This study aimed to evaluate the changes in rabbit meat during storage at ambient temperature (30 ± 1ºC) for nine hours. The study focused on two rabbit muscle parts: the hind leg and the saddle, investigated in terms of microbiological parameters such as aerobic plate count (APC) and total coliform count (TCC); and physicochemical parameters such as pH, color, total myoglobin concentration, and lipid oxidation. Data obtained were subjected to statistical analysis at a 5% significance level (p < 0.05). Results revealed that the pH of both portions of rabbit muscle decreases over time during storage. This decrease is attributed to the growth of acid-producing microorganisms, which ultimately leads to spoilage in rabbit meat. On the contrary, color values (L*, a*, and b*) showed an increasing trend in both muscle portions, indicating a discoloration of rabbit meat during storage. Both lipid oxidation and total myoglobin content of rabbit meat did not change significantly during storage, but lipid oxidation varied between muscle parts. Based on the microbiological analysis of rabbit meat, both aerobic plate count (APC) and total coliform count (TCC) increased significantly during storage in both muscle portions. Results of the study suggest that freshly slaughtered rabbit meat must remain at ambient storage for the shortest time, as this storage condition will cause spoilage of meat, making it unfit for human consumption.

This essay explores the potential impact of urban agriculture and community gardens as sources of education and sustainable and environmentally-sound food production. Using an analysis of case studies and academic research, I argue for the viability of community gardens and urban agriculture as educational hubs and future food production sources. I examine previous research which shows that small scale effort can make lasting impacts in communities. I argue that the research is promising as it highlights that the efforts of people in their everyday lives, can and do contribute to positive change. Characteristics Of Lactobacillus Helveticus Fermentation Of Camel And Bovine Milks, Kobika Chelladhurai

In this study, the fermentation of low-fat camel milk (CM) and bovine milk (BM) with Lactobacillus helveticus was compared to fermentation with L. delbrueckii subsp. bulgaricus, and S. thermophilus at 28°C, 35°C, and 42°C. The fermentation activities were followed by measuring bacterial counts, titratable acidity, pH, and changes in lactose, organic acids, and proteolysis for 96 hours. Although bacterial growth was comparable in CM and BM, the fermented milks showed differences in acidification and proteolysis. Negative correlations between TA (%) and pH were consistent in both CM and BM suggesting similar buffering capacities. In both milks, L. helveticus …

A food composition database estimating S-methyl cysteine sulfoxide (SMCSO) was created following a systematic literature search. SMCSO data (705 entries) from 19 vegetables were summarised: brassicas (n = 10) and alliums (n = 9). The highest SMCSO in brassicas was reported in Brussels sprouts (median [range]: 318 [68−420] mg/100 g fresh weight (FW)) whilst the lowest was in radish (19 [4–45] mg/100 g FW). Brussels sprouts were almost twice as concentrated in SMCSO as cauliflower, followed by cabbage, kale, broccoli, kohlrabi, swede, Chinese cabbage, and turnips. Blood glucose (BG) spikes increase chronic disease risk in those with and without diabetes. The fiber and phytonutrient content of fruit, such as raspberries has the potential to attenuate the BG spike of a high glycemic load (HGL) meal. We examined the effect of red raspberries (RRs) on the BG spike when added to a HGL meal. Dietary fiber supplements are a strategy to close the ‘fiber gap’ and induce targeted modulations of the gut microbiota. However, higher doses of fiber supplements cause gastrointestinal (GI) symptoms that differ among individuals. What determines these inter-individual differences is insufficiently understood. Here we analyzed findings from a six-week randomized controlled trial that evaluated GI symptoms to corn bran arabinoxylan (AX; n = 15) relative to non-fermentable microcrystalline cellulose (MCC; n = 16) at efficacious supplement doses of 25 g/day (females) or 35 g/day (males) in adults with excess weight. Objective: Explore the cryoprotective mechanism and structure-activity relationship of antifreeze peptides derived from silver carp parvalbumin. Methods: Using differential scanning calorimetry and molecular dynamics simulation to compare activity, structure and mode of action of two typical peptides. Results: Pv-AFP 1 (KAADSFNH KAFFAKVG) had a stable α-helix structure, while Pv-AFP 2 (KAADSFNHKAF) tended to exhibit random coil. The thermal hysteresis activity of Pv-AFP 1 was 0.87 ℃, which was higher than Pv-AFP 2 (0.74 ℃). Objective: This study aimed to prepare a kind of mushroom paste with Lentinus edodes, Pleurotus eryngii and Agaricus bisporus as raw materials by enzymolysis with cellulase. Methods: The response surface method was used to optimize the optimal enzymatic hydrolysis process of the mushroom paste with amino acid nitrogen content as the index. Results: The optimal enzymolysis conditions were as follows: enzyme dosage 0.6%, pH 6, enzymolysis temperature 50 ℃, solid-liquid ratio 1∶30 (g/mL). This article summarizes the cause mechanism of postharvest quality deterioration of blueberry fruits and the research progress of blueberry preservation technology at home and abroad, mainly including physical, chemical and biological preservation methods; and emphasizes the application of biological methods in the postharvest preservation of blueberries.

Objective: The preparation method of matrix reference materials of bifenthrin and cyhalothrin pesticide residues in green tea was established. Methods: Green tea samples were sprayed with biphenylthrin and cyhalothrin. The samples were crushed, screened, homogenized and bottled. After the homogeneity and stability tests, the quantity value was determined by three laboratories, and the uncertainty was evaluated. Results: The amount values of bifenthrin and cyhalothrin in green tea were (0.185±0.019 7) and (0.207±0.046 6) mg/kg with k=2, and the confidence interval was 95%. This study investigates college students’ current food safety knowledge and food-handling perceptions and utilized an online survey which designed based on previous studies as method. The questionnaire measured respondents’ food safety knowledge and perception, and were divided into knowledge, attitudes and perception categories. The results show that college students significantly lacked in basic food safety knowledge as well as food handling skills and implies a high need to develop enhanced food safety resources for college students, especially on topics related to cross-contamination prevention, correct food preparation procedures, time and temperature control, and awareness of pathogens that cause foodborne illness.

Food safety has emerged as a critical concern in Vietnam, posing a significant threat to public health due to the prevalence of unsafe foods in the market. Among those most vulnerable to contaminated foods, low-income individuals are significantly affected. This study aimed to investigate the perceptions of food safety among this demographic, utilizing qualitative and quantitative approaches, including focus groups, survey questionnaires, and behavioral experiments using steamed bun as a stimulus. This project was intended to investigate the feasibility of a proposed modular dairy processing facility collocated with a small dairy on the University of Nebraska–Lincoln’s Innovation Campus. Priority was placed upon cost savings for equipment to be used in processing. Process flow diagrams, floor plans, production schedules, risk assessments, and plans for wastewater treatment were all developed to address the needs of the plant should it be built. A Monte Carlo simulation was conducted to evaluate the timeline for breaking even financially, resulting in the potential for a payback period of 4.5 years. The 4.5-year payback period was based on …
