The global human population is rapidly increasing, escalating interactions of people, animals and the environment. This has led to more convoluted health challenges, for which African smallholder farmers bear the brunt. The One Health (OH) approach recognises the interconnectedness of these health challenges and thus follows a transdisciplinary approach involving diverse stakeholders to address them. Although there have recently been global concerted efforts and studies on OH, an information gap exists in Africa, particularly regarding smallholder farmers and their needs. This thesis focuses on manufacturing electrospun fibrous membranes from a blend of poly (ethylene terephthalate) and poly (ethylene furanoate) and using in premix emulsification. Poly (ethylene furanoate), which is a 100% bio-renewable polymer being blended with synthetic poly (ethylene terephthalate) for membrane fabrication contributes towards sustainability in the production of food and pharmaceutical emulsions. The objective of this research was to investigate the biopreservative effects of chitosan and lemon essential oil in slush ice treatments on the microbial shelf life of refrigerated catfish fillets. Catfish fillets were stored in slush ice treatments containing chitosan (CH), lemon essential oil (LO), a combination (CH+LO), water (CTRL), and no slush (NS) for three d at 4 C, then stored at 4C for twelve d post-slush. The growth of background microflora in catfish fillets treated with CH and CH+LO was reduced (P<0.05), maintaining total aerobic counts below 4.5 log CFU/g, while the control reached spoilage levels (>7 log CFU/g) by Day 6. The Effect Of X-Ray Irradiation Technology On Salmonella Spp. And Quality Parameters Of Ready-To-Bake Chocolate Chip Cookie Dough, Kala Grace Morris

Salmonella contamination in cookie dough poses a threat to consumers. This study investigated the effect of X-ray irradiation on Salmonella-inoculated ready-to-bake chocolate chip cookie dough and its impact on dough quality. A Salmonella cocktail (~10 log CFU/g) was prepared and inoculated into cookie dough samples (~6.5 log CFU/g) and then treated with X?ray irradiation (0.25, 0.5, and 1 kGy). Salmonella decreased by 1.15, 1.79, and 2.49 log CFU/g, at an exposure of 0.25, 0.5, and 1 kGy, respectively. Quality parameters (pH, aw, and colorimetry) were evaluated for two brands. Effects Of Environmental Stress And Antimicrobials On The Health, Microbiome, And Product Shelf-Life Of Channel And Hybrid Catfish, Guyue Tang

Two studies investigated various aspects of channel and hybrid catfish production and processing. The first study examined the effects of ammonia stress (15 mg/L vs. 1 mg/L control) on growth performance and fillet quality. While channel catfish demonstrated superior growth, ammonia stress minimally impacted the sensory profiles of both species. Gut microbiota analysis revealed species-specific differences, with Lactococcus lactis dominating hybrid catfish communities. The second study evaluated buffered vinegar treatment (1.5%) on fillet shelf life during refrigerated storage. Vinegar-treated fillets maintained better microbiological quality, with aerobic plate counts remaining below 7 log cfu/g through day 6, while untreated fillets exceeded …

[Objective ] This study aims to investigate the immunoregulatory mechanisms of lactoferrin formula and its four nutritional components (α-lactalbumin,N-acetylneuraminic acid,yeast β-glucan,and lactoferrin ) in RAW 264.7 macrophages.[Method ] M1 and M 2 macrophage polarization were induced by lipopolysaccharides (LPS) and interleukin (IL)-4,respectively.Quantitative real-time PCR,flow cytometry,and Western blot were employed to analyze macrophage polarization and related signaling pathways.[Result ] Lactoferrin formula enhanced the phagocytic activity of macrophages and dose-dependently inhibited M 1 polarization while promoting M 2 polarization within the range of 10~50 µg/mL.A combination of four nutritional components exhibited similar effects,with greater effects than the three-component combination.Additionally,the lactoferrin formula upregulated …

