Cheddar cheese is usually aged for 3 to 24 months at temperatures ranging from 5 to 13°C. Ripening at elevated temperatures hastens the process, reducing manufacturing costs and enabling manufacturers to bring the product to market more quickly. However, cheeses ripened at elevated temperatures sometimes exhibit late gassy defect that may cause a textural defect, commonly referred to as slit defect. This results in crumbling and

This thesis discusses an online tutoring program, MasteringNutrition©, that was implemented as a required portion of an entry level collegiate nutrition course. The tutoring program was introduced to test the ability of the program to improve memory of nutrition information taught during the course. The MasteringNutrition© program combines various teaching techniques that have been successful in increasing student learning. The major techniques discussed include: Socratic questioning, metacognition, and problem based learning. These techniques are incorporated into the MasteringNutrition© program.

The elimination of trans-fatty acids from food formulations has resulted in the search of new lipids and novel processing conditions that can provide optimum functional properties in fats while providing good nutritional properties. High intensity ultrasound (HIU) has been extensively studied on sonocrystallization of lipids since early 2000. Sonocrystallization refers to the induction of crystallization by HIU without generating any chemical changes. This dissertation aims to provide information on the effects of HIU on crystallization behavior and physical properties of different shortenings based on previous sonocrystallization research. Agriculture has a great, often untapped potential to be integrated in to the urban landscape as part of a green infrastructure and food production network. INTRODUCTION: Information regarding effects of hypohydration (HY) and hyperthermia (HT) on cognition, mood and development of symptoms is conflicting since the two conditions often confound each other. Further, although obese individuals may have physiological impairments during heat stress, whether psychological impairments occur with HY and HT is unknown. PURPOSE: To assess the independent and combined effects of mild HY and HT on cognition, mood, and the development of symptoms in obese and non-obese females. Objective: The purpose of this study was to evaluate whether a week-long SNAP Challenge completed by university participants influenced perceptions about poverty. Design: Pretest and posttest questionnaires measured changes in attitudes toward poverty after the SNAP Challenge using the Attitude Toward Poverty Short Form scale comprised of three factors: Personal Deficiency, Stigma, and Structural Perspective. Dispositional empathy was measured with the Interpersonal Reactivity Index and analyzed as a potential mediating variable of attitude change. Hyperlipidemia and hyperglycemia frequently occur in obese population. As chronic, low-grade inflammation is closely associated with obesity, we investigated if polyphenol-rich blackcurrant extract (BCE) can prevent inflammation and diet-induced metabolic disturbances in mice. Male C57BL/6J mice were given a modified AIN-93M control diet containing high fat/high cholesterol (16% fat, 0.25% cholesterol by weight) or the same diet supplemented with 0.1% BCE (wt/wt) for 12 weeks. No significant differences in total body weight or liver weight occurred between the two groups. BCE-fed mice had fewer crown-like structures (CLS) with concomitant decreases in mRNA abundance of F4/80, CD68, and inhibitor of nuclear …

Background: Previous studies have suggested that vegetarians have a lower risk of overweight and obesity than do non-vegetarians. However, little is known about how meat consumption interacts with taste perception, thereby influencing food intake and body weight.
Objective: The objective of this study was to examine the relationship of meat consumption with 6-npropylthiouracil (PROP) sensitivity, food liking, food intake and body mass index in female long term vegetarians and non-vegetarians.

RESEARCH OBJECTIVE: To assess the differential effects of a mobile phone-based application (app) versus phone-based memo use on anthropometric measures, healthy eating, and physical activity behaviors in college-age women. METHODS: Participants (n=43) were randomly enrolled in a mobile app or phone-based memo group during a 6 week study. Participants in the app group were trained on proper usage of the free app, MyNetDiary, and the memo group received directions on how to journal their food and exercise activity on their phone. Addiction to highly refined foods, specifically sugar, may result in excessive caloric intake, which enhances comorbidity risks, such as obesity and cardiovascular disease. The American Heart Association recommends that women limit “added sugar” intake to 25 g per day (1). Purpose: To determine the relationship between food addiction and sugar consumption. Methods: IRB approved the study, and IT Services sent out a recruitment email to 1992 college-aged females. Participants gave their informed consent and completed two surveys: the Yale Food Addiction Scale (YFAS) (n=160) and the Automated Self-Administered 24-hour dietary recall (ASA24) (n=57). The mechanistic target of rapamycin complex 1 (mTORC1) is a serine/threonine kinase that drives several anabolic processes including lipid synthesis, protein synthesis, and adipogenesis. mTORC1 is highly active in the livers of obese rodents, in overnutrition, and is implicated in the development of obesity related metabolic disorders, including the overproduction of atherogenic lipoproteins. Direct inhibition of mTORC1 is not a viable treatment strategy because it prevents feedback inhibition of the insulin-signaling cascade, leading to increased lipid synthesis and secretion of lipoproteins. Thus, therapeutic approaches that drive catabolic pathways are considered promising mechanisms for overcoming mTORC1-driven anabolism. Human liver HepG2 cells …

This manuscript aims to describe nutritional requirements and needs for children and how technology is being used to improve nutritional knowledge among them. Several technologies and applications are explored, and recommendations are given for ways to improve. Four interactive nutrition games for children are examined: two computer games and two mobile applications. Through revision of performance, nutrition content, attraction, design and attention capabilities, HealthyHeroes was chosen to be the best game for children to learn and have fun with the subject of nutrition.

Objective: To determine the influence of Supplemental Nutrition Assistance Program (SNAP) and participant demographics on nutrition education outcomes.
Methods: At program enrollment (pre) and 1 month later (post), a statewide convenience sample of adults, who participated in the Plan, Shop, Save, and Cook program, completed a 7-item questionnaire to evaluate change in resource management skills (RMS) and running out of food before the end of the month.
Results: Percent of participants (n = 3,744) who reported behavioral improvements in RMS ranged from 38.8%in comparing prices to 54% in reading labels. Female gender and Hispanic ethnicity were positively related to pre–post …

Lawyers suffer from higher levels of anxiety and depression than the rest of the population, but most do not enter law school with these mental health issues. Disciplinary actions against attorneys involve substance abuse 50 to 75 percent of the time. Mexico began the iodization of salt in 1960, which dramatically reduced the incidence of goiter, but in the last year the incidence of goiter tripled in the state of Jalisco, and nationally in Mexico (1,2,3). This thesis seeks to explain the relationship between a household's choice of fuel and the health and nutrition outcomes of children below the age of 5 in Uganda. The first objective is to examine the association between the choice of fuel and the incidence of acute respiratory infection (ARI). The second objective is to measure the relationship between choice of fuel, ARI and nutrition outcomes of children. ^ I use data from the 2006 and 2011 Uganda Demographic and Health Surveys (UDHS).
