Growing butter markets, domestically and globally, provide opportunities for value-added variants of butter. Adding probiotics to butter could boosts its bioactivity; however, maintaining probiotic viability during storage is a major challenge. Mathematical analysis of probiotic population changes could help improve our understanding of how probiotics interact with butter and storage conditions. Two strains of probiotics in a 1:1 ratio as free cells or Whey Protein Hydrolysate–Maltodextrin (WPH-MD)-encapsulated cells, Lactobacillus acidophilus ATCC 4356 (LA5) and Bifidobacterium animalis ssp. lactis ATCC 27536 (BB12), were separately mixed into butter at 1% levels. With the growing demand and variety of meat analogs on the commercial market, there is a need to revisit the methodology for the detection of foodborne pathogens in these products. The current Food and Drug Administration (FDA) regulatory methods for Salmonella enterica detection in meat analogs follow the Bacteriological Analytical Manual (BAM) and are time-consuming and costly, requiring pre-enrichment using lactose broth (LB) with a surfactant (e.g., Triton X-100). Seafood is vulnerable to species mislabeling due to factors such as complex global supply chains, varying prices, and similar appearance of species. Numerous studies have been published reporting a range of mislabeling rates for various forms of seafood. A straightforward, fast and efficient analytical method was developed which utilizes a magnetic composite called three-dimensional graphene (3D-G@Fe3O4) as an adsorbent to recover nitrite ions (NO2–) from environmental water samples. The investigation into the synthesized adsorbent contained an examination of its morphology, chemical composition, structural attributes, and magnetic properties. Flakes are products that are generally made from cereals. In this study, we are interested to use black soybean (Glycine soja (L) Merrit) and bangle (Zingiber purpureum Roxb.) as flakes ingredients. Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. This study evaluates the structural, physicochemical, functional and rheological properties of papaya dietary fibers (DFs) extracted by alkaline, water and combination of water/wet ball milling. The particle size of DF subjected to water/wet ball milling (WB-DF) was considerably reduced compared to DF extracted by water (W-DF) or alkaline (AL-DF) methods. WB-DF in comparison AL-DF increased the water holding capacity (WHC) by 4.1 folds, oil holding capacity (OHC) by 1.7 folds and water swelling capacity (WSC) by 2.6 folds. WB-DF also improved the cholesterol adsorption capacity (CAC), glucose adsorption (GAC), nitrite-ion adsorption capacity (NIAC) and antioxidant activity. The FT-IR spectra displayed …

This study investigated the phenolic compounds in date fruits, mainly soluble and hydrolyzable compounds, and insoluble melanin. Soluble (27.5–54.0 mg/100 g FW) and hydrolyzable (24.0–78.5 mg/100g FW) phenolic compounds were determined in 18 cultivars using ultra-performance liquid chromatography coupled with mass spectrometry. Phenolic acids were predominant in both fractions while flavonoids were mainly present in the soluble phenolic fraction and the proanthocyanidin B1 and B2 were only present in the hydrolyzable fraction. Four total antioxidant activity assays (total phenolic content, ABTS, FRAP, and DPPH) gave different results for both the soluble and hydrolysable fractions of 26 date fruit cultivars, which …

Quantifying the chemical process of milk spoilage is challenging due to the need for bulky, expensive equipment that is not user-friendly for milk producers or customers. This lack of a convenient and accurate milk spoilage detection system can cause two significant issues. First, people who consume spoiled milk may experience serious health problems. Objective: To improve the adsorption of genistein by zirconium-based metal-organic frameworks (MOFs) with triangle aromatic ligands. Methods: Two MOFs (MOF-808 and PCN-777) containing different sizes of triangle aromatic ligands were synthesized by hydrothermal method for adsorption of genistein. Objective: In this study, the effects of silymarin on the biofilm S. aureus ATCC25923 and its virulence factors were investigated. Methods: The inhibition and clearance of silymarin on S. aureus ATCC25923 biofilm formation were detected by crystal violet staining, the effects of silymarin on its biofilm metabolism were investigated by MTT staining, and the effects of silymarin on its coagulase expression and hemolytic activity were investigated by freeze-dried plasma and aseptic defibrinated sheep blood. Objective: Obtaining hhigh-yield pprotease-pproducing bacterial resources through fermentation of advantageous protease-producing strains derived from Shiping stinky tofu. Methods: Single-factor and response surface experiments were used to optimize the culture medium and fermentation conditions. Using casein as the substrate, the effects of temperature, pH, metal ions and organic reagent on the protease activity and stability of strain JX-11 were investigated using enzymology techniques. Results: One strain of high-producing proteinase-secreting bacteria, JX-11, was isolated from Shiping stinky tofu, identified as Chryseobacterium pennipullorum. Methods: TCMSP database and the network maps were constructed with Cytoscape3.9.0 software. Objective: A surface evaporation concentration device were designed to concentrate thermosensitive feed liquid at low temperature under normal pressure with low energy consumption. Methods: Based on an introduction to the working principle of the device, the basic equations of the device were given. The changes of volumetric evaporation flux and energy saving ratio with flow rate of the feed liquid, feed liquid temperature, sweeping gas flow rate, sweeping gas temperature were calculated and analyzed. RNA-Seq was used to sequence the transcriptome of mouse spleen tissues before and after GBP1 peptide treatment, and the molecular mechanism of GBP1 peptide immunomodulatory effect was explained. Objective: This study aimed to explore the copigmentation formula of purple corn anthocyanins. Methods: In this study, fructose, tannic acid, and pectin were used as co-pigmentation. The response surface method was used to optimize the co-pigmentation formula of purple corn anthocyanins, and the untreated purple corn was used as a control test.
