Light Microscopy Preparation Techniques For Starch And Lipid Containing Snack Foods, F. Olga Flint Jan 1982

Light Microscopy Preparation Techniques For Starch And Lipid Containing Snack Foods, F. Olga Flint

Food Structure

Many processed foods lack the structural integrity associated with biological tissue so that the conventional methods of preparation and staining used in light microscopy may introduce misleading artifacts.

Taking as examples of starch-based processed foods, potato chips (UK potato crisps) and three distinct potato snack foods, methods for preparing and demonstrating the constituents present in cryosections of whole and masticated products are discussed. To show constituents in their true relative locations vapor staining and polarized light are used. Iodine vapor staining indicates the extent of starch gelatinisation in the dry snack and it is also used to show the structural …

Some Effects Of Lipids On The Structure Of Foods, K. Larsson Jan 1982

Some Effects Of Lipids On The Structure Of Foods, K. Larsson

Food Structure

The functional properties of different lipids in foods are demonstrated and related to the structure of lipid or lipid-water phases. On the basis of new X-ray data on the crystal structure of the B'-form and the a + B' transition in fats, the polymorphic transitions are considered as different lateral arrangements of triglyceride dimers. The physical properties of fat crystals can be explained from the structures, as well as possibilities to influence the polymorphic transitions.

Molecular interaction between polar lipids and proteins or starch is discussed, and the effect of the amylose-lipid inclusion complex on gelatinization temperature and water penetration …

Genetic Recombination In Nocardia Asteroides, Kenneth L. Kasweck, Melissa L. Little Jan 1982

Genetic Recombination In Nocardia Asteroides, Kenneth L. Kasweck, Melissa L. Little

Biomedical Engineering and Sciences Faculty Publications

Gene recombination between strains of N. asteroides of diverse origins has been demonstrated. In particular pairwise combinations, recombinants made up 0.01% of the population. All nine selectable recombinant classes were recovered from a cross between KK4-47 his-10 leu-1 and KK6-119 met-3 phe-3. Recombinants with an auxotrophic marker from each parent constituted 21% of the recombinants.

Spatial And Temporal Patterns In The Macrobenthos Of St. Louis Bay, Mississippi, James T. Mcbee, Walter T. Brehm Jan 1982

Spatial And Temporal Patterns In The Macrobenthos Of St. Louis Bay, Mississippi, James T. Mcbee, Walter T. Brehm

Gulf and Caribbean Research

Benthic community structure in St. Louis Bay was studied for 23 months. Cluster analyses distinguished two habitats: open water areas and areas near the marshy shores of rivers and bayous. Two groups of “euryhaline opportunistic” species were dominant at the open water stations. Temporal patterns of the “euryhaline opportunists,” which appeared to be controlled by a combination of reproductive pulses and seasonally intense predation, showed that the greatest abundance of macroinfauna occurred during the cooler months with reduced recruitment during the second year. The river-bayou stations were characterized by two groups of “estuarine endemic” species. One of these groups was …

Observations On The Food And Food Habits Of Clapper Rails (Rallus Longirostris Boddaert) From Tidal Marshes Along The East And Gulf Coasts Of The United States, Richard W. Heard Jan 1982

Observations On The Food And Food Habits Of Clapper Rails (Rallus Longirostris Boddaert) From Tidal Marshes Along The East And Gulf Coasts Of The United States, Richard W. Heard

Gulf and Caribbean Research

The feeding habits of five nominal subspecies of clapper rails (Rallus longirostris Boddaert) collected in tidal marshes along the Gulf and Atlantic coasts of the United States are compared. Data on the food from the stomachs of 183 rails were analyzed and the earlier literature critically reviewed. During the warmer months (May through early fall), crabs, predominantly Uca spp., comprised the major part of the food items found. Limited data on a few rails collected during late fall and winter, when Uca spp. are not usually available, indicate that snails then become a major part of the clapper rail’s …

Evaluation Of Flow-Through, Static, And Recirculating Systems For The Intensive Culture Of The Gulf Killifish Fundulus Grandis With Observations On A Solar-Heated Recirculating System For The Bait Industry, John T. Ogle, Mobashir A. Solangi Jan 1982

Evaluation Of Flow-Through, Static, And Recirculating Systems For The Intensive Culture Of The Gulf Killifish Fundulus Grandis With Observations On A Solar-Heated Recirculating System For The Bait Industry, John T. Ogle, Mobashir A. Solangi

