Durante la Pandemia COVID-19 en Argentina, la inflación aumentó, y el desempleo aumentó especialmente entre los trabajadores informales, lo que dejó a muchos de ellos dependientes de los comedores comunitarios y de la ayuda nutricional para alimentar a sus familias. La violencia doméstica y la pobreza aumentaron aún más. Introduction

Obesity disproportionately affects rural communities, and Appalachia has some of the highest obesity rates in the nation. Successful policy, systems, and environmental (PSE) interventions to reduce obesity must reflect the circumstances of the population. We used a health equity lens to identify barriers and facilitators for healthy food access in Martin County, Kentucky, to design interventions responsive to social, cultural, and historical contexts.

Methods

We conducted 5 focus groups in Martin County, Kentucky, in fall 2019 to obtain perspectives on the local food system and gauge acceptability of PSE interventions. We used grounded theory to identify perceived barriers and …

This paper analyzes the effects of the hegemonic food system on low income consumers in Salta, Argentina. Results from previous literature indicate a relationship between the dominant agroindustrial model in Argentina and the concentration of power in the food production system. This paper seeks to contextualize the reports of malnutrition in Salta, a province in northwest Argentina, within larger social, cultural, and nutritional trends. Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. This thesis contributes to the literature on sustainable consumption by using scenario analysis to evaluate the environmental and health costs of the U.S. diet relative to the French, Japanese, Mediterranean, and Nordic diets, identified in the literature as healthier diets. As a first step in estimating environmental costs, the energy efficiencies of each diet are calculated by decomposing each of the diets into their respective components. Then, the dietary efficiencies are translated into CO₂ emissions. This study examines the protein deficiency in Tanzania from a livelihood, decision based perspective, by looking at household decisions concerning meat protein consumption and production, in the Bangatan village area. More specifically it examines decisions regarding selling livestock rather than consuming it, the purpose of this cash generation, and globalization’s effects on these livelihood decisions. This study aimed to discover how external organizations, teachers, and parents impact primary student health in rural and urban areas in the Chiriquí Province of Panama. This paper aims to demonstrate my independent study project internship at the Mullumbimby Community Garden (MCG), an interactive learning site for the citizens of Byron Shire. As an intern I spent 152.5 hours from October 29^th to November 23^rd planting, planning projects, attending meetings, and helping to educate about the importance of sustainable food production. More specifically, I focused on the development of the Children’s Garden, building vertical garden beds, planting the sensory garden, attending meetings, and helping to design and analyze costs for new structures to be implemented in the near future.

I studied the traditional wild protein collection techniques of the Naso people in the Syellick community Naso Territory, Bocas del Toro for 15 days during the end of November. The goal of this research was to record the various hunting techniques used by the Naso and determine whether those practices will disappear after the passing of this generation. I used informal and unstructured interviews as well as participant, objective, and passive observation (Master of Business Administration).

The purpose of this research was to explore the current efforts using spirulina as a malnutrition treatment in Kenya. There are currently five spirulina cultivation sites that growing spirulina, four of which are located in the Nyanza Province. Their production and scope of advocacy efforts are limited. Some of the cultivation sites have a better quality control measures and strategic plan in place for expanding cultivation. Significant efforts need to be made to improve the scope of production and create links with nutrition experts in other non-governmental organizations and at the national level.
