A “License To Kale”—Free Speech Challenges To Occupational Licensing Of Nutrition And Dietetics, Taylor J. Newman, Angela E. Surrett

State licensing of medical professions has occurred for over a century. Recently, these licensure statutes have been subject to First Amendment challenges, alleging occupational licensure impermissibly restricts freedom of speech. This Comment addresses these free speech challenges, arguing occupational licensure statutes, at least for medical professions, only incidentally impacts free speech—if at all—by permissibly regulating medical professional conduct necessarily requiring speech. Within, the authors ultimately describe, demonstrate, and recommend a legal framework, the other factor/personal nexus approach. Due to the diversity within the healthcare system, it is important to promote cultural competency in healthcare providers. The integration of pedagogical approaches to cultural competency into health-related programs cannot be understated. Therefore, the purpose of this study was to develop an instrument to examine the student engagement in cultural competency-related activities within health-related degree programs and determine the relationship between engagement and cultural competency. Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

In response to the COVID-19 pandemic, collaboration among faculty in the Department of Dietetics and Human Nutrition at the University of Kentucky yielded two, four-week virtual experiential learning opportunities with Cooperative Extension for 19 dietetic interns. Remote experiences focused on development of new programming regarding the role of nutrition in the prevention/management of the most prevalent chronic diseases affecting Kentuckians and translating an existing social marketing program that promotes quality family time through preparation of nutritious, affordable home-cooked meals. Purpose: The purpose of this study was to describe student perceptions of their learning following experiential learning (EL) activities in a foodservice management course. Nutrition and dietetics education programs have a range of competencies students must learn and demonstrate throughout their curriculum. Learning styles differ amongst students and research has demonstrated they prefer to engage in EL (direct experience) activities to develop their knowledge. Aim: The aim of this study was to explore the use and future potential of realist approaches to research in nutrition and dietetics. Methods: A targeted literature review was used to search key journals (n = 7) in nutrition and dietetics to identify existing research using a realist approach. A narrative synthesis was conducted to explore findings in relation to the research aim. Results: Nine research papers (four realist evaluations, five realist reviews) describing seven nutrition interventions were found, which revealed the application of realist research in nutrition and dietetics has focused on public health interventions.
