The emphasis on tourism in the economy of South Dakota provides extensive opportunities in the field of Hospitality and Tourism for employment in the region. Specific employment opportunities exist in the hotel, food and beverage, and travel accommodation industries. Local job postings indicate opportunities for Lodging Managers, Meeting, Convention, and Event Planners, Food Service Managers, and Administrative Service Managers. On a national level, these positions all show expected growth of between 2-33% over the next seven years (Bureau of Labor Statistics Occupational Handbook, 2015).

Authenticity is deemed to be a crucial element in many tourism experiences. Tourism, however, is often accused of succumbing to notions of perceived authenticity to ensure commercial success, leading to misrepresentations of cultures. Food tourism, conversely, is advocated as a means of encountering genuine culture, history and lifestyle. This paper investigates the role of food tourism as an authentic representation of culture in Cork’s English Market. In-depth interviews were conducted with market traders and analysed through the grounded theory method. We revisit the mechanisms that drive tipping behavior by comparing tourists and locals in New York City. It is unlikely a tourist will tip as a way of enforcing repeated interactions since they are not from the area, while a local may tip as an enforcement mechanism. However, if people tip because of social norms, we should see both tourists and locals tipping similar amounts. We compare locals and tourists who are theatergoers to control for education and income, as these factors are likely to affect tipping behavior. Purpose: The current study was conducted to assess the effectiveness of a semester-long anti-food waste campaign regarding university student diners’ food waste behaviors.

Originality/Value: Food waste and specifically post-consumer food waste has become one of the most critical concerns in recent years. Do Hotels And Mixed-Use Projects Benefit Each Other? Evidence From China, Yun Zhang, Chun-Hung (Hugo) Tang, Yunzi Zhang

Purpose: In China, many mixed-use projects included a luxury hotel on the property. The present study aims to answer two questions: Do mixed-use projects benefit from including a hotel? Do hotels benefit from being located in a project?

Design/Methodology/Approach: The present study collected a sample of 76 mixed-use projects from Sina Commercial Real Estate database (Sydc.sina.com.cn). Hotel performance data are provided by STR. A hedonic model was used to test hotels’ effect on office rents and residential unit prices in mixed-projects. A matched-subjects designed was used to analyze the effect of mixed-use projects on hotel performance.

Food is an important aspect in creating tourism destinations and can be perceived as an immensely influential attraction for tourism. There are excellent examples of destinations that brand themselves through food tourism, using this special-interest area as a strategy to develop regional tourism and ultimately, increase tourist numbers. However, not all destinations use food tourism as a strategic branding strategy. One such example is Cork in Ireland. Consumer Response To Table Spacing In A Fast-Casual Restaurant, Howard B. Clark Iii

Theses and Dissertations--Retailing and Tourism Management

The purpose of this research was to evaluate consumer response based on two distances (12 and 24 inches) between tables in a fast-casual restaurant. An onsite survey was conducted to measure customers’ cognitive, emotional, and behavioral responses to questions on pleasure, privacy, stress, arousal, comfort, control, customer satisfaction, and future dining intentions based on their experience with the table spacing. Results showed that table spacing has an effect on diner’s pleasure, feelings of privacy, and sense of comfort and control. The results confirmed a strong correlation between customer satisfaction and future behavioral intentions.
