This study examines the influence of teaching digital resources of MyPlate on the nutrition knowledge, attitudes, and practices (KAP) related to healthy eating habits among first and second-grade students. A pre-and post-assessment of this quasi-experimental research study measured the baseline KAP levels of 45 participants regarding healthy eating habits. Students were divided into three groups: digital MyPlate (n =16), pencil-and-paper (n =15), and control (n =14). Following the pre-assessment, an intervention was conducted involving teaching MyPlate and the five food groups. A post-assessment was then implemented to measure the change in KAP levels resulting from the intervention. …

The purpose of this quantitative study was to further the understanding on how access to trauma-informed professional learning changed research-based practices in classroom and school-wide settings in K-12 schools. The guiding question for this quantitative study was: How has trauma-informed professional learning influenced changes in research-based practices in school-wide and classroom settings in K-12 schools? This research assessed the perceptions of elementary, middle, and high school teachers in one school district to investigate access to trauma-informed professional learning and potential changes in research-based practices in school-wide and classroom settings. Following a massive wave of school closures during the COVID-19 pandemic, educators found the need to be hyper-critical of how they spend their instructional time with students. Almost all students are expected to return nearly a full grade-level behind and would likely have to learn to navigate a completely new school environment. As a result, many educators were overwhelmed to cover unprecedented amounts of instructional content in less time. The dissertation “Exploring Equity in Introductory Biology Genetics Education” delved into the critical examination of equity within undergraduate genetics education. Chapter One outlined the background, significance, research framework, and manuscripts included in this study. Chapter Two was a scoping review that provided an overview of the current pedagogical approaches in undergraduate genetics education. It identified six active learning pedagogies: Course-based Undergraduate Research Experience (CURE); group work; case-based learning; inquiry-based learning; Virtual Reality (VR); and Consider, Read, Elucidate the hypothesis, Analyze and interpret the data, and Think of the next Experiment (CREATE). The refugee and newcomer population faces many challenges as they arrive in their host country. Many individuals experience varying degrees of trauma in their country of origin. Trauma can lead to poor mental health outcomes and poor adjustment in host countries. Refugee children in particular may experience post-traumatic stress disorder, depression, and anxiety as a result of traumatic experiences. The integration of Diversity, Equity and Inclusion (DEI) into healthcare professional training is critical in order to ensure positive patient outcomes and help combat healthcare disparities, leading towards health equity. There is not currently a standard specific to DEI awareness in healthcare education and training. Objective: The purpose of the present study was to assess the feasibility of chronic stroke patients safely completing an acute 30-minute session of high-intensity interval exercise (HIIE) compared to moderate-intensity aerobic exercise (MIE) on a treadmill, with a focus on cognitive outcomes. Design: This feasibility study utilized a randomized controlled crossover trial with two experimental sessions separated by at least 7 days to minimize practice effects on cognitive assessments. Being able to read on grade level by third grade is a standard across the United States for public school systems. With the current educational climate enduring a teacher shortage, the ability to provide consistent reading intervention is affected. Paraprofessionals are increasingly being hired to support these gaps, but are not provided with the necessary resources and professional development to employ quality reading intervention. This project will provide the framework of a professional development schedule with necessary resources for paraprofessionals to refer to and expectations for paraprofessionals and administrators when implementing it.

This study examines current trends of university counseling center (UCC) utilization among Reserve Officer Training Corps (ROTC) students and student-military Veterans, compared to their nonmilitary-minded peers at a large, private, western university. Given likely differences in the lived experiences between these three populations, research is needed to provide insight on the treatment needs of military-minded students. We examine counseling center data for ROTC (n = 88), Veteran (n = 93), and nonmilitary-minded (n = 16,268) students who presented for counseling services from 2014-2021. The problem under investigation in this qualitative study was teachers’ inconsistent implementation of differentiated instructional strategies when teaching students of low socioeconomic status. The purpose of this qualitative study was to investigate how elementary teachers implement differentiated instructional strategies to support students of low socioeconomic status. The conceptual framework was based on Jerome Bruner’s constructivist theory, the growth of mind, because symbolic representation helps students visualize the world and enhance experiences. While innovative approaches to teacher preparation are implemented in teacher preparation curricula, most curricula and practicums continue to be built around expected and normative standards of teacher practice. Objective: Describe educator experiences teaching systems thinking in nutrition and dietetics education. Design: Qualitative, semi-structured, online interviews. Setting: Educators teaching in accredited nutrition and dietetics programs. Participants: Purposive sample of thirteen Registered Dietitian Nutritionists (92% female, 77% with > 6 years teaching experience) from each U.S. census region and accredited program type. Phenomenon of Interest: Educators described experiences teaching systems thinking in accredited programs, including benefits. Analysis: Transcribed interviews were analyzed using qualitative grounded theory iterative coding. Excel was used for data organization and thematic coding analysis. Student Exposure To Andhii Improves Confidence With Applying The Nutrition Care Process, Casey Colin, Tad Campbell, Michel Harris, Avalon Mustafa, Lindsay Woodcock

