The Pathological Role Of Acrolein In Experimental Autoimmune Encephalomyelitis And Multiple Sclerosis, Melissa A. Tully
The Pathological Role Of Acrolein In Experimental Autoimmune Encephalomyelitis And Multiple Sclerosis, Melissa A. Tully
Open Access Dissertations
Multiple sclerosis (MS) is an autoimmune demyelinating neuropathy that affects nearly 2.5 million people worldwide. Despite substantial efforts, few treatments are currently available largely due to limited knowledge of pathogenic mechanisms underlying the disease. The immune-inflammatory nature of the pathology has prompted investigation of the role of oxidative stress in disease development and progression; however targeting reactive oxygen species for neutralization has had marginal success therapeutically, suggesting that an alternate oxidative stress-related target would prove beneficial. Recently, our lab has implicated acrolein, a highly reactive aldehyde that is both a byproduct and catalyst of lipid peroxidation, as a potential therapeutic …
Micrornas Are Absorbed In Biologically Meaningful Amounts From Nutritionally Relevant Doses Of Cow’S Milk And Chicken Eggs And Affect Gene Expression In Peripheral Blood Mononuclear Cells, Cell Cultures, And Mouse Livers, Scott Baier
Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
Throughout the twenty-first century, evidence has been continually increasing to show the importance of epigenetic regulation in health. While the term “epigenetics” can be applied to many different processes, the focus of this dissertation will be on microRNAs and chromatin structure. Ultimately, both of these forms of epigenetic regulation can be used to fine tune gene expression based on environmental cues. The first three chapters of the dissertation focus on microRNA bioavailability, stability, and function from two commonly consumed food products: cow’s milk and chicken eggs. This important work has been the first of its kind to demonstrate the bioavailability …
Stability And Biological Activity Of Dietary Micrornas, Katherine Howard
Stability And Biological Activity Of Dietary Micrornas, Katherine Howard
Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
MicroRNAs play important roles in gene regulation by binding to complimentary sites at the 3’ untranslated region of target mRNA molecules. Binding results in inhibition or degradation of target mRNA. Many bovine and chicken microRNA are homologous with human counterparts enabling gene regulation. A recent study in our lab provided undisputable evidence that endogenous milk microRNAs are bioavailable in humans; resulting in regulation of human gene expression. Based on these findings, we wanted to explore the possibility that other exogenous food borne microRNAs are able to be absorbed through the diet. My thesis surrounds two aims: 1) assessing the stability …

Presentation given during session on Food Justice, where Barton Seaver, Director of the Healthy and Sustainable Food Program in the T.H. Chan School of Public Health at Harvard, described a great nutrition and health crisis in America perpetuated by groups demarketing seafood and promoting meat in the American diet. Seaver noted that Americans consume about 167 lbs. of meat a year and only 14 lbs. of seafood, leading to connected public health and environmental crises, heart disease, and obesity.
According to presenter Barry Costa-Pierce:
Seafood systems in the USA are our most insane foods; America imports nearly every seafood we …

The Significance Of Whole Grain Teff For Improving Nutrition: From Injera To Ready To Eat Porridge By Using Extrusion Cooking Technology, Helen T. Zewdie, Mammo Muchie
International Journal of African Development
Teff (EragrostisTef) is a fascinating grain, ancient, minute in size, packed with nutrition and used for centuries as the principal ingredient of the Ethiopian population diet. The micro- and macronutrients level of teff grainis apparently higher than that of barley, wheat and sorghum and the amino acid composition comparable to that of egg protein, except for its lower lysine content. In Ethiopia, it has been using as a staple food by making flat bread called Injera. Teff can be diversified from its current provision of Injera to other forms like instant porridge to improve the nutritional quality and it may …

Evaluation of how well the academic objectives of the proposal were met This was an intensive project, which turned out to be a great opportunity for our students. We had one graduate student and four to five undergraduate students working on it at any given time. Due to attrition in the lab, we had about 16 undergraduates who were involved across the course of the entire project. Students learned the nuances of a very challenging multi-day, microbial assay for folic acid, and also learned many other laboratory skills and became quite proficient in microbial enumeration and isolation. The importance of …

Effects Of Panelist Participation Frequency And Questionnaire Design On Overall Acceptance Scoring For Food Sensory Evaluation In Consumer Central Location Tests, Mauresa Bastian
Theses and Dissertations
Two studies were conducted to determine the effect of panelist participation frequency and specific aspects of questionnaire design on overall acceptance scoring in consumer central location tests. Regarding participation frequency, research subjects who participate frequently in some survey types are known to provide responses that differ from subjects who participate less frequently, known as panel conditioning. With respect to questionnaire design, overall acceptance (OA) question placement and usage of pre-evaluation instructions (PEI) in questionnaires for food sensory analysis may bias consumers' scores via carry-over effects. To investigate these concerns, data from consumer sensory panels previously conducted at a central location, …
