JOHNSON CITY – Busy college students can find it awfully hard to maintain a healthy diet while juggling classes, work, club activities, and more. But senior ETSU nutrition student Caroline Dos Santos Medeiros shares some useful advice on how to do just that.

The University of Nevada, Las Vegas (UNLV) plans to develop an integrated academic health center within the Las Vegas Medical District (LVMD). The academic health center includes UNLV’s five health science schools and mental and behavioral health, which is distributed among several colleges (medicine, liberal arts, urban affairs, and education) in the university. University Medical Center (UMC), a major teaching hospital, will also be an important driver of the academic health center. The objective of this senior project was to examine the impacts that grains in a canine diet have on the overall health of the animal. Specifically, there was a focus on the nutritional attributes of grains, potential concerns regarding their inclusion in foods, misconceptions from consumers about grains in pet food, and alternatives to grains used in some diet formulations. The method of research for this project was a literature review. Scholarly articles focused on the various subtopics which helped to answer the research question were reviewed and included throughout the following discussion. Background: Healthcare professionals such as athletic trainers must be prepared for autonomous practice immediately after graduation. Although certified, new athletic trainers have been shown to have clinical areas of strength and weakness. To better assess professional readiness and improve the preparedness of new athletic trainers, the factors of athletic training professional readiness must be defined. However, limited research exists defining the holistic aspects of professional readiness needed for athletic trainers. Confirming the factors of professional readiness in athletic training could enhance the professional preparation of athletic trainers and result in more highly prepared new professionals. Developing Rubrics Using The New Oru Outcomes, Kim Boyd, Trevor Ellis, Leighanne Locke, Terry Shannon, Rachael Valentz

The development and examples of key program assessments (KPAs) are shared. Dr. Boyd opens the presentation. Dr. Shannon (B.S. Sports Management) begins by providing an overview of aligning program and ORU outcomes. Prof. Locke (B.S. Mathematics) walks through how current assignments were chosen to be used as key program assessments and then how the rubrics were revised to improve alignment. Dr. Valentz (B.S. Nursing) discusses how to improve the foundational alignment between program outcomes and the criterion (rubric row headings) used to measure them. A review of scholarly works and leading textbooks published for health care marketing courses shows that they do not adequately define the disciple. This paper promotes the use of the two-word form of health care and defines health care marketing as the activity, set of institutions, and processes for creating, communicating, delivering, & exchanging any good, service, or idea; performed to restore, maintain, or enhance the well-being of an individual or population. Cooperative Extension’S Capacity To Address Food Insecurity By Supporting Food Recovery Organizations, H. Lester Schonberger, Lily L. Yang, Melissa Chase, Tiffany Drape, Sarah Misyak, Renee Boyer

Virginia Cooperative Extension (VCE) educators are uniquely positioned to support the food recovery organizations (FROs) which address hunger-related needs resulting from food insecurity. Based on an online survey to measure how VCE educators have engaged with FROs and their experiences, respondents who previously supported FROs did so across multiple programming areas, and those who had not indicated an interest while also experiencing barriers. Respondents also reported the need for context- and audience-specific resources particular to the spectrum of food recovery. Addressing barriers and resource needs through a transdisciplinary eXtension Food Recovery Community of Practice may support educators in doing this …

Social media usage has precipitated changes in Cooperative Extension’s delivery of programs to amplify involvement with selected audiences and it is important that we craft relevant content for a variety of audiences. Current research tells us that social media and related content can enrich education and can create broader audiences for programming. Resources like blogs, podcasts, and geofilters have shown to be received positively by a wide range of audiences and have created greater rates of engagement.
Yet, one platform that has received limited attention is TikTok, perhaps due to TikTok’s mixed reviews in educational systems. With current trends showing …
