ABSTRACT Objective: Evaluate the following for effect on disordered eating behaviors and body image: An individual's motivation for consuming a vegan/vegetarian diet; Accuracy in self-–reporting of vegan/vegetarian status and; Level of acculturation in vegan/vegetarian American immigrants. Design: A descriptive, cross-–sectional study evaluating vegan/vegetarian beliefs and current practices, using the theoretical framework of the Theory of Planned Behavior. Subjects/Setting: Participants recruited via e-–mail list-–servs for the Vegetarian Resource Group and the Academy of Nutrition and Dietetics Vegetarian Nutrition Dietetic Practice Group. Grocery stores can serve as a location to promote increased fruit and vegetable consumption. Pick it! Try it! Like it! is a collection of resources providing information on 43 different fruits and vegetables that can be grown in Midwestern climates, being used in grocery stores as point-of-purchase education. An evaluation of individuals who shopped in grocery stores where materials were being used showed program recognition increased before and after implementation. Information obtained regarding shopping and food preparation habits will allow for further refining of materials. These materials, in addition to materials targeting youth and seniors, promote fruits and vegetables community-wide.

Objective: Assess the nutritional needs of, and attitude towards expanding the provision of nutrition services to a division 1 football team who does not have a sports dietitian or a training table. Methods: A 26-item questionnaire was developed by two sports dietitians and administered to a football team from a small division 1 school. Demographic information, dietary fueling practices, and football players’ attitudes towards the provision of additional nutrition services was assessed. Descriptive statistics were used to summarize athlete demographic characteristics, and Chi squared analysis assessed differences in responses based on grade in school, position, and residence. Parental feeding practices are thought to influence children's weight status, through children's eating behavior and nutritional intake. However, because most studies have been cross-sectional, the direction of influence is unclear. Moreover, although obesity rates are high among Latino children, few studies of parental feeding practices have focused on this population. This 2-year longitudinal study examined mutual influences over time between parental feeding practices and children's weight status, in Mexican American families with children 18 years old at baseline. Mothers (n = 322) and fathers (n = 182) reported on their feeding practices at baseline, 1-year follow-up, and 2-year follow-up. Weight …

Despite their low cost and high nutrient density, the contribution of eggs to nutrient intake and dietary quality among Mexican-American postpartum women has not been evaluated. Nutrient intake and dietary quality, as assessed by the Healthy Eating Index 2010 (HEI-2010), were measured in habitually sedentary overweight/obese (body mass index (BMI) = 29.7 ± 3.5 kg/m2) Mexican-American postpartum women (28 ± 6 years) and compared between egg consumers (n = 82; any egg intake reported in at least one of three 24-h dietary recalls) and non-consumers (n = 57). Pyruvate kinases serve an important role in regulating glycolysis pathways. Different pyruvate kinase isozymes can dictate which of several different products will be formed during the final step of glycolysis. Being able to reliably copy active pyruvate kinases (PK) would allow study of the different isozymes, with the goal of eventually creating plants that are more nutritionally beneficial for humans. This study focused on improving the protocol for replicating each of two isolated PK isozymes from the model plant Arabidopsis thaliana. Dehydration in children and adolescents is a major concern for caretakers. Often children are not drinking enough, particularly while participating in physical activity. Utilizing data drawn from pediatricians, nutritionists, and bio-scientists, this paper will examine whether sports drinks are a good source of fluids for the exercising child. The results of the research indicate that the advantages generally associated with sports drinks, to achieve higher body water absorption levels, prevent electrolyte deficits, and maintain proper electrolyte/water concentrations, are reserved for unique circumstances. Through this qualitative study, I want to add to the theoretical conversation about garden and farm education in schools and offer a starting point for a conversation surrounding care and gardening/farming in schools. The purpose of this study is to understand how teachers and students demonstrate care while implementing a garden and farm curriculum. Data collection included 15 participant interviews from students, staff, administrators, and school officials from a large public school district implementing garden and farm education lessons and observations of educators, farmers, and farm interns interacting with and instructing students in a weeklong Farm Camp environment. Tree nut allergies are some of the most common and serious allergies in the United States. Patients who are sensitive to nuts or to seeds commonly called nuts are advised to avoid consuming a variety of different species, even though these may be distantly related in terms of their evolutionary history. This is because studies in the literature report that patients often display sensitivity to multiple nut species (cross-sensitivity) if they have an existing nut allergy. Background and Purpose: Physical therapy treatment following Total knee Arthroplasty (TKA) consists of a combination of strengthening and range of motion exercises. The exercise technique, church pew exercise (CPE), has been proposed to enhance quadriceps facilitation and improve function. This is a technique that has the patient standing and rocking forward/back. The backward motion is arrested by engagement of the upper calf against a solid object, creating a sudden flexion torque at the knee and a sudden extension torque at the hip. Children are at increased risk for foodborne illness due to underdeveloped immune system. Limited research has been reported on food safety knowledge of Native American families with children 10 years of age and younger. This study was conducted to determine the food safety knowledge, attitudes, and behaviors of the main food preparer in these families by collecting quantitative and qualitative data simultaneously in a mixed method approach. Background: The Social Cognitive Theory (SCT) is a widely used model for developing elementary nutrition education programs; however, few instruments are available to assess the impact of such programs on the main constructs of the SCT. The purposes of this study were: 1) to develop and validate a SCT-based survey instrument that focuses on knowledge, behavior, and self-efficacy for fifth grade students; 2) to assess the relationships between knowledge, behavior, and self-efficacy; and 3) to assess knowledge, behavior, and self-efficacy for healthy eating among the fifth grade students.