The objective of this study was to explore if using ANDHII improves NCP confidence and documentation quality. This quasi-experimental trial was conducted with n = 43 undergraduate dietetic students. NCP confidence was measured before and after a traditional case study, and after an ANDHII case study. Documentation quality was measured using a validated quality audit tool. Confidence increased from time 1 to time 2 (p = 0.008), and from time 2 to time 3 (p = 0.003). Documentation quality was higher for the ANDHII documentation compared to the non-ANDHII documentation (p < 0.001) but lower when compared to the traditional ADIME (p = 0.03). Familiarizing students with ANDHII improved NCP confidence. Opportunities exist to improve ANDHII functionality and positively impact documentation quality.

The purpose of this study was to analyze tactics employed by coordinated programs in dietetics during COVID-19 and share best practices in the event that another crisis disrupts the intended learning plan and curriculum. The study was conducted via a survey that consisted of 14 questions, not including consent, that pertained to their specific program, whether COVID disrupted their supervised practice experiences, and if so, how they overcame the challenge. Participants receiving the survey consisted of dietetic coordinated program directors and the clinical coordinators of the respective program if applicable. Background: Competency-based assessment (CBE) focuses on applying knowledge and skills to progress from novice to expert in clinical areas. The Future Education Model Graduate Program (FEMGP) incorporates CBE to meet enhanced competencies for nutrition and dietetics. Objective: This study explored FEMGP graduates’ perceptions of assessment methods and practices and perceptions of enhanced competency (EC) integration and preparedness for entry-level practice. Methods: This was a basic descriptive qualitative study. Background: Victims of human trafficking (HT) frequently face malnutrition, dehydration, low food security, and infections. When identified, victims of HT are normally treated with interprofessional team (IPT) care that often excludes Registered Dietitian Nutritionists (RDNs). Although RDNs are trained to treat these conditions, they may lack knowledge, confidence, and skills, for working with this population, as well as the opportunities to work on such IPTs. Diabetes camp is helpful in providing hands-on learning experiences and interprofessional learning opportunities through immersive experiences. Currently, there is little research comparing the changes in knowledge and perception during experiential learning in dietetics students at a residential diabetes camp. This longitudinal qualitative case study explored the knowledge, perceptions, confidence, and empathy gained by four dietetics students during experiential learning at the camp. Qualitative research methods (interviews, observations, "photovoice," journals, and focus groups) were used to explore and understand participants’ experiences of hands-on involvement with type one diabetes, and what they learned at camp that cannot be learned in a classroom. …

This observational research presents multi-year findings of a project using an online case study implemented in an undergraduate Medical Nutrition Therapy class that fostered interprofessional collaboration among students from various healthcare disciplines. The case study focused on a fictional patient with an ischemic stroke and all work was virtual. Students from various allied healthcare fields were represented: dietetics and nutrition, occupational therapy, speech-language pathology, and social work. Background: Interprofessional Collaborative Practice (IPCP) supports optimal healthcare outcomes; accordingly, dietetic program accreditation standards require interprofessional-related education (IPE). In this issue of the Journal of Dietetic Education, we share a special section for interprofessional education (IPE). The articles highlight potential avenues for interprofessional education in dietetics programs and continuing education for dietetics professionals. Each article offers insight into the landscape of dietetic education and the need for IPE. Dietetic students learn from IPE experiences in their programs. However, additional IPE occurs through outside experiences and throughout a dietitian’s career.

Much attention has been paid to the contributions of media literacy to children and adolescent development in most developed countries. This study adopted a non-equivalent control type of quasi-experimental research design involving the experimental and control groups. The sample size for the study was 90 learners drawn from all public adult and vocational education centres across Nigeria. The Entrepreneurial Development Test” (EDT) was the data collecting instrument. Data gathered were analysed using mean, standard deviation and analysis of covariance. The purpose of this quantitative, quasi-experimental nonequivalent control group study was to determine if there is a difference in mathematical fact fluency among third-, fourth-, and fifth-grade students with varying practice methods and spacing intervals while controlling for pre-test scores. The study filled the literature gap by examining the impact of each variable and their combined additive effect in a third-, fourth-, and fifth-grade student population. Given the importance of math fact fluency on overall math performance, finding the most effective means for building retention is imperative.
