Cultural sensitivity and competency are skills needed for agricultural professionals including nutrition and dietetics practitioners. The objective of the current study was to examine the learning transference of cultural sensitivity topics taught in a cultural foods course into case study assessments of a capstone-level course. This study is a cross-sectional, content analysis of cultural sensitivity assessment rubric (CSAR) scores for two case study assessments. The study was conducted in a landgrant, research-intensive university and 55 students (60%) from a capstone-level dietetics course participated. Practical School Nutrition Program May Reduce Food Neophobia, Corinne A. Labyak, Leslie G. Kaplan, Tammie M. Johnson, Meghan Moholland

The study’s purpose was to evaluate an intervention to reduce fruit and vegetable food neophobia and influence attitudes and behaviors among children using a four-month, non-experimental, before-and-after intervention. Participants were children aged 5–11 years in an intervention school (IS) and a control school (CS). Children were offered fruit or vegetable samples weekly utilizing school-specific psychosocial and educational practices to encourage participation. The outcomes of interest included attitudes measured using a written survey-based food neophobia scale (FNS), behavioral observations, and an oral survey. The post-intervention IS FNS score was significantly lower compared to pre-intervention (p = 0.04). Repeated-measures ANOVA revealed a …

A healthy diet consistent with the Dietary Guidelines for Americans (DGA) is associated with reduced risk of obesity and chronic disease. Many people do not consume a healthy diet, especially those with limited resources. The purpose of this research was to study social marketing campaigns and message design factors that promote healthy eating and improved physical activity (PA) behaviors to low-income populations in Louisiana (LA) and to describe the attitudes, beliefs, and barriers of the rural, low-income LA population regarding healthy eating.

Objective: To assess the frequency of severe acute malnutrition (SAM) and to determine the validity of mid-upper arm circumference (MUAC) as compared to weight for length z-score (WLZ-score) as an indicator of the nutritional status in this age group.
Methods: A cross-sectional study, with a purposive sampling was conducted from March 2018 to November 2018 to enroll 540 infants ≤6 months of age from three different sites in Karachi, Pakistan. Medical staff and healthcare providers are always involved in earthquakes; therefore, the aim of this study was to explore the experience of nurses in dealing with critical events and natural disasters. A qualitative study was conducted by semi-structured interviews with 12 medical staff. Data were analyzed by qualitative analysis hermeneutic approach. Four categories were developed as follows: “confusion,” “coercion,” “psychological disturbance,” and “wasting of resources.” The categories led to the development of the main theme of “miss management.” Earthquakes are considered serious challenges for nurses and health professionals involved in such disasters. The aim of this study is to ascertain if the living environment (type of residential neighborhood and number of household members) will elucidate differences in obesity risk reduction behaviors and self-efficacy in Chinese Americans. A cross-sectional survey design was used to recruit participants from Los Angeles County and New York City metropolitan areas. A total of 650 adults were recruited from diverse socioeconomic backgrounds. Descriptive statistics were measured for 19 behaviors reflecting food intake and portion size control and items measuring self-efficacy and attitudes. In 2010, the United States Department of Agriculture (USDA) reported that 23.5 million people in the United States live in food deserts. As defined by the USDA, a “food desert” is a neighborhood that lacks healthy food sources. State licensing of medical professions has occurred for over a century. Recently, these licensure statutes have been subject to First Amendment challenges, alleging occupational licensure impermissibly restricts freedom of speech. This Comment addresses these free speech challenges, arguing occupational licensure statutes, at least for medical professions, only incidentally impacts free speech—if at all—by permissibly regulating medical professional conduct necessarily requiring speech. Within, the authors ultimately describe, demonstrate, and recommend a legal framework, the other factor/personal nexus approach. Pregnancies affected by obesity are at high risk for developing metabolic complications with oxidative stress and adipocyte dysfunction contributing to the underlying pathologies. Few studies have examined the role of dietary interventions, especially those involving antioxidants including polyphenolic flavonoids found in fruits and vegetables on these pathologies in high-risk pregnant women. We conducted an 18 gestation-week randomized controlled trial to examine the effects of a dietary intervention comprising of whole blueberries and soluble fiber vs. control (standard prenatal care) on biomarkers of oxidative stress/antioxidant status and adipocyte and hormonal functions in pregnant women with obesity (n = 34). Both TRE and SIT are easily implemented lifestyle habits that have been shown to present significant brain challenges. As the prevalence of serious mental illness becomes more widespread annually, eating habits have become more recognized as a modifiable risk factor on worsening mental health symptoms (Godos et al., 2020). Eating routines are food-based activities that occur daily, weekly, monthly, and across the lifespan (Green et al., 2021). Food-based activities include obtaining food, preparing food, eating food, and more. Challenges with eating routines are prevalent in individuals in the earlier stages of mental illness (Teasdale et al., 2020). This poster describes the pathophysiology, symptoms, implications for care, and treatment of osteoporosis for advanced practice RNs. The research was conducted within health-related databases. The literature review narrowed the search to only include the pathophysiology, interventions, and care for osteoporosis. Literature was restricted to within the past five years. The research showed that osteoporosis reduces mineral density in bones and can be adequately treated within a short amount of time. It is important for nurses and advanced practice providers to be aware of current guidelines, screenings, and treatments for osteoporosis.

INTRODUCTION: We recently described the sulfur microbial diet, a pattern of intake associated with increased gut sulfur-metabolizing bacteria and incidence of distal colorectal cancer (CRC). We assessed whether this risk differed by CRC molecular subtypes or presence of intratumoral microbes involved in CRC pathogenesis (Fusobacterium nucleatum and Bifidobacterium spp.).

METHODS: We performed Cox proportional hazards modeling to examine the association between the sulfur microbial diet and incidence of overall and distal CRC by molecular and microbial subtype in the Health Professionals Follow-Up Study (1986-2012).

Cheesemaking is a process susceptible to defects caused by microbes not purposefully added by the manufacturer. While these bacteria are not a health concern, they can cause problems such as producing carbon dioxide inside the cheese. This can cause slits and cracks in cheese making cheese unsuitable for slicing. One such bacteria identified by cheese researchers at Utah State University and Weber State University is Paucilactobacillus wasatchensis. Moderate to high intensity endurance exercise is a known cause of exercise-induced gastrointestinal syndrome, a condition often associated with intestinal complaints such as discomfort, cramps, and diarrhea. Oftentimes, elevated intestinal inflammation and permeability (a “leaky gut”) are also observed. Previous research has shown that flavonoids, natural compounds found in many fruits and vegetables, may mitigate these exercise-induced effects. This project was funded by BUILD Dairy to test the efficacy of using next generation sequencing to study Cheddar cheese microbiomes. The 15 different cheese samples used in this study were purchased in the retail market from various manufacturers and different origins of manufacture. Partially hydrogenated oils (PHOs) provide desired texture, stability, and extended shelf life in food products. These types of lipids have been commonly used in food industry. However, the Food and Drug Administration (FDA) decided to remove generally recognized as safe (GRAS) status of PHOs in 2015 due to the association between PHOs and coronary heart disease (CHD), type 2 diabetes and other metabolic diseases. Food spoilage and contamination remains a common problem within the food industry. Furthermore, the continued change of consumer demand and perspective on food quality and products has led the food industry and researchers to find new methods of food preservation. Many of these new methods hope to use non-thermal processes since thermal processes tend to decrease the overall quality of the final product.
