Mozzarella cheese is expected to melt, stretch, release free oil and exhibit browning and blistering when baked on pizza. This research aimed to investigate the effects of different starter cultures (based on lactose and galactose utilizing ability) and calcium levels on the functionality of Mozzarella cheese when baked on pizza. Four combinations of starter cultures using S. thermophilus (STI 06)-control, Lac+ Gal+ L. helveticus (LH 32), and Lac- Gal+ adjunct culture L. helveticus (LH 7995) were used to make the cheese samples. Background: Calcium intake during early adolescence falls short of requirements for maximum bone accretion. Parents and the home food environment potentially influence children’s calcium intakes. This study aimed to quantify parental psychosocial factors (PSF) predicting calcium intakes of Asian, Hispanic, and non-Hispanic white (NHW) early adolescent children from a parental perspective.

Methods: This was a cross-sectional study involving the administration of a validated calcium-specific food frequency questionnaire to a convenience sample of children aged 10–13 years and the primary individual responsible for food acquisition in the child’s household. Captive insectivores may consume invertebrates as all, or part of their overall diet. The challenge with feeding captive insectivores involves the limited number of invertebrate species that are commercially available, and the lack of key nutrients provided by these insects. Among these insects, a naturally occurring low concentration of calcium and an inverse calcium to phosphorus ratio may put insectivores at the risk of developing hypocalcemia. Recent studies reported a positive relationship between the two disorders that may in fact be causal. Although the link between obesity and asthma has become widely recognized, the underlying pathophysiological connection is not elucidated. Calcium (Ca) is essential for multiple functions within the body including skeletal health. The level of Ca in the serum is tightly regulated. During periods of habitual low Ca intake, the body senses a decrease in serum Ca and increases renal conversion of 25 hydroxyvitamin D (25(OH)D) to 1,25 dihydroxyvitamin D (1,25(OH)2D). 1,25(OH)2D acts through the vitamin D receptor (VDR) to increase intestinal Ca absorption, renal Ca reabsorption and skeletal Ca resorption. Recent secondary analyses have associated supplemental calcium use with increased risk for myocardial infarction and cardiovascular-related death in healthy, older adults. Subsequent concern over the safety of calcium supplements has spurred a calcium controversy, because calcium is a shortfall essential nutrient that is critical for bone health and a mainstay of osteoporosis prevention and treatment. By identifying the relationship between calcium location in the plant cell and nutrient bioavailability, the plant characteristics leading to maximal calcium absorption by humans can be identified. Knowledge of plant cellular and molecular targets controlling calcium location in plants is emerging. These insights should allow for better strategies for increasing the nutritional content of foods. In particular, the use of preparation-free elemental imaging technologies such as synchrotron X-ray fluorescence (SXRF) microscopy in plant biology may allow researchers to understand the relationship between subcellular location and nutrient bioavailability. In 2008, not only are more than 0.6 million people dying of heart disease, but it is estimated that almost 1 in every 4 Americans with heart disease die. Consuming excess salt has been associated with increasing risk of high blood pressure, heart attacks, and stroke. Americans consume 40% more salt than the USDA recommended level -- 1500 mg. Dairy nutrients, such as calcium, are particularly important in adolescence, a critical time for growth and development. There are limited Australian data following individuals through adolescence, evaluating changes in dairy nutrient and dairy product consumption. We used a validated food frequency questionnaire to investigate consumption in adolescents participating in both the 14 and 17 year follow-ups of the Western Australian Pregnancy Cohort (Raine) Study. Most adolescents did not reach age and gender specific recommended daily intakes for calcium or magnesium at 14 years, and this decreased as they aged to 17 years (from 33.0% to 29.2% meeting for calcium, P < 0.05, and from 33.6% to 20.5% meeting for magnesium, P < 0.01). Mean intakes of calcium, potassium, riboflavin and vitamin A also decreased with age (P < 0.01). Mean dairy intake decreased from 536 ± 343 g/day to 464 ± 339 g/day (P < 0.01), due mostly to a decrease in regular milk, although flavoured milk consumption increased in boys. Cheese and butter were the only products to show a significantly increased consumption over the period. Girls decreased from 2.2 to 1.9 serves/day of dairy, while boys remained relatively steady at 2.9 to 2.8 serves/day. Our findings suggest that dairy product consumption decreases over adolescence. This may have implications for bone mass, development and later health.

Objective: The aim of this study is to examine the relationship between vitamin D and calcium intake and obesity in a population of young adolescents who participated in a Vitamin D and Sunlight Exposure study in Pittsburgh, PA.

Participants: 252 healthy 6 to 14.9 year old young adolescents (54% male, 69% African American) were recruited between June 2006 and December 2009.

Main outcome measures: Weight status, BMI, vitamin D intake, calcium intake, vitamin D and calcium rich food intake.

Results: A significant difference by race was observed with 30.1% of African Americans and 8.5% of Caucasians being obese (P<0.01). No difference was found by gender. Median (25%, 75%) vitamin D intake in the total population was 254.9 IU (146.8, 407.3) which is below the level recommended by the Institute of Medicine. Median calcium intake in the total population was 1193.6 mg (752.8, 1161.1) which met recommended guidelines. Median vitamin D intake differed by weight status (normal, overweight, obese) in the total population (259.5 IU, 325.2 IU and 181.9 IU, respectively; P=0.015). A similar pattern was observed for calcium (1193.4 mg, 1416.3 mg and 911.6 mg, respectively; P=0.016). No correlation was found between vitamin D or calcium intake and BMI in the total population or by race and gender.