[Objective ] Functional constipation is a chronic gastrointestinal disorder caused by multiple factors,with a relatively high and increasing prevalence in China.Previous studies have found that Bacillus coagulans (B.coagulans )CCFM 1041 can alleviate symptoms of functional constipation in mice.[Method ] A double-blind,randomized controlled clinical trial was conducted to evaluate the clinical efficacy of CCFM 1041 in relieving functional constipation.A total of 73 participants were observed for changes in constipation-related indicators,serum levels of gastrointestinal regulatory neurotransmitters,and gut microbiota before and after the intervention.[Result ] After taking CCFM 1041,84.2% of participants experienced increased bowel movement frequency,and 94.7% of participants showed improved stool consistency.Compared …

The gluten-free food market is expanding rapidly. However, consumer acceptance and emotional responses to gluten-free food, especially commercially available products, have received relatively underexplored. This study aimed to determine how consumer perceptions, acceptance, and emotional responses differ between gluten-containing (C) and gluten-free (F) chocolate chip cookies from three brands under both blind and labeled conditions. In the labeled condition, 84 participants without celiac disease evaluated 3 F cookies labeled "gluten-free" and 3 C cookies presented without claims on a plain white card. The demand for gluten-free products has increased significantly over the past few decades. This study aimed to determine differences in consumer acceptance, emotional responses, and purchase intent between gluten-containing versus gluten-free chocolate chip cookies. Twelve commercially available chocolate chip cookie products from 11 brands were evaluated, including 7 gluten-free and 5 gluten-containing options. Eighty-nine participants without celiac disease took part in this 2-day study, evaluating six cookies per day. In chocolate-coated products, oil migration in fats can lead to chocolate softening, filling hardening, discoloration, and lower consumer acceptance. This study examined three different fats (soy- palm-, and palm-kernel (PK) based), crystallized under different conditions (cooling rate and use of high intensity ultrasound (HIU)) to examine how the crystallization conditions impact the physical properties of confectionery products. The Cheddar cheese industry has recently observed variation in the pH of their cheese during the early stage of storage. This variation may be due to the addition of the faster acid producing thermophilic starter culture Streptococcus thermophilus which was recently introduced into the Cheddar cheese making process. This starter culture may impact the calcium buffering properties of the cheese due to more retention of the insoluble calcium (INSOL Ca) within the cheese. Viscosity plays an important role in the food industry as it affects the quality, processing stability, and shelf-life of food and impacts physiological responses such as satiation and satiety. Greater viscosity reduces food intake by increasing the perception of satiety, primarily by delaying gastric emptying and increasing tactile stimulation. Starch is commonly added to food products as a viscosifying ingredient, which often involves chemically modifying the starch via cross-linking, to enhance its resistance to high shear, temperature and acidity. Probiotics, known for their wide range of health benefits, have been gaining recognition on their effects on the gut-brain axis. This axis, operated via various pathways, can be modulated by the type and functions of probiotics found in the gut microflora. However, probiotics face several stress factors before reaching the gut which hinders them from being functional. The objective of this study was to use a multi-omics (i.e., gene expression quantification, metabolomics, and fatty acid [FA] profiling) approach to separate and authenticate beef from three different dietary groups. In this 2-year study, Red Angus steers (n = 54) were randomly allocated to one of three treatments: (1) complex biodiverse pasture (GRASS), (2) total mixed ration (TMR) in feedlot (GRAIN), or (3) TMR in feedlot supplemented with 5% (dry matter) grapeseed extract for the last 30 days (GRAPE). Inactivation Of E. Faecium Nrrl B-2354 In Whole Black Pepper By Fluidization With Hydrogen Peroxide Vapor, Daniela Segura

This study evaluated Enterococcus faecium NRRL B-2354 as a surrogate for Salmonella inactivation in black peppercorns treated with hydrogen peroxide (HP) vapor via fluidization. The selected parameter for dwell temperature was 60ºC for 60 minutes. The reduction of both Salmonella and E. faecium, along with changes in water activity, color, and residual hydrogen peroxide, were measured before, immediately after treatment and at 24 and 48 hours post-treatment. Results showed that E. faecium exhibited a significantly greater reduction (4.63 ± 0.55 log CFU/g) compared to Salmonella (2.94 ± 0.16 log CFU/g) (p < 0.05), making E. faecium unsuitable as …
