Objective: This study aimed to explore the copigmentation formula of purple corn anthocyanins. Methods: In this study, fructose, tannic acid, and pectin were used as co-pigmentation. The response surface method was used to optimize the co-pigmentation formula of purple corn anthocyanins, and the untreated purple corn was used as a control test. The anthocyanin components, color, texture, taste and antioxidant activity (DPPH free radical scavenging ability, ABTS free radical scavenging ability, and FRAP iron ion reducing ability) of purple corn after different treatments were determined. Objective: This study aimed to explore suitable drying methods for oil tea powder, making it easier for oil tea consumption and storage. Methods: Spray drying, vacuum freeze drying and vacuum drying were used to dry oil tea soup, and the quality (moisture content, sensory evaluation and color) and volatile substances of dried oil tea powder were evaluated. Results: The sensory score of vacuum freeze-drying oil tea powder was the highest (93), the water content was the lowest (3.78%), and the color was better(ΔE value 49.74). 104 volatile substances were identified from three drying methods of oil tea powder using …

Pectin is a kind of natural polysaccharide polymer, which is an important part of the cell wall of higher plants. It has physiological functions such as cholesterol-lowering, anti-tumor, anti-oxidation and hypoglycemic, and beneficial to intestinal health. In this review, pectin extraction methods and their advantages and disadvantages in recent years were summarized, and the yield, galacturonic acid content and esterification degree of pectin extracted from different sources and methods were compared and analyzed. The physiological function of pectin and its application in various aspects were also introduced, and the future development direction was prospected.

The study aimed to research the structural characteristics, anti-oxidation and hypoglycemic properties in vitro of polysaccharides from different parts of wampee. Methods: The structural properties, in vitro antioxidant and hypoglycemic activities of polysaccharides from the fruit, peel and seeds of wampee (CWP-F, CWP-P, and CWP-S) were analyzed and compared from the aspects of chemical composition, molecular weight, monosaccharide composition, appearance, DPPH free radical scavenging rate and α-amylase inhibition rate. In this review, several mechanisms of antihypertensive peptides derived from food and its by-products were summarized. Mechanisms based on the RAAS system such as ACE/Ang Ⅱ/AT1R signaling pathways and ACE2/Ang (1-7)/MasR signaling pathways were included. Mechanisms targeting at KNOS system including PI3K/Akt/eNOS signaling pathway, PPAR-γ/caspase3/MAPK/eNOS signaling pathway and L-type Ca2+ channel were also discussed. In addition, the pathways of reducing blood pressure by inhibiting endothelin-converting enzyme (ECE) activity discovered in recent years were also introduced.

Monosodium glutamate (MSG) is used as a common food additive in some foods. However, based on our search and knowledge, no comprehensive study discussed the effect of MSG on the human gut microbiome. In this study, the effects of MSG on the gut microbiome, liver, and kidney were performed. Data were collected from databases including PubMed, Scopus, Web of Science, and ScienceDirect using the search strategy and keywords. Finally, 14 eligible studies were selected for systematic review. Foraging is a broad topic, practiced in different locations throughout history. This study looks into the specific practices, values, and views of foraging in Iceland. There is little previous research that has been done, working with Icelanders, and hearing their stories. Through conducting several interviews of local Icelanders with different backgrounds and a brief six-question survey via the Inaturalist application, this study looks into exactly that. A sanitary challenge was carried out to induce suboptimal herd health while investigating the effect of amino acids supplementation on piglet responses. Weaned piglets of high sanitary status (6.33 ± 0.91 kg of BW) were distributed in a 2 × 2 factorial arrangement into two similar facilities with contrasting sanitary conditions and two different diets. Our results suggest that increased Trp, Thr, and Met dietary supplementation could support the immune systems of piglets under a sanitary challenge. In this manner, AA+ supplementation improved the performance and metabolism of piglets under mixed management and poor sanitary conditions. No major temporal microbiome …

Pentadesma butyracea seed butter or fat (PBSB) is a vegetable fat extracted from the seeds of the P. butyracea plant. The butter has potential use in the food, pharmaceutical, and cosmetic industries. The study investigated traditional PBSB processing methods in Ghana and evaluated their effects on yield, physicochemical parameters, and fatty acid composition. Background
Extracellular vesicles in human milk are critical in supporting newborn growth and development. Bioavailability of dietary extracellular vesicles may depend on the composition of membrane lipids. Single-nucleotide polymorphisms (SNPs) in the fatty acid desaturase gene cluster impact the content of long-chain polyunsaturated fatty acids in human milk phospholipids. This study investigated the relation between variation in FADS1 and FADS2 with the content of polyunsaturated fatty acids in extracellular vesicles from human milk.

