicates oncogenic K-Ras is not entirely active and it requires a triggering event to surpass the activity of Ras beyond the threshold necessary for a Ras-inflammation feed-forward loop. Household-level characteristics have been shown to be associated with food insecurity but studies among vulnerable populations are sparse. A food security assessment was developed to determine food security and collect sociodemographic and household level data across San Luis Obispo County. The assessments were administered to vulnerable groups through interviews at multiple sites across the County. Three household characteristics (marital status, number of children in the household and number of workers in the household) were examined in this analysis. The purpose of lactation is for nutrient provision and also importantly for protection from various environmental stressors. Milk polar lipids reduce cholesterol, protect against bacterial infection, reduce inflammation and help maintain gut integrity. Dynamic interactions within dietary fat, lipid metabolism, gut permeability and inflammatory cytokines remain unclear in the context of obesity and systemic inflammation. A rat model and three mouse models were developed to test the hypotheses that dietary milk polar lipids may affect lipid metabolism and intestinal integrity and may protect against systemic inflammation in the context of stressful diet, systemic inflammation, and obesity.

A major class of synthetic emulsifiers used in food is sucrose esters. However, the use of lactose esters in foods is not very well known. Lactose monolaurate was characterized in our laboratory with respect to its antimicrobial, emulsification and fat crystallization modifier properties. The benefits of this study were multifold. A single compound was explored for multiple functionalities. Enzymatic synthesis and characterization of lactose monolaurate was carried out in the laboratory using food grade solvents. This process utilized lactose, a major byproduct of the dairy industry which is cheaper than sucrose.

Epidemiological and observational evidence suggests that obesity is related to poor Fe status. To determine interactions between obesity, dietary Fe intake and Fe status; male, weanling C57BL/6J mice were fed either high fat diets to induce obesity or a standard diet for 16 weeks. Fe concentrations of both the high fat or control diet (4.5 vs 3.8 kcal/g) were set at: 5, 50 or 500 mg Fe/kg diet. Mice fed the high fat diets had significantly higher percentage body fat (17.9%) compared to mice fed control diets (5.3%, P<0.001). Among obese mice, dietary Fe levels did not significantly influence body composition. Conversely among lean mice, mice fed the iron excessive diet had significantly less fat mass when compared to mice fed the iron deficient diet (P<0.05). Obesity and/or dietary Fe concentration did not significantly affect plasma Fe levels. ANOVA analysis showed significant effects of diet-induced obesity, dietary Fe and an interaction between both factors on liver Fe levels (P< 0.05). Obese mice had significantly lowered liver Fe levels compared to lean cohorts fed the same amount of dietary Fe (P<0.05 for all comparisons). Moreover, lean mice fed the Fe deficient diet (5 mg Fe/kg diet) had similar liver Fe levels (127 mg Fe/kg ± 0.04) compared to obese mice fed the 50 mg Fe/kg diet (132 mg Fe/kg ± 0.05). These data suggest that obesity, independent of dietary Fe intake, influences liver Fe stores.

The people of the Islands of Fiji suffer from a growing prevalence of noncommunicable (NCD) diseases that are often nutrition related. Much of the blame for the growing rate of these diseases is due to lifestyle choice, specifically food-related decisions. Fiji’s nutrition concerns and NCD prevalence are greater in urban centers, compared to a lower frequency in rural villages. Contrasting demographics are composed of dissimilar food environments that influence inhabitants’ food decisions, in turn increasing the prevalence of nutrition-related concerns.

Assessing FV intake among young children is difficult and can be a time-consuming, resource-intensive, and burdensome. The aim of this study was to create a simple, self-assessment tool to estimate and detect changes in FV consumption among fourth and fifth graders. Such a tool would ease the complications and resources of other diet assessment options that are used to measure FV consumption when implementing school-based nutrition programs.
