East End Eden: The Gentrification Of Portland’S Munjoy Hill, Katharine Kurtz

This thesis explores the gentrification of Munjoy Hill, a neighborhood on the northeast end of Portland, Maine from 1990-2024. Once the industrial hub of the city filled with factories and an industrial shipping port in the late 1800s and early 1900s, Munjoy Hill is now the most desirable neighborhood in the city with expensive, high-end condos, water views, ocean access, and hip restaurants and breweries. I argue that Munjoy Hill’s industrial past and strong connection to the local environment has made it unique, however the recent gentrification also makes Munjoy Hill a place that resembles, gentrified neighborhoods in cities around …

In this project I work to recover influential yet often erased Asian American female immigrant chefs and food authors from the mid-twentieth century to the present, situating their contributions in a deep-rooted tradition of diasporic women who used cooking as a means of communal agency and care. Immigrant Asian cookbook authors and chefs have long faced internal criticisms from their own diasporic communities of either inauthenticity or engaging in “food pornography,” to use writer Frank Chin’s term—a line of criticism that Lisa Lau has elaborated on as “re-Orientalism.”Though these criticisms should not eclipse the works themselves, I discuss and counter …

This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. A cross-sectional survey of American parents was used to evaluate changes to their children’s nutritional patterns. Data was collected through an electronic survey administered through the Qualtrics platform. This paper explores the viability of a for-profit entity being dedicated to addressing food insecurity. Through examination of challenges associated with food insecurity, as well as through review of current, effective for-profit food distributors in the U.S. food system, this paper identifies the need for an alternative approach to resolving food insecurity. The paper posits that such an approach may exist through business model integration in establishing a new, socially responsible for-profit entity.

Quarantining and Dining captures and reflects the many ways in which comfort is provided through food. The project content was collected through food culture research, interviews, and observation and then mediated through Instagram. The Instagram feed has a designed aesthetic architecture and branding system that makes it distinct and identifiable. The Instagram account name can be found @Quarantininganddining.
