The COVID-19 pandemic caused immense physical disruptions, affecting young adults in the U.S. The Health Belief Model is a social psychological framework that predicts the likelihood of adopting health behavior. The purpose of this research is to investigate COVID-19-related health beliefs and dietary behaviors among undergraduate students during the pandemic. Using convenience sampling, a cross-sectional survey was completed by 304 individuals at a New Jersey state university. Survey data included the frequency of COVID-19 prevention behaviors (e.g., wearing an indoor mask, handwashing), and consumption of fruit and vegetables. Background/Objectives: Studies have reported an increased risk of type 2 diabetes among people with higher protein intake. Moreover, branched-chain amino acids (BCAA) are reported to be positively associated with insulin resistance (IR). However, it is not understood whether elevated levels of BCAA are causal to IR development, or if higher BCAA are a marker of IR. Cheese ripening involves microbial changes, with starter lactic acid bacteria (SLAB) initiat- ing fermentation and nonstarter lactic acid bacteria (NSLAB) driving flavor and texture development. However, heat-resistant spores of Clostridium and Bacillus can survive pas- teurization and cause spoilage during ripening. This study evaluated NSLAB dynamics in the presence of spores during cheese ripening. Cheddar cheese samples at pilot-scale level (110 L) with four treatments, namely control, with spores of B. licheniformis (T1), with spores of Cl. tyrobutyricum (T2), and both spores (T3) at 2.0 Log10 CFU/mL, were ripened at 7 ◦C for six months. In gut microbiome research, carbohydrate-active enzyme gene clusters (CGCs) have emerged as key functional units for understanding microbial glycan degradation. Unlike taxonomic or broad pathway annotations, CGCs offer gene-cluster-level resolution and capture substrate-specific microbial functions. However, their diversity and distribution in relation to host metabolic phenotypes, such as obesity, remain poorly characterized. This study tests the hypothesis that the composition and abundance of fiber-targeting CGCs vary between obese and healthy human gut microbiomes, reflecting distinct microbial carbohydrate utilization strategies. The aim of the study was to conduct research to determine the possibility of predicting the approximate fatty acid composition of blends based on the iodine number. The fatty acid composition was determined by the chromatographic method and the results were subsequently used to identify the composition of blends by determining the iodine number. The iodine number was determined by calculation and titrimetric methods, comparing the differences between the obtained values. Rooted in a rural community’s needs, this paper explores how historically, and ethically informed infrastructures can support community engagement towards identification, documentation, and dissemination of local, traditional, and indigenous knowledge relating to climate change. Background/Objectives: Chronic inflammation and Western-style diets elevate colorectal cancer (CRC) risk, particularly in individuals with colitis, a feature of inflammatory bowel disease (IBD). Diets rich in polyphenol-containing functional foods, such as cocoa, may reduce gut inflammation and modulate the gut microbiome. Descriptive Sensory Analysis Of Gluten-Containing And Gluten-Free Chocolate Chip Cookies Available In The Marketplace, Eniola Ola, Victoria J. Hogan, Han-Seok Seo

Limited research has systematically compared the detailed sensory profiles of commercially available gluten-containing (C) and gluten-free (F) cookies using trained panelists. This study aimed to develop a comprehensive sensory lexicon for C and F chocolate chip cookies and identify key sensory attributes that differentiate them. Seven professionally trained panelists created a lexicon of 33 attributes spanning aroma, flavor, basic taste, texture, and residual property. Using this lexicon, a descriptive analysis was conducted on 12 C and 12 F cookie samples. Multivariate analysis of variance revealed significant differences between the two groups across the 33 sensory attributes (p < 0.05). A mixed model analysis showed that C cookies had higher intensities of chocolate-related and sweet aroma complex notes, while F cookies exhibited stronger nutty, artificial, and off-note flavors. In terms of texture, F cookies were higher in toothpack and powdery mouthcoat, while C cookies displayed more melt-in-mouth characteristics. Principal component analysis and agglomerative hierarchical clustering revealed three distinct clusters of test samples within both crispy and chewy cookie types, with some F cookies closely aligning with C profiles. These findings, along with the developed lexicon, provide a valuable foundation for enhancing the sensory appeal and quality of gluten-free chocolate chip cookies.