Little information is available related to adolescent calcium intake and relationships with injuries they might suffer from sport participation. To determine calcium intake of high school athletes, to assess their self reported injury rates, and to examine the relationship between the two over a 12 month period of time. Participants received a questionnaire at their school and completed it anywhere they found convenient. Cardiovascular disease (CVD) is a major health risk in the United States. Major indicators of CVD risk include obesity, blood lipids, and blood pressure. Modifiable risk factors associated with CVD include body composition (body mass index and waist circumference), serum lipids, and blood pressure. Data suggest calcium intake may play a role in regulation of weight, serum lipids, and blood pressure. The purpose of this study was to assess relationships of dietary calcium intake with weight status, and cardiovascular disease risks in African American population participating in the Jackson Heart Study.

Experiment A explored the influence of sodium on direct acid, nonfat Mozzarella cheese. Cheeses with differing salt levels were obtained by varying dry salt applications (none, 0.5%, and 1.0% NaCl w/w) and hot brine stretching (0%, 5%, and 10% NaCl wt/v). Salt application and salt content influenced cheese moisture, meltability, expressible serum, micro- and ultra-structure, and color. Moisture was highest when cheese was salted before stretching (P = 0.03). Melt was lowest in cheeses that were unsalted (P = 0.05). Cheeses stretched in salt brine had < 1% of the amount of expressible serum found in unsalted cheese (P < 0.0001). Unsalted cheeses had a more open structure with pockets of serum distributed throughout the protein matrix giving it an opaque, white appearance. Salted cheeses had a more homogeneous protein matrix lacking light scattering surfaces, resulting in a translucent cheese. Neither salt concentration nor method of salting affected the calcium content of the cheeses (P > 0.05).

Achieving and maintaining maximal peak bone mass is critical to the prevention of osteoporosis. Adequate calcium intake during youth is a major aspect of proper bone mass development. Because of the importance of calcium, a food frequency questionnaire (FFQ) that estimates calcium intake of 10- to 18-year-old Asian, Hispanic, and white youth living in the western United States was developed. The purpose of this study was to determine if there was a significant difference in weight loss, body fat, waist circumference, or diet quality among participants taking calcium or placebo supplements in a lifestyle intervention program. Three participants ages 52-55 completed the 14 week program. Two participants took 1,000 milligrams calcium while one participant took a placebo. The effects of altering pH and calcium level during whey protein extrusion were assessed by measuring the protein solubility and WHC of the textured whey protein (TWP). TWP samples were produced by extruding dry mixtures of 2/3 WPC 80 (80% protein) and 1/3 cornstarch using screw speed of 200 rpms, feed rate of 23 g/min, water flow rate of 11 g/min, and product temperature of 150°C. Milk coagulation consists of four overlapping phases: enzymic hydrolysis, micelle aggregation, gelation and syneresis. The objectives of this study were to determine the effects of added CaCl2 on milk coagulation and the relationship between enzymic hydrolysis and micelle aggregation with substrate at different concentrations.

Addition of CaCl2 to milk is widely practiced in industry and in laboratories. This changes calcium concentration, pH and ionic strength. It is impossible to separate these three variables and investigate each one independently.

The effects of dietary calcium and phosphorus levels on audiogenic seizure susceptibility and brain neurotransmitter were investigated in magnesium deficient rats. For 17 days, male weanling rats were fed magnesium deficient diets which also contained deficient (-), adequate (=}, and excess (+) amounts of calcium and/or phosphorus. Reduction of seizure incidence was seen in low calcium and/or low phosphorus diets. High calcium, and high calcium in combination with high phosphorus increased the severity of seizures. Dietary calcium has been classified as one of the minerals frequently limiting in the American diet (FAO, 1962) . Bone demineralization has been observed as a result of calcium deficient diets (Salomon et al., 1972), partial gastrectomies (Eddy, 1971) and inadequate hormonal balance (Albright et al., 1948). Although bone demineralization, or osteoporosis, has been attributed to many factors, the interrelationship of gastric acidity and the utilization of dietary calcium may be a key to the etiology of osteoporosis.

WHEN this talk on drought feeding of sheep was suggested conditions were very serious over large tracts of pastoral country.

Many stations had not received a worthwhile rain for over 12 months and it appeared that grazing animals would have to be fed if they were to survive.

Requests have been received for advice on the cheapest way to keep sheep alive. Drought feeding in any form is a gamble. There is always the risk that the stock will eventually die despite the consumption of much costly feed.

The present study was undertaken to add appreciably to the data available on the metabolism of calcium, phosphorus, iron, copper, and nitrogen of young women on their customary self-chosen diets. It was planned to use the figures for the retentions or losses of these dietary essentials which occurred at various levels of intake to determine the requirement of the subjects and to evaluate the adequacy of present adult dietary standards for young women. 1. The nitrogen, calcium, and phosphorus content of 127 newly hatched chicks was determined. 2. Thirty newly hatched chicks were fed accurately known amounts of a good chick mash for 60 days. At the end of the period nitrogen, calcium, phosphorus, and fat were determined for each chick. 3. By means of the comparative slaughter test the retention of nitrogen was found to be 37.8 per cent, calcium 43.4 per cent, and phosphorus 27.3 per cent of the respective elements fed. 4.