Gulf and Caribbean Research

Three systems (flow-through, static, and recirculating) for intensive culture of the Gulf killifish (Fundulus grandis) for bait were evaluated. The outdoor recirculating system proved most successful. Killifish maintained in this system attained an average weight of over 2.0 gm in 42 days, an acceptable market size. Whereas the solar-heated recirculating system sustained fish densities equivalent to 1,000,000/ha and a survival rate of 86%, growth of killifish in this system was less than that observed in both the static and outdoor recirculating systems. Algae appeared to be an important nutritional component of the diet of juvenile killifish. Individuals of …

Elevational Variations In The Lowest Limit Of Spartina Colonization In A Virginia Salt Marsh, Thomas G. Reidenbaugh, William C. Banta, Santoria Mendoza, Robert P. Strieter, Michele Varricchio Jan 1982

Elevational Variations In The Lowest Limit Of Spartina Colonization In A Virginia Salt Marsh, Thomas G. Reidenbaugh, William C. Banta, Santoria Mendoza, Robert P. Strieter, Michele Varricchio

Gulf and Caribbean Research

Elevations of lowest colonization of smooth cordgrass, Spartina alterniflora, were surveyed along the edge of a juvenile salt marsh at Wallops Island, Virginia. This lowest limit of Spartina varied over one-third of the local mean tidal range, with lowest occurrences between mean low water and mean low water neaps. Four geographical factors appeared to influence the lowest limit of Spartina: (1) tidal scouring in areas where tidal channels were constricted, (2) scalloping of the marsh edge over a sloping substrate, (3) patterns of historical development of the marsh, and (4) ice scouring of previously colonized Spartina over winter. …

Size-Specific Emergence Of The Marsh Snail, Littorina Irrorata: Effect Of Predation By Blue Crabs In A Virginia Salt Marsh, Hilary S. Stanhope, William C. Banta, Michael H. Temkin Jan 1982

Size-Specific Emergence Of The Marsh Snail, Littorina Irrorata: Effect Of Predation By Blue Crabs In A Virginia Salt Marsh, Hilary S. Stanhope, William C. Banta, Michael H. Temkin

Gulf and Caribbean Research

Marsh periwinkles of 5 to 7 mm in shell height were eaten regularly by blue crabs. Fractures marking unsuccessful crab attacks were present in about 25% of medium-sized (10-16 mm) snails and over 60% of larger snails (over 16 mm). Medium-sized snails, subject to predation, leave the water more frequently than larger snails, but only about a quarter of the snail population leaves the water during high tide. We found no evidence that the snails leave the water because they sense blue crabs in the water.

Testosterone Feedback On Fsh Secretion In Male Sheep, M. J. D'Occhio, B. D. Schanbacher, J. E. Kinder Jan 1982

Testosterone Feedback On Fsh Secretion In Male Sheep, M. J. D'Occhio, B. D. Schanbacher, J. E. Kinder

Department of Animal Science: Faculty Publications

Testosterone-filled Silastic capsules were implanted into mature rams at the time of castration (wethers). After 6 weeks, a tonic pattern of FSH secretion was observed in rams, wethers and wethers implanted with testosterone. Castration caused serum concentrations of FSH to increase 4-5-fold. Relatively low serum concentrations of testosterone (25-50% of intact ram values) did not significantly affect FSH secretion in wethers, but wethers exposed to concentrations of testosterone equivalent to those of intact rams had serum concentrations of FSH similar to those of intact rams. We suggest that testosterone feedback can account for the gross differences in FSH observed between …

The Bead Game: Response Strategies In Free Assortment, Alan B. Bond Jan 1982

The Bead Game: Response Strategies In Free Assortment, Alan B. Bond

Alan Bond Publications

Subjects were presented with a collection of spherical beads of four different colors and were instructed to sort them as fast and as accurately as possible. The sequence in which the beads were sorted was recorded, along with the time intervals between successive beads. Subjects were observed to sort in nonrandom sequences, producing runs in which a given bead type was taken exclusively. The speed and accuracy of the sorting process was positively correlated with the degree of nonrandomness of the sorting sequence. This relationship appeared to be primarily attributable to perceptual factors involved in the initiation of a run …

Effect Of Herbicides On Performance Of Aerobic Dairy Lagoons, John D. Bottom, Joseph L. Taraba Jan 1982

Effect Of Herbicides On Performance Of Aerobic Dairy Lagoons, John D. Bottom, Joseph L. Taraba

Biosystems and Agricultural Engineering Faculty Publications

The herbicides glyphosate, bromacil, and dalapon were assessed for their affect on the oxygen uptake of microorganisms from an aerated dairy lagoon at 20 °C. The maximum recommended addition of herbicide active ingerdient to a lagoon is: glyphosate (isopropyl amino salt)—0.42 mg/L; bromacil—3.70 mg/L; and dalapon (85.8 percent Na salt and 14.2 percent Mg salt)—1.95 mg/L. In addition, microorganism isolates from the aerobic dairy lagoon were incubated under aerobic and anerobic conditions at room temperature to assess the effects of the herbicides. Under aerobic incubation, it was found that neither herbicide type nor herbicide concentration affected isolate growth. Under anaerobic …