In the current study, the combined effects of essential oils (EOs) and polyphenols (PPs) were investigated as potential antibiotic alternatives. Thymol and carvacrol at a ratio of 1:1 was used as the EO due to their well-proven synergistic antimicrobial effect. The PPs were an extracted and freeze-dried product from grape pomace. The treatment solutions were prepared at the EO to PP ratios of 0:10, 3:7, 5:5, 7:3, and 10:0, at total concentrations ranging from 0 to 1000 ppm. [Objective ] This study aims to prepare γ-aminobutyric acid (GABA )-enriched milk fermented with lactic acid bacteria and evaluate its anti-exercise fatigue effect.[Method ] High GABA-producing lactic acid bacteria were selected and used to ferment milk with a commercial starter culture.A mouse model of exercise fatigue was established by four weeks of exhaustive swimming training.After four weeks,the exhaustive swimming time,serum biochemical indicators,antioxidant indicators,and energy storage substance levels were measured and analyzed.[Result ] Lactobacillus plantarum (L.plantarum ) LP- 5 was selected as the strain for fermentation,and its GABA yield reached (1.340±0.003) g/L.The fermented milk showed the titratable acidity of (46.29±2.01) ºT,the …

[Objective ] The aim of this study is to evaluate and improve the antioxidant effects of natural antioxidants and their derivatives on anchovy (Engraulis japonicus ) oil.[Method ] The 60 ℃ accelerated oxidation model was used to evaluate the antioxidant effects of phytic acid,tea polyphenols (TP),rosemary extract,ascorbyl palmitate,vitamin E,tea polyphenol palmitate (TPP),and bamboo leaf extract on anchovy oil based on the peroxide value (POV ),thiobarbituric acid reactive substances (TBARS ) value,relative intensity of free radicals,and fatty acid composition.[Result ] TPP (single antioxidant ) and TPP+TP (composite antioxidant ) demonstrated the strongest antioxidant effects on anchovy oil.[Conclusion ] Although the antioxidant …

[Objective ] A fluorescent immunochromatographic assay was established based on vitamin B 1 monoclonal antibody to measure the vitamin B 1 in infant formula milk powder.[Method ] The performance of vitamin B 1 monoclonal antibody was evaluated.On this basis,a highly sensitive fluorescent immunochromatographic test strip was developed.[Result ] The vitamin B 1 monoclonal antibody showed high sensitivity,affinity,and specificity.The fluorescent immunochromatographic test strip showed a visual limit of detection (vLOD ) of 10 μg/kg,a cut-off value of 200 μg/kg,and a calculated limit of detection (cLOD ) of 2.056 μg/kg.In addition,the recovery rate of this method was 97.3%~115.4%.The test results of the …

Chronic atrophic gastritis (CAG) is precancerosis with limited treatment options. This study investigated the therapeutic effects of velvet antler (VA), a traditional natural medicine, on CAG, with a focus on ferroptosis. In vivo experiments demonstrated the efficacy of VA in alleviating CAG, and network pharmacology analysis revealed its involvement in related terms, including inflammation, oxidative stress, and cell proliferation. Analyses further confirmed the modulation of ferroptosis by VA, particularly via the Keap1-Nrf2/HO-1/GPX4 pathway. Jiao Sanxian (JSX) consists of three traditional Chinese medicine including charred hawthorn, malt and Liu Shen Qu, they are also from Chinese medicine homologous food. It is commonly used to relieve functional dyspepsia (FD). The present study aims to explore the mechanism of JSX (granule), with the addition of prebiotics for the treatment of FD using mice model. The network pharmacology and molecular docking were used to forecast therapeutic targets for JSX. Foodborne pathogens pose significant risks to public health and food safety, necessitating innovative control strategies. High-pressure processing (HPP) was evaluated as an intervention against Listeria monocytogenes in cold-smoked rainbow trout, with treatments at 500 MPa and 4.4 °C and 60.0 °C achieving up to a 5.03 log CFU/g reduction. While diet is known to affect gut microbes, less attention has been given to how food processing methods, such as heating, fermentation, and cold processing, change food in ways that influence the gut microbiome and health.
