The rapidly growing rate of the older adult population has created a need to better understand younger adults’ self-perceptions of aging and current trends of ageism. The purpose of this secondary data analysis research project was to determine changes, if any, in participants’ self-perception of aging after the Socially Nutritious facilitator or nutrition ambassador volunteer training, which aims to develop knowledge and skills related to aging trends, older adult nutrition, preventing ageism, and communication and educational considerations when working with older adults. Food insecurity and malnutrition are significant public health concerns among older adults. Over the past two decades, the number of older adults in the U.S. who are food insecure has more than doubled (Ziliak & Gunderson, 2022). During the first year of the COVID-19 pandemic, deaths among older adults due to malnutrition increased in Minnesota (Olson, 2023). Food insecurity among older adults is associated with numerous health issues, isolation, and increased health costs (ACL, 2021).

Dysphagia refers to the symptom of difficulty in swallowing that accompanies several prevalent conditions in the older adult population, including amyotrophic lateral sclerosis (ALS, Lou Gehrig’s Disease), stroke, Parkinson’s Disease, Multiple Sclerosis, dementia, various cancers, and brain tumors (Allari, 2014). Many older adults who suffer from these conditions reside in nursing facilities, where most of their care is provided by certified nursing assistants (CNAs) and medication aides (MAs). Most Americans do not consume recommended intakes of fruits and vegetables (F/Vs). Hands-on nutrition education applies social cognitive theory as participants practice preparing F/Vs. This study compared a four-week hands-on nutrition education program (L+HO) with lecture only (L) in older adults with assessments at baseline and weeks four and eight. Twenty-three women over the age of 50 participated in either four, 90-minute weekly L+HO classes (n = 14) or four, 40-minute weekly L nutrition education classes (n = 9). Vegetable intake significantly increased at four weeks compared to baseline for both intervention groups. Vegetable intake increased at eight weeks compared …

The United States is a rapidly aging nation. Older adults have higher rates of falls than any other age group. One in four older adults fall each year. Many of these falls are associated with sedentary lifestyles and decreased muscular strength effecting balance and gait performance. Physical activity (exercise) can reduce the risk of falls among older adults, yet adherence remains low. Exergames can increase adherence to interventions that promote health and physical activity. Social engagement can increase self-efficacy and motivation to exercise. The impact of diet and exercise on overall health and chronic disease risk has been well examined. Multiple studies show that Americans eat more now than they did fifty years ago. What isn’t known is how much of an impact time has on food intake patterns of individuals in terms of different age groups, historic periods of structural influences, and birth cohorts.

Senior citizens participating in a congregate meal program received nutrition education lessons in two different ways. One group received nutrition lectures, a second group recieved nutrition lectures accompanied by printed material. A third group served as a control. Each group contained an urban and rural site. The nutrition lectures and printed material centered on the Basic Four food groups. The lessons were presented to the subjects once a week in four successive weeks. The length of the nutrition lecture for each food group was twenty minutes. The senior citizen took pre and posttests to measure an increase or decrease in …

Introduction
This paper examines the topic of nutrition education for the elderly. Only within the past decade has proper nutrition been recognized as making a major contribution to the health and well-being of the elderly. This recognition of the importance of nutrition in the later years has led to the recent establishment of many nutrition programs for the elderly. As nutrition education is seen as an important tool in improving the nutritional status of the elderly, many of these now programs include nutrition education components.
Part One of this paper discusses the relationship between nutrition and aging. …