Polygyny And Polydomy In Three North American Species Of The Ant Genus Leptothorax Mayr (Hymenoptera: Formicidae), Thomas M. Alloway, Robin Stuart, Cynthia Thomas, Alfred Buschinger, Mary Talbot

Faculty Scholarship

This paper deals with certain behavioral and ecological factors which may be relevant to the evolution and maintenance of social parasitism in ants. We will argue that some of the same factors which might predispose one species to evolve into a social parasite might make resistance to parasitism difficult for a closely related species.

Selection With Restriction In Cattle, E. Niebel, L. Dale Van Vleck Jan 1982

Selection With Restriction In Cattle, E. Niebel, L. Dale Van Vleck

Department of Animal Science: Faculty Publications

Application of new and accurate methods of estimating breeding values and systematic selection based on performance characters have increased the complexity of animal breeding. Negative correlations between the most important characters may be involved, especially in the selection of dairy and beef cattle. This problem demands efficient selection models to maximize genetic improvement of some economic traits and simultaneously to restrict other antagonistic traits to a certain genetic change. We have established a general theory of selection indexes with constraints to impose fixed and proportional restrictions when several selection indexes containing different information sources are applied. A detailed description of …

Wild Commercial Fishery Of Arkansas, Tommie Crawford, Mike Freeze Jan 1982

Wild Commercial Fishery Of Arkansas, Tommie Crawford, Mike Freeze

Journal of the Arkansas Academy of Science

Arkansas' wild commercial fishery industry was surveyed to evaluate commercial fish products produced within the state. The total wild commercial catch for the period of 1 July 1980 to 30 June 1981 was approximately 8,680,124 kg with a value of $6,245,967. These values represent an increase of approximately 3% from the previous year. The bulk of the commercial harvest was made up of buffalo fishes (Ictiobus spp.), catfishes (Ictalurus spp), gars (Lepisosteus spp.) and carp (Cyprinus carpio). The number of commercial fishermen remained relatively unchanged from 1979-1980, with 3,843 licensed fishermen operating on the state's waterways. The number of licensed …

Leaf Detritus Processing In An Ozark Cave Stream, Arthur V. Brown, Mark D. Schram

Journal of the Arkansas Academy of Science

Detritus processing rates and mechanisms were investigated in an Ozark cave stream using post oak (Quercus stellata) leaf packs. The 5 g leaf packs lost ca. 30% of their dry weight within 84 days, resulting in a calculated K value of 0.05. This was an unexpectedly high rate of utilization. Diversity of invertebrates associated with the leaf packs was very low. Stygobromus ozarkensis (Amphipoda) was the only shredder. The two isopods, Caecidotea stiladactyla and Lirceus sp. were the only collectors observed other than a single species of oligochaete worm. Our data indicated that leaf detritus processing rates are virtually independent …

Soil Traversing Arthropod Populations As Sampled By Pitfall Traps In Sunflower And Three Adjacent Habitats In Northeast Arkansas, Linda A. Lee, Harvey E. Barton

Journal of the Arkansas Academy of Science

Soil traversing arthropod populations were sampled by pitfall traps in sunflower (Helianthus spp.) and three adjacent habitats during the months of July, August and September of 1980 and May, June, July and August of 1981. In1980, four varieties of sunflower (Ellar, Hybrid 670, 891 and S-345) were planted. A single variety of sunflower (Ellar) was planted in1981. The three adjacent habitats in both 1980 and 1981 were a pine stand, grass border and fence row. Of 1,748 specimens collected in 1980, 17 orders and 48 families were represented. Four orders comprised 78% of the total catch: Hymenoptera (45%), Acari (17%), …

Effects Of Water Released From Stratified And Unstratified Reservoirs On The Downstream Water Quality, Stephen B. Smith

Journal of the Arkansas Academy of Science

Water quality samples were collected from the Little River system in Pine Creek Lake, Oklahoma, and Gillham Lake, Arkansas, and their associated tailwaters during the winter (reservoirs unstratified) and summer (reservoirs stratified) of 1980. Downstream water quality was not affected by reservoir water releases while the reservoirs were unstratified. When the reservoirs were stratified water quality in the tailwaters was dependent on the release depth of the water. The practice of flushing out a tailwater following an extended low flow period should be examined on a site by site basis. Anoxic water released from a reservoir may contain high amounts …
