Farm-to-school is a new, innovative strategy with multiple planning-related objectives. The article evaluates the significance of farm-to-school in relation to improving the health and nutrition of school-age children, particularly low-income youth; strengthening the capacity of local farmers, particularly those engaged in sustainable practices; adding to the toolkit of strategies designed to contain and ultimately reduce sprawl-inducing developments by helping preserve farmland; and helping establish a community food systems approach no longer entirely dependent on the global food system that has come to dominate food growing, processing, distribution, and consumption patterns around the world.

Introduction Racial/ethnic minority communities are at increasingly high risk for chronic diseases related to obesity. Access to stores that sell affordable, nutritious food is a prerequisite for adopting a healthful diet. The objective of this study was to evaluate food access, availability, and affordability in 3 nonoverlapping but similar low-income communities in urban Los Angeles, California. Methods Using a community-based participatory research approach, we trained community members to conduct a food assessment to 1) map the number and type of retail food outlets in a defined area and 2) survey a sample of stores to determine whether they sold selected …

This chapter examines environmental politics in four polities that run the full spectrum of political regimes: mainland China (authoritarian), South Korea and Taiwan (newly democratic), and Japan (mature democracy). The chapter argues that variation in environmental politics in each place resulted primarily from the timing of their environmental movements, with subsequent movements learning from predecessors and gaining increasing access to global NGO networks. Paradoxically, when environmental movements became linked to democratization movements (in South Korea and Taiwan), they also became linked to political parties, which hindered access to government policymaking when non-allied parties were in power.

This project increased awareness about issues of violence to youth, their communities, and policy makers through the technique of photovoice and its translation into photo exhibitions and other community events. Youth participants learned photography skills, engaged in critical communal discussions about important issues affecting their health, wrote reflective stories about their photos, and engaged in policy change efforts. Their photos depict the need to address economic devastation and built environment degradation to prevent violence in their communities. Youth presented policy makers and community leaders with an “insider’s perspective” of the issues facing their communities, with the hope of promoting policy …

This studio was based on the Fairmount Greenway that was developed through a series of public meetings with the neighborhood community and with consultants from the firm Crosby, Schlessinger and Smallridge (CSS). The Fairmount Greenway, while drawing its identity from the traditional greenway model is in fact a reinterpretation of an urban greenway. The greenway path follows along both primary and secondary city streets because of the lack of space along the rail right-of-way. The Fairmount Greenway begins at what will be a new station stop at New Market South Bay near Upham’s Corner in northern Dorchester. The greenway follows …

Participatory visual research, or "visual interventions" (Pink 2007) allow environmental anthropologists to respond to three different “crises of representation”: 1) the critique of ethnographic representation presented by postmodern, postcolonial, and feminist anthropologists, 2) the constructivist critique of nature and the environment, and 3) the “environmental justice” critique demanding representation for the environmental concerns of communities of color. Participatory visual research integrates community members in the process of staking out a research agenda, conducting fieldwork and interpreting data, and communicating and applying research findings. Water sources in the United States' New England region are laden with arsenic. Particularly during North America's colonial period--prior to modern filtration processes--arsenic would make it into the colonists' drinking water. In this article, which evokes the biocultural evolution paradigm, it is argued that colonists offset health risks from the contaminant (arsenic poisoning) by ingesting copious amounts of seven spices--cinnamon, cloves, nutmeg, cardamom, allspice, vanilla, and ginger. The inclusion of these spices in fall and winter recipes that hail from New England would therefore explain why many Americans associate them not only with the region, but with Thanksgiving and Christmas, …
