Dr. Gail C. Christopher, a nationally recognized leader in health policy known for her work bringing holistic health and diversity concepts into public sector programs and policy, will give a free public lecture at East Tennessee State University next month.

Barriers to education and training can have a generational impact on socioeconomic status and economic development. Post-traditional students have been shown to experience a variety of barriers to education and family sustaining employment. Social capital has been shown to help alleviate some of the barriers for students resulting in stronger economic outcomes, such job retention, and higher wages. This case study examined a workforce development approach to providing support to post-traditional students in non-credit industry training. The researcher examined student outcomes, credential attainment and employment, between two student groups (Network2Work versus a nonNetwork2Work group) using chi-square and logical regression analysis. …

Calling All Students? Enrollment In Community-Engaged Learning Courses At A Marianist University, Molly Malany Sayre, Castel V. Sweet, Kelly Bohrer

Research and Reflection on Learning and Teaching in Higher Education

‘Community’ is a pervasive concept at the University of Dayton, a Catholic, Marianist institution in Dayton, Ohio. As such, it was unknown how students who enrolled in community engaged learning (CEL) courses were different from their peers in demographic characteristics, previous experiential learning, and views of community engagement. Findings can inform CEL recruitment as well as evaluation of CEL outcomes, especially at institutions with a similar values orientation. This mixed-methods study indicates that among four semesters of students in three selected CEL courses, few differences were found with students in non-CEL control groups. Time, Money, Or Knowledge: What Factors Are Associated With Implementing Youth Cooking Programs?, Alison C. Berg, Nancy O. Taylor, Courtney S. Brown, Silvia Q. Giraudo

Journal of Extension

Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.

Education Faculty Publications

Merrimack College is a Catholic Augustinian College. This single institutional case study shares the work of faculty and the College to institutionalize community engaged research through the development of a Community Engaged Action & Research Cluster (CERC). Through the case study, we elucidate the sphere of influence of faculty with regard to community engagement and the ways in which that sphere of influence can add value to individual careers and the institution as a whole. This case study also demonstrates the impact of institutional engagement initiatives on faculty research and civic engagement in food justice.

Creating simulations that train nurses to perform medical procedures, teaching gardening and nutrition to local elementary school students and preparing tax returns for community members are just a few examples of opportunities that are available for East Tennessee State University students to get hands-on experience while making a positive impact on the region.

Introduction: Education in interprofessional collaboration is vital to expand healthcare access, especially in areas of higher disparity. To address this need, interprofessional faculty collaborators incorporated undergraduate and graduate health profession students into teams at an annual Remote Area Medical event in rural Appalachia between 2017 and 2020.

Purpose: This article evaluates the impact of an interprofessional student teams model on both patient care experience and students’ interprofessional collaboration attitudes and behaviors.

This research study aimed to examine and analyze food-insecure graduate student experiences at Rowan University. Graduate student experiences are often left out of current literature and this study was conducted to uncover and discuss how food insecurity affects this population and provide recommendations through nuanced food-insecure graduate student experiences. This study used a qualitative phenomenological approach including semi-structured interviews with five participants. A thematic analysis was used to categorize the findings of five themes: Stigma, Academic Engagement, Physical and Mental Health, Coping Mechanisms, and Food Resources. The goal is to improve health and nutrition among new mothers and their children who were living in shelters. The mothers received workshops and booklets consisting of information, quick and healthy recipes, and learned how to prepare home-made meals with a low budget. The mothers realized nutritious foods are important for them and their children. They learned how to manage time to make nutritious food at the residence. Belonging By Design: The Exploration Of Architecture Learning Environments And Their Role In The Sense Of Belonging And Field Identity Of Black Architecture Students, Stacy Scott

This research offers a comprehensive analysis of the various dimensions of belonging, isolation, and the role of identity in architecture learning environments (ALEs) for Black architecture students. In a multi-site case study, the study analyzes the experiences of Black students in the habitus that forms these ALEs at three universities with fifteen participants. Through qualitative investigation and thematic analysis, this research evaluates the obstacles these students face when endeavoring to establish meaningful connections.

This mixed-methods sequential explanatory study seeks to explain the relationship between community engagement and citizenship competence among tertiary-level students at Kolehiyo ng Lungsod ng Dasmariñas, a public institution of higher learning in Dasmariñas in Cavite, Philippines. Specifically, it seeks to (1) determine students’ level of engagement in various community development activities and their levels of citizenship competence; as well as (2) discuss and analyze the relationship between these two variables. Quantitative surveys were conducted on 331 students, followed by semi- structured interviews and focus group discussions with 30 purposely selected participants to gather follow-up data during the qualitative phases.

For years, advising has been associated with student success and retention. However, while these are valuable byproducts of effective academic advising, they do not represent the purpose of advising. This article explores the purpose of academic advising through the lens of servant-leadership theory with an emphasis on Greenleaf’s (2002) best test, which asks, “Do those served grow as persons? Do they, while being served, become healthier, wiser, freer, more autonomous, more likely themselves to become servants?” (p. 27). Clinical supervised practice experiences offered through dietetic internships have historically been among the most challenging to obtain. The COVID-19 pandemic heightened the scarcity of these experiences and forced dietetics education programs to offer alternative experiences in the absence of direct patient care opportunities. Simulation-based learning experiences (SBLE) or objective structured clinical examinations (OSCE) are one method of providing these alternative options, and if effective, could be routinely incorporated into dietetics education. This review evaluates five original research articles to determine the effectiveness of simulation-based learning on perceived or observed clinical competence in dietetic students.
