Although the older adult population continues to increase, ageism remains an issue in the healthcare system and is prevalent among nutrition-related professionals. The aim of our study is to is determine the effectiveness of an educational intervention to reduce ageism among pre-healthcare professionals including Nutrition major students. Undergraduate students enrolled in an entry-level nutrition class were recruited and randomized into an intervention (INT) group (n=30) and a control (CON) group (n=29). Fruit and vegetable intake for children in the United States is low, which puts them at risk for poor health in the future. The National School Lunch Program meal pattern and nutrition standards for participating schools include increased fruits and vegetables, compared to previous standards. Using a pretest-posttest design, this study examined the effect of a fruit and vegetable intervention on fruit and vegetable food selection and consumption in a rural, Appalachian Mississippi elementary school. Results: Survey responses indicated that the majority of directors rated themselves as skilled at several key areas of best practices, especially in creating a clean, pleasant place for the children to eat and in using program nutrition requirements to ensure that food and nutrition needs of the children are met. Analysis of the center menus proved the latter to be true as the recommendations for Vitamin A, Vitamin C, calcium, and iron were either met or exceeded for females 4-8 years-old, and males 4-8 years-old. Mg supplementation can maximize energy stores for exercise, decrease indicators of inflammation, and increase the rate of lactate clearance. While these functions of Mg can benefit exercise capabilities, research is lacking on their effects on specific performance parameters. The purpose of this study was to determine if Mg supplementation would increase performance parameters in NCAA Division-I football players. This study examined the differences in parent/caretaker body mass index (BMI) and parent/caretaker-reported child overweight/obesity by food security status in a rural, Appalachian, Mississippi community, as well as the relationship of parent/caretaker BMI and parent/caretaker-reported child overweight/obesity to food security status. A cross-sectional survey of elementary school parents/caretakers recruited at three elementary schools in an economically-distressed Appalachian, Mississippi county was conducted. This quantitative research study explores the relationship between dietary patterns, hiker demographics, and total miles hiked during a backpacking trip on the Pacific Crest Trail (PCT). Long hiking distances, low rate of thru-hike completion, consumption of processed and ready to eat foods, weight loss, and large time and monetary strains are comthemes accepted anecdotally by the backpacking population11. However, these themes have yet to be adequately researched and validated for long distance backpackers and PCT backpackers specifically. PURPOSE: To assess the relationship of high school (HS) and collegiate (OM) household food security status (FSS) to current food consumption behaviors in a sample of NCAA Division 1 male, collegiate athletes ≥18 years of age (y). METHODS: A cross-sectional survey of NCAA athletes from a Southeastern Conference (SEC) university was approved by the Institutional Review Board and conducted during August-September, 2016. The purpose of this study was to explore potential factors that could be associated with increased stress fracture development in division one collegiate cross country runners. Participants for this study consisted of 42 collegiate cross country runners at the University of Mississippi. A nutritional assessment consisting of a 3-day food record and measurements of whole body, lumbar spine and hip bone mineral densities using a Dual-Energy X-ray Absorptiometry (DXA) was conducted on each athlete. The Relationship Of Parental Barriers To Parents Feeding Their Children Health-Promoting, Functional Foods, Jordyn Michelle Thornton

Studies have discovered barriers that prevent parents from feeding children nutritiously. There is sparse information about whether parents intentionally feed their children functional foods, raising the question of whether there are barriers that inhibit parents when feeding their children nutritiously. This study of parents in two Mississippi school districts in 2015 ( n=193) examined the barriers parents face to consuming health-promoting, functional foods as well as the relation of these barriers to feeding their children functional foods. The age group 45–54 was less likely to perceive taste as a barrier (p<.05) to consuming functional foods, while individuals with some college education (p<.05) and individuals with an associate degree (p<.05) were more likely to perceive taste as a barrier. Additionally, the age group 55+ was less likely to perceive availability of food as a barrier (p<.01). Lastly, the females were more likely than males to perceive knowledge as a barrier ; lack of knowledge of foods’ health benefits was significant for the female gender (p<.05) to consuming functional foods. This study also found a significant relationship between parent’s lack of knowledge of health-promoting foods when feeding their children functional foods for specific health benefits. The findings concluded that parents who perceived lack of knowledge as a barrier to consuming functional foods, were more likely to feed their children foods with health benefits for cancer prevention (p<.01), heart health ( p<.05), and other health benefits (p<.01), while not for bone, digestive, and weight health. Further investigation shothat foods beneficial for cancer prevention, heart health, and other health benefits are among food items incorporated in children’s diets through foods such as fruits, vegetables, fortified foods/beverages, etc.

Methods: Surveys were completed by 214 parents (92% female, 88% African American) of children in grades K-2nd from three schools in the Mississippi Delta region.
