1. The nitrogen, calcium, and phosphorus content of 127 newly hatched chicks was determined. 2. Thirty newly hatched chicks were fed accurately known amounts of a good chick mash for 60 days. At the end of the period nitrogen, calcium, phosphorus, and fat were determined for each chick. 3. By means of the comparative slaughter test the retention of nitrogen was found to be 37.8 per cent, calcium 43.4 per cent, and phosphorus 27.3 per cent of the respective elements fed. 4. Nineteen samples of margarine were obtained from Illinois, Ohio and Nebraska. They were analyzed chemically and the vitamin A content of each one was compared with that of either sour-cream or sweet-cream butter. The fat content of the butter samples varied from 80.2 to 81.5 per cent, while the fat content of the margarine samples varied from 78 .3 to 89.2 per cent. From the results it was evident that these samples of margarine were very poor sources of vitamin A when compared with butter. Scientific investigation has proved conclusively that the protein content of the wheat kernel is the most important factor in determining the quality of the flour obtained. A high protein wheat is used for flour for bread making, and a low protein wheat for pastry flours. The quality of the protein must be determined by baking experimental loaves.

The purpose of this study is to collect and organize all data available to the investigator on the subject of calcium and phosphorus requirements for normal children. Since it is the business of nutrition to maintain health and prevent disorders, leaving the cure of disorders to the medical profession, this study deals with the calcium and phosphorus metabolism of normal children and avoids going into the pathological phases, taking up rickets and tetany only in so far as prevention is concerned.

A study was made of the vitamin E content of each of the ingredients of our dairy herd ration, excepting the salt, lime, and bone meal. Female rats which were able to conceive but unable to reproduce when fed a diet deficient in vitamin E were fed the various feeds as a source of vitamin E during a second breeding period. The presence of vitamin E in a feed was thus shown by the ability of the female to cast a litter. The flavor, quality and composition of market brick cheese varies greatly. Its moisture content often ranges from 37 to 43 per cent. The flavor may be similar to Limburger or it may even resemble that of Cheddar. Such a great variation in a specific food product tends toward disappointment for the consumer.

Because of the considerable industrial importance of cotton to the South and because of the recognized nutritional value of cottonseed meal in cattle feeding, a study of cottonseed products has been undertaken in order to learn more of their possibilities as nutrients. The heart in any animal, and especially in higher animals, is an important organ. It is the purpose of this paper to consider such an organ from the anatomical and physiological basis as it exists in the turtle.

The turtle was chosen as the subject for many reasons. The first one of these reasons was because the heart of the turtle closely.resembles the most complex of hearts in structure and action. The second was because the heart is quite typical of the members of Class Reptilia. The third reason was because the speciments are readily obtainable.

The cherry is rapidly becoming Utah's most important fruit crop. According to the 1930 census, there were 110,050 bearing and 114,230 non-bearing cherry trees in Utah orchards. Most of these trees are sweet cherries, the newer plantings consisting mainly of Bing and Lambert trees, although Napoleon predominated in the older plantings.

The problem of pollination is of more importance with the cherry than with other- fruits, because of the large number of individual fruits required to make a crop and because of the self-sterility and intersterility shown by the major commercial sweet varieties.

A study was made of the vitamin A content of skimmilk, of milk standardized by the addition of separated milk, and of cream. Rats whose body stores of vitamin A had been depleted by being fed a vitamin A deficient ration were fed either skimmilk, standardized milk, or cream as a source of vitamin A. Approximately 750 rats were used in nine experiments. From the results of these experiments the following conclusions were drawn: (1) that the vitamin A content of milk is associated largely with the butterfat and that separated milk containing a small quantity of fat contains only …

This thesis, submitted to Xavier University in 1933, surveys the chemical classification of proteins and their role in human nutrition, with the stated aim of preparing home economics students to understand protein's function in the diet. Jones organizes proteins into three major classes: simple proteins, including albumins, globulins, glutelins, protamins, and histones; conjugated proteins, including nucleo-proteins, glyco-proteins, phospho-proteins, and hemoglobins; and derived proteins, including albumoses, peptones, and peptids, describing the chemical composition, solubility properties, and sources of each.
