The Bridge: Interdisciplinary Perspectives on Legal & Social Policy

In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. This article first reviews the prevalence, disparities, and characteristics of chronic diseases impacting the African American population. Second, it discusses culturally connected practices …

Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

IBS is a chronic disease without a clear etiology. 3-25% of the population of western countries are affected by IBS. Symptoms include diarrhea, abdominal pain, incomplete stool, and constipation. These symptoms interfere with daily life and cause feelings of helplessness or hopelessness. The purpose of this study is to determine what diets IBS patients should adhere to in order to decrease symptoms that no diet change would exacerbate.

The results of animal studies have demonstrated that the consumption of omega-3 fatty acids can slow the growth of cancer xenografts, increase the efficacy of chemotherapy and reduce the side effects of the chemotherapy or of the cancer. Molecular mechanisms postulated to contribute to the multiple benefits of omega-3 fatty acids include 1) suppressing the expression of cyclooxygenase-2 in tumors, thus decreasing proliferation of cancer cells and reducing angiogenesis in the tumor; 2) decreasing the expression of AP-1 and ras, two oncogenes implicated in tumor promotion; 3) inducing differentiation of cancer cells; 4) suppressing nuclear factor--kB activation and bcl-2 expression, …

A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). It is recommended that children and adolescents participate in > 60 minutes of moderate-to-vigorous physical activity (MVPA) per day. Despite the current recommendations and positive health benefits, many children and adolescents still do not engage in regular physical activity (PA).

One challenge for assisting children in becoming more active is sedentary screen-based activities (SBAs), such as watching television (TV), using computers, and playing sedentary video games (VGs), as SBAs may compete with time for being physically active in children. A dietary assessment website for use in the primary healthcare setting has been developed. The website allows patients, referred from their GP, to self-report their dietary intake. Data from the website feeds to a dietitian who develops individualised dietary advice for the patient. The aim of this paper is to describe the usability testing of the dietary assessment website with its potential users. Testing was broken into two phases. Forty-two free-living adults with metabolic syndrome volunteered, 17 completed phase one and 10 completed phase two, with a 64% rate of completion. As part of a larger study developing dietary software, this study aims to evaluate a sample of potential users for their experience and comfort with computers and assess the preferred program design and navigation features for the development of the automated diet history interview. A telephone-based questionnaire and focus groups were employed to evaluate the perceptions, beliefs and attitudes of 37 older adults with type 2 diabetes mellitus. Participants were also shown a range of existing dietary assessment programs and asked to state their perceptions of each. Nutrigenomics is a newly researched area that investigates the interplay between nutrition and genetics. Theoretically, this information could enable registered dietitians to provide personalized, tailored nutrition recommendations unique to a given individual and enable individuals to alleviate future health concerns, such as cancer and heart disease. Given the potential importance of such research, the current study investigated the behavioral response of college students to this information. The purpose of this inquiry was to develop substantive theory that describes the social process that influences the eating behavior of hospitalized older adults. Undernutrition or the inadequate intake of dietary nutrients necessary to maintain health, contributes to negative health outcomes such as increased morbidity and mortality in hospitalized older adults. Inadequate dietary intake is a risk factor for undernutrition. Despite the availability of vast resources within the hospital environment, hospitalized older adults have inadequate dietary intake. Background: Rural residents are increasingly identified as being at greater risk for health disparities. These inequities may be related to health behaviors such as adequate fruits and vegetable consumption. There is little national-level population-based research about the prevalence of fruit and vegetable consumption by US rural population adults. The objective of this study was to examine the prevalence differences between US rural and non-rural adults in consuming at least five daily servings of combined fruits and vegetables.

Vegetarian diets, when well-planned out, have been shown to meet the needs of female athletes. Although the lifestyle provides many benefits, it does not come without risk. Women athletes, in particular, are of the greatest concern. Energy restriction is common among female collegiate athletes. Because athletes are already converting to and practicing a vegetarian lifestyle, it is necessary that athletes and related sport professionals become aware of the risks and benefits of a vegetarian lifestyle.