The objective of the present study was to evaluate whether the content of sugar, protein, fat, or fibre in commercially available and specially formulated plant-based beverages (oat, soya and pea) influences the growth rates of Listeria. Beverages were inoculated with a strain cocktail of Listeria (approximately 1 × 103 CFU/mL), and the data demonstrated that Listeria could proliferate in all tested beverages. Moreover, varying concentrations of naturally occurring or added sugar (0–3.3%), protein (3.3–5%), fat (1.1–3.5%) and added fibre (0–1.5%) did not have a statistically significant (p > 0.05) impact on the growth rates of Listeria in the tested …

This study focuses on producing and characterizing protein-polyphenol complexes derived from pea and hemp proteins, paired with a variety of polyphenols including 2,4-Dihydroxybenzoic acid, Ferulic acid, and Rutin. The complexes were characterized using various techniques: UV-visible spectroscopy, fluorescence spectroscopy, total phenolic content analysis, and radical scavenging activities. Further, oil-in-water emulsions stabilised using these protein-polyphenol complexes and starch were explored as delivery systems for curcumin respectively. The formation of complexes was revealed by UV-visible spectroscopy, which indicated significant changes in the spectra of hemp and pea proteins upon complexation with polyphenols. High-fiber, low-cost agricultural byproducts offer a sustainable alternative for mitigating the competition for crops between humans and livestock. Pigs predominantly utilize dietary fibers through the process of microbial fermentation within the gut. This study explored the gut microbiota and the capacity for carbohydrate degradation in 30 individual Lantang pigs, a breed indigenous to China. Through metagenomic analysis, a total of 671 metagenome-assembled genomes (MAGs) were assembled and assigned into 14 bacterial and 1 archaeal phylum, including 97 species from uncultured microbes. Sulfur containing compounds including glucosinolates (GLS), sulforaphane (SFN) and S-methyl-L-cysteine sulfoxide (SMCSO) have been proposed to be partly responsible for the beneficial health effects of cruciferous vegetables. As such, greater understanding of their measurements within foods is important to estimate intake in humans and to inform dietary intervention studies. Herein is described a simple and sensitive method for simultaneous analysis of 20 GLS, SFN and SMCSO by liquid chromatography mass spectrometry. The prevailing climate is an important factor affecting the development of the physical quality and flavor of cacao (Theobroma cacao L.) beans. The influence of harvest seasons on the physical, chemical, and flavor characteristics of cacao beans from Nakhon Si Thammarat Province, southern Thailand, was assessed. Among cacao beans, those harvested in the rainy season (R) had the highest fresh and dry weights and the lowest bean count per 100 g (87.00 ± 2.83). Pesticides are specially designed to control pests and help in increasing the yield of crops. This study aims to investigate the genotoxic effect of the major ingredients of commonly used pesticides (Profenophos and Cypermethrin) on Allium cepa L. in different regions of the province of Punjab, Pakistan. Profenophos and Cypermethrin pesticides are extensively used by local farmers. Six different dilutions of Profenophos and Cypermethrin pesticide ranging from, 0.5 ml/L, 1 ml/L, 1.5 ml/L, 2 ml/L, 2.5 ml/L and 3.0 ml/L were applied initially on seeds germination. Human milk oligosaccharides (HMOs) are a group of complex glycans in human milk and play an important role in promoting the growth and development of infants, and more than 200 kinds of HMOs have been identified so far. In this paper, the types and structures of HMOs and their roles in improving infant intestinal health, promoting immune system development and brain development were reviewed. The application status of HMOs was summarized, the possibility and necessity of industrial production and application of HMOs in the future were prospected.

Objective: This study aimed to investigate different discriminant analysis models for pseudo-mixtures of walnut oil and rapeseed oil. Methods: Gas chromatography technology was used to analyze the fatty acid content in the adulterated mixture of walnut oil and rapeseed oil. Chemical stoichiometric methods were used to model the gas chromatography data, and discriminant analysis was performed on different proportions of walnut oil and rapeseed oil mixtures. Methods: Taking the slimy eel as the research object, the mechanism of clamping and cutting operation was analyzed. Methods: C. axillaris pastilles were irradiated with 0~10 kGy gradient dose of 60Co-γ ray and electron beam respectively, the changes of the indexes including microbial load, protein, fat, total sugar, L(+)-ascorbic acid, organic acids, pH value, sensory quality, and the shelf life quality stored in 0~360 days at room temperature were studied. Methods: Based on the spherical analogy model and heat transfer theory, the CFD unsteady SST k-ω turbulence model was used to numerically simulate the differential pressure precooling of apples with different air supply air speed, temperature, box opening size and fruit diameter, and three different working conditions were selected for accuracy.
