This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. A cross-sectional survey of American parents was used to evaluate changes to their children’s nutritional patterns. Data was collected through an electronic survey administered through the Qualtrics platform. This paper explores the viability of a for-profit entity being dedicated to addressing food insecurity. Through examination of challenges associated with food insecurity, as well as through review of current, effective for-profit food distributors in the U.S. food system, this paper identifies the need for an alternative approach to resolving food insecurity. The paper posits that such an approach may exist through business model integration in establishing a new, socially responsible for-profit entity.

Quarantining and Dining captures and reflects the many ways in which comfort is provided through food. The project content was collected through food culture research, interviews, and observation and then mediated through Instagram. The Instagram feed has a designed aesthetic architecture and branding system that makes it distinct and identifiable. The Instagram account name can be found @Quarantininganddining.