Objective. To evaluate parents’ beliefs and practices related to childhood obesity and determine if these are influenced by parent’s perception of their own weight or their child’s weight.
Methods. Parents of obese (n = 689) or normal weight (n = 1122) children 4–15 years in Georgia, USA, were randomly selected to complete a telephone survey. Frequency of child obesity-related perceptions, beliefs, and practices were assessed, stratified by parent-perceived self-weight and child weight status, and compared using Chi-squared tests and multivariate logistic regression.
Results. Most parents, regardless of perceived child weight, agreed that child overweight/obesity can cause serious illness …

Residents of rural communities in the United States are at higher risk for obesity than their urban and suburban counterparts. Policy and environmental-change strategies supporting healthier dietary intake can prevent obesity and promote health equity. Evidence in support of these strategies is based largely on urban and suburban studies; little is known about use of these strategies in rural communities. The purpose of this review was to synthesize available evidence on the adaptation, implementation, and effectiveness of policy and environmental obesity-prevention strategies in rural settings.

Objective — To determine if reducing the frequency of urinary sample collection from daily to 5, 3, or 2 days per week during a menstrual cycle or 28-day amenorrheic monitoring period provide accurate representations of the reproductive hormone metabolites estrone- 1-glucuronide (E1G) and pregnanediol glucuronide (PdG) exposure and mean concentrations.
Methods — Exercising women presenting with eumenorrhea or exercise-associated menstrual disturbances collected daily urine samples for the assessment of E1G and PdG concentrations. This study examined patterns of responses for physiological and perceptual variables during cycle ergometry at a constant rate of perceived exertion (RPE) within the moderate and heavy exercise intensity domains. Nineteen (mean age 21.3 ± 0.5 years; 43.4 ± 2.0 mL·kg−1·min−1 VO2Peak) moderately trained cyclists performed an incremental test to exhaustion and two 60 min constant RPE rides at the RPE corresponding to the gas exchange threshold (RPEGET) and 15% above the GET (RPEGET+15%). Background: Interleukin (IL)-27 is a heterodimeric cytokine belonging to IL-12 and IL-23 families, secreted by antigen presenting cells(APCs). The IL-27 is composed of 2 subunits: Epstein-Barr virus induced gene 3 (EBI3) and p28. IL-27 is an anti-inflammatory cytokine which has an inhibitory effect on Th17 population and suppress the IL-17 expression. It is suggested that IL-27 could be a potent drug candidate for treating auto immune diseases.

While many health benefits have been associated with increased whole grain consumption, current researchers have not considered if the consumption of whole grains in currently recommended or higher amounts actually leads to health problems, specifically to a correlated increase in gluten sensitivity. Background—Despite proven efficacy of cardiac rehabilitation (CR) in helping patients initiate physical activity and healthy eating changes, less than 50% of CR participants maintain changes 6 months later.
Objective—The objective of this feasibility study was to test the Partners Together in Health (PaTH) Intervention versus usual care (UC) in improving physical activity and healthy eating behaviors in coronary artery bypass graft (CABG) surgery patients and spouses.

The purpose of this culminating project was to identify the power of soccer in the context of international development and apply it to soccer-based youth empowerment programs, specifically an after-school program at El Nacional public school in Ecuador. Soccer is becoming one of the best approaches to connect various peoples who do not share the same language or cultural traditions because of its universal popularity, as evidenced by the more than one billion people who watched coverage of the FIFA World Cup 2014 Final Match (numbers to be consolidated) (“The 2014 FIFA World Cup,” n.d.). Background: Hispanics are the largest minority group in the U.S. and by the year 2060 the number of Hispanics is projected to double. They are disproportionately affected by obesity and chronic diseases which translate into decreased quality of life, loss of work opportunities and perceptions of injustice for the Hispanic population. The Dietary Guidelines (DG) provide information to help Americans make healthy food and physical activity choices and if followed can be a means of reducing the health disparity gap. Introduction: Currently there are no interactive tools that allow school communities to assess their school wellness needs and foster interest in wellness efforts. PhotoVoice is a participatory action research methodology commonly used in public health that utilizes photography to document and showcase community strengths and weaknesses in order to promote change. Purpose: The purpose of this study was to gather perceptions of a school community after using PhotoVoice to document school wellness efforts 1.
