Because meat is a highly perishable food item, extra care and attention are needed to ensure that a high quality, wholesome product is served.

Unwholesomeness and spoilage of meat are caused by bacteria and other microorganisms. This contamination generally occurs during cutting and processing. These bacteria require three conditions for growth:

low acidity (near neutral pH) level within the meat;

an available supply of water or other moisture, such as meat juices;

a warm temperature -- generally between 45° and 127°F.

Nebraskans are increasing their consumption of fresh vegetables — as appetizers, salads, side dishes, and snacks. Fresh vegetables are an integral part of a healthy, well-balanced diet. This publication acquaints cattle producers with calving management principles to minimize calf loss. The objective is to deliver a live calf from every cow. Six to ten percent of all calves born in beef cow herds in the U.S. die at or soon after birth. Approximately half of those deaths are due to calving difficulty (dystocia). This multi-million dollar annual loss is second only to losses from cows failing to conceive. A computer model has been developed to analyze alternate management strategies and energy and economic constraints. Daily production of beef animals and growing crops is simulated in response to prevailing conditions and system interactions using the GASP IV simulation language. Complete inventories of plant dry matter, animal status, production resources and economic net worth are maintained over the simulation period.

Lack of standardized test procedures has resulted in considerable variation in reported values for bone strength. Such variation can be attributed in part to the type of instruments used to determine physical properties of bone, procedures used to prepare the bones for testing and equations used to calculate strength. Sweet dry whey was used to replace 25% and 50% of nonfat dry milk solids in ice cream mix. Forty-five batches experimental and control lots of vanilla ice cream were manufactured. A commercial lactase was used to hydrolyze lactose to over 90% conversion and the lactase was inactivated after hydrolysis. The extent of lactose hydrolysis in the mix was adjusted to 50% or 75% by blending non-hydrolyzed nonfat dry milk and whey solids with hydrolyzed preparations. Extra sweetness of the conversion products permitted reduction of sucrose by 6.25% and 12.5%, respectively, in the 50% and 75% hydrolyzed lactose ice cream …

Large amounts of dried whole whey (86% of concentrate mix, 60% of total dry matter intake) were fed to four Holstein steers in place of corn and soybean meal in the control diet to evaluate the extent and site of lactose digestion in the ruminant's digestive tract. Diets consisted of 70% of the dry matter as concentrate mix and 30% as corn silage fed ad libitum as a total mixed ration. In the past, tillage research on plant diseases was concerned primarily with practices that buried plant residues in single-crop production systems. The burial of plant debris to destroy pathogens is an ancient agricultural prac­ tice (34). Each crop was tested as a single entity, and most crop rotations were based on one crop per year. The preservation efficiency of covering alfalfa haylage with black plastic (polyethylene) and/or treating haylage with propionic acid was studied in two trials. Experiment 1 was designed to evaluate the influence of both covering and treatment with propionic acid on haylage chemical composition and heifer growth. In experiment 1, prop ionic acid was administered to the haylage at the chopper at 0.02% of the fresh forage weight. Chemical composition and ensiling temperature of the haylage were monitored and animal growth was measured with 16 Holstein heifers. The Midwest produces most of the food and feed grains and oilseeds grown in the US. as well as a substantial proportion of a variety of other crops, but corn accounts for at least 75% of insecticide use in the region. The total amount of insecticides used on crops could be greatly reduced if economic losses from insects could be predicted accurately. We will examine the current status of chemical controls for insects of economic importance to this region, indicating some areas where new developments are needed or are likely to occur.

Selenium can be determined quantitatively in biological samples after digestion using nitric acid, orthophosphoric acid, and hydrogen peroxide and the formation of 5-nitropiazselenol. Samples are spiked with enriched 82Se and lsotoplc ratio of 80Se to 82Se is measured by combined gas chromatographymass spectrometry using dual ion monitoring. Precise determination at the parts-per-billion level is possible. The accuracy of the method Is verlfied by using standard reference materials.

Weather is a constraint on efficient livestock production systems. Evaluation of the degree of constraint is a difficult, but necessary task before selection of appropriate modifications in management or environments can be made. The basis for rational selection from available alternatives for the limitation of climatic stress in livestock has continued to improve, particularly with the development of rudimentary functional relationships between animal performance and weather parameters. Sister chromatid exhanges (SCE) are considered indicators of genetic damage and early chromosome changes. The SCE frequency from an infertile 27-year-old, white male with tall stature and a non-dicentric Y/Y translocation consisting of one short arm and two long arms of the Y chromosome was determined. The SCE frequency was 7.9 ± SD 1.4 while to SCE frequency from ten control subjects was 8.4 ± SD 0.51. A two-tailed t-test was applied to the SCE data and no significant difference was found between the individual with the Y/Y translocation and control subjects. Polymegaly, or the production of two or more size class of sperms by the same male, has been known in Drosophila for more than a decade. More recently polymegaly (dimegaly, or two size classes) was found in the Drosophila affinis subgroup. Additional observations on polymegaly in six D. affinis subgroup species: D. affinis, D. algonquin, D. athabasca, D. azteca, D. narragansett, and D. tolteca are reported here. The two kinds of sperms differ strikingly in the nature of the head, which is elongate (threadlike) in "long" sperms, short and dense in "short" sperms. The rangeland grass, Bouteloua gracilis was inoculated with its mycorrhizal symbiont, Glomus fasciculatus, to determine the influence of vesicular-arhuscular mycorrhizae on water status, stomatal behaviour and photosynthesis as well as gross plant morphology, biomass and phosphorus content. Mycorrhizal infection increased transpiration rates by over 100% with 50 to 70% lower leaf resistances to water vapour diffusion. Leaf xylem pressure was not different between mycorrhizal and non-mycorrhizal plants indicating that whole-plant resistance to water transport was reduced by more than 50%. Photosynthetic rates under saturating light conditions increased 68% with infection as a consequence of a 33% reduction in stomatal …

Allergenicity Of Various Peanut Products As Determined By Rast Inhibition, Julie A. Nordlee, Steve L. Taylor, R. T. Jones, John W. Yunginger

Extracts of 19 different peanut products and peanut oil were tested for their allergenicity by the radioallergosorbent test inhibition assay using a crude peanut extract from raw peanuts as the standard for comparison. Seventeen of the extracts were able to competitively inhibit the binding of serum IgE from peanut-sensitive patients with the solid-phase raw peanut extract. Peanut oil and the extract from hydrolyzed peanut protein did not inhibit binding, which suggests that these products are not allergenic. The peanut hull flour extract showed a slight ability to inhibit binding, suggesting that this product contains minor amounts of the peanut allergen.

The administration of glucocorticoids has been shown to induce atrophy and weakness in whole skeletal muscle. These effects frequently appear to be more pronounced in pale muscle than in red muscle. The present study was undertaken to examine the effects of steroid treatment on the contractile, electrical, and fatigue properties of single meter units in pale and red cat hindlimb muscles. Single motor units in the medial gastrocnemius (MG) and soleus muscles were isolated using techniques developed by McPhedran, et al., (1965).
