In this talk we discuss important factors for increased healthspan. Much of the discussion will focus on strength training and cardiovascular training. In particular we outline optimal ways to increase strength and VO2 max, which are the largest contributors to increased healthspan. Introduction: Assessing nutrition knowledge in four-year-olds, a developmental stage marked by limited attention spans and varying comprehension abilities, is challenging with traditional methods. A reliable test is pivotal for establishing a foundation for future health interventions. We evaluated a 13-question nutrition and healthy habits test in Pre-K4 children to assess reliability and sensitivity to detect differences.
Methods: Calculations included Cronbach's alpha, kappa coefficient, McNemar analysis by item, and Bland-Altman plots for test-retest differences. Mixed model regression assessed the questionnaire's sensitivity by sex and association with age. Background: Cancer is one of the most common destructive diseases and the second leading cause of death in humans. Among cancer, cervical cancer is the second most common malignancy among women globally. Thus, there is a continuous need to search for chemotherapeutic chemicals or naturally occurring drugs to resolve this global health problem. Piperine (1-piperoylpeperdine) is present in the fruits of black pepper (Piper nigrum Linn.) and long pepper (Piper longum Linn.). In a previous study we reported that 25% of college students had a family history of type 2 diabetes (T2D), and 39% of hypertension. Interestingly, between 17 to 47% reported not knowing about T2D or hypertension, neither the existing obesity-metabolic problems (ESFUERSO study). The COVID-19 pandemic forced confinement and modifications in food intake, physical activity, and psychological stress. This study aimed to analyze if the immune Ig-G anti-RBD (protective epitope in S protein) response associated with type of vaccination, metabolic risk, perceived stress, and history of COVID-19 contacts.

The symbiotic harboring of gut microorganisms within the gastrointestinal tract has a profound influence on host physiology, well-being, and disease pathology. More specifically, the gut bacteria are able to interact with dietary components from foods chosen by the host and consequently relay their beneficial or precarious effects locally and systemically. The gut bacteria have the capacity to maintain a healthy gut microbiome or perpetuate intestinal imbalance, known as gut dysbiosis. The purpose of the current study was to determine the appropriate adjustments needed to transform an ordinary muffin recipe into gluten-free (GF) muffins made with flaxseed meal (FM). Two batches of muffins were made, but all-purpose flour was replaced with FM, rice flour (RF), and xanthan gum in the experimental recipe. Participants conducted a sensory evaluation on both muffins. The GF muffin tasted similar to the control (C) but did not align with the C texture. DIETARY DEAL is an EU-project led by MTU, tasked to develop an open-source dietary assessment tool (DAT) to harmonise collection and analysis of dietary data across Europe(1). A key component of all DATs is integrated food composition databases (FCD) containing energy and nutrient information (per 100g food) for translation of food intake data into nutrient estimates.
This preliminary research aimed to identify and quantify available FCD in European countries for inclusion in the new DAT.

Dietary fibre (DF) plays a major role in normal bowel function and low intakes have been reported globally for all population groups including teenagers. The aim of this study was to use new data from the National Teens’ Food Survey II (2019-20) to estimate intake and sources of DF for teenagers in Ireland.
Dietary intake data were collected using a 4d weighed food-diary and DF intake was estimated using UK and Irish food composition data. Objective: The objective of the project is to see the effects that non-dairy milk substitutes have on muffins that are made from a mix.
Methods: Twenty judges completed a sensory scorecard evaluation to evaluate various aspects of four different muffins prepared with whole milk as the control, as well as almond milk, water, and soymilk. Topics discussed were El Salvador's food culture, focusing on the history, staple foods, food medicine, dietetics, and how the country has been impacted by the expansion of globalization. Background: Rates of depression have been rising steadily over the last several decades with more than 264 million people affected, making it one of the top three burdens globally. The pandemic has brought on a greater risk of depression. Forty-two percent of individuals surveyed in December 2020 by the US Census Bureau reported depressive symptoms. Many factors, including poor diet quality, play a role in the development of depression during traumatic events like the pandemic.
