This study critically examines the use of generative artificial intelligence (GenAI), specifically ChatGPT, in the development of doctoral dissertation proposals, highlighting both its potential and its ethical implications. Through a content analysis of a dissertation proposal created using ChatGPT, the study investigates how GenAI supports structural organization, academic writing, and citation formatting while exposing significant concerns related to fabricated references, methodological misalignment, and diminished scholarly rigor. Although GenAI accelerates the proposal-writing process, its outputs often lack the depth, coherence, and originality expected at the doctoral level, thereby threatening the integrity of academic research. This practice-oriented self-study examines the development of an artificial intelligence (AI) literacy education model grounded in my reflective teaching practices and journey in graduate-level teacher education courses. This project is a reflective case study exploring my personal experiences as a job coach for students with disabilities at Total Education Solutions. The research focuses on my own observations, interpretations, and emotional responses while alternating between student-centered and teacher-directed instructional approaches during workforce readiness sessions. Student-centered menu planning prioritizes learners’ preferences, nutritional needs, cultural relevance, and engagement in the development of school nutrition program offerings. Menus that reflect student preferences and incorporate student input are associated with increased meal participation and consumption. This study examined school nutrition professionals’ perceptions, best practices, and strategies for incorporating students’ voices into school-based menu planning and modification.

The increasing prevalence of ultra-processed foods (UPFs) in children’s diets presents a significant public health concern due to associations with obesity, metabolic disorders, poor cardiometabolic health, and reduced academic performance. Scratch cooking in school meal programs has emerged as a promising strategy for improving meal quality by emphasizing preparation from basic, minimally processed ingredients. The aim of this study was to investigate variables that may impact the ratings of job satisfaction by practicing Illinois K-12 teachers specifically examining if the variables of occupational roles, burnout, efficacy, and other relevant covariates are correlated and/or have predictive utility on teacher job satisfaction. A secondary goal was to raise awareness about the stressors teachers face in their work environments. Survey materials included a demographics questionnaire, an occupational roles catalog, the Copenhagen Burnout Inventory, the Teacher Sense of Efficacy Scale, and the Teacher Job Satisfaction Scale. Seventy-six practicing Illinois K-12 teachers completed the study. Results of the current …
