The Impact Of High Temperatures On Child Anthropometric Outcomes Worldwide, Natalia A. Cancino Garcia

High temperatures caused by climate change significantly impact society, including child nutrition. Our research focuses on the impact of high temperatures on the anthropometric outcomes of children aged 1 to 5 in 54 countries worldwide. We analyze the historical climate and anthropometric data to evaluate the effect of high temperature on weight-for-age (WAZ) and weight-for-height (WHZ) in children. Results indicate that high temperatures negatively affect child nutrition, particularly in areas above 20°C, and children in rural areas are more vulnerable. The impact of monthly temperature on child anthropometric outcomes varies across countries, regions, and cultural practices. Economic status alone is …

In July 2021, California became the first state to pass a program which guarantees two meals a day to all K-12 students at no cost. This project examines California’s journey to pass this Universal School Meals Program (USMP) and explores how such a program can provide equity for students. I produce a legislative history which traces how school meals are funded and regulated at the federal level, California’s public education funding system, their state meal program, the policies which created changes that allowed the USMP to pass, and the legislation of the program itself. Urban agriculture has long been used as a tool for promoting food justice and urban sustainability in municipalities across the globe. From vertical and rooftop growing operations to community and residential garden plots, the idealistically transformative nature of urban agriculture is becoming an increasingly popular subject among scholars, city planners, policymakers, and activists alike. Purpose: This project aimed to measure the acceptability and feasibility of plant-based diets among low-income individuals with type II diabetes at the Samaritan House Food Pharmacy and to create a user-centered pilot program to encourage the adoption of a plant-based diet.

Background: Plant-based diets are effective for preventing, treating, and reversing type II diabetes, but there is not much evidence about the acceptability and feasibility of these diets.

High Fructose Corn Syrup is believed to be responsible for the increase of the obesity epidemic that is affecting both developed and developing countries, yet to date there are no rigorous analyses that quantify this effect. To estimate the impact of consumption of HFCS on obesity, I have paired country-specific data on imports of HFCS from the United Nations International Trade Statistics Database (UN Comtrade) with women and child health data from around 70 countries from 1985 to 2018. Guayusa, a tree used for its leaves, that when dried, boiled, and consumed in tea form, acts as a natural stimulant due to its high levels of caffeine. Initially used among Kichwa people, the plant is thought to be a panacea with abilities to heal health complications such as infertility, headaches, and nausea. This undergraduate thesis seeks to identify the intersectionalities between decolonization policy and food sovereignty practice within the Bolivian plurinational state. It intends to seek whether or not food sovereignty exists within the execution of Decolonization under the readjustment of Bolivia's plurinational constitution. This research also seeks to acknowledge how this discourse plays out within domestic and international markets, land disputes between Andean highland farmers and Amazonian lowland farmers, and the potential reasonings for those tensions.

This thesis focuses on the adverse health impacts food systems have on Latinx immigrant communities. Marquez looks closely at emergency services programs using the food bank run by the Our Lady of the Pillar in Half Moon Bay, California, and interviewed five Latina immigrants from Mexico and Central America. While the food banks provided these families with fresh produce, the women expressed that it is substandard to the produce in their home countries. Abstract: In the context of introducing biofortification of staple crops as a food-based approach to combat micronutrient malnutrition in Sub Saharan Africa (SSA), we carried out a survey in Tamale, Ghana to elicit consumers’ preference of and willingness to pay for one of the highly nutritious biofortified staple crop processed product: the Orange Fleshed Sweet Potato (OFSP) bread. Our results indicate that scores of respondents in the sample show preference for OFSP bread. The most important determinants of OFSP bread preference are its sweet taste and soft texture and consumers are willing to pay 0.634 pesewas more for the attribute …
