Ever since the eighteenth century, experts have tried to tell farmers how to farm. The agricultural enlightenment in Europe marked the beginning of a long arc of new experts aiming to change agricultural knowledge and practice. This dissertation analyzes the pivotal period in the late nineteenth and early twentieth century in Germany and the United States when scientists, improvers, and market agents began to develop comprehensive ways to communicate agricultural innovation to farmers. In a functional approach to analyzing the negotiation of agricultural knowledge through its communication in things, words, and practices, this dissertation argues that the process of change …

International Development, Community and Environment (IDCE)

As one of the most densely populated regions on the continent of Africa, the Albertine Rift (consisting of parts of Rwanda, Uganda, and the eastern DRC) faces ongoing problems providing enough food for its people through crop production, livestock husbandry, and other forms of food production. Even more troubling for the future is that anthropogenic climate change is expected to significantly exacerbate food insecurity. This paper addresses one central question: how will climate change impact food security in the Albertine Rift? The skin color of muscadine grapes (Vitis rotundifolia) is typically classified as black or bronze. A glutathione S-transferase, VrunGST4, has been identified as a candidate gene for berry skin color in muscadine grapes. A molecular marker was developed within VrunGST4 to distinguish between muscadine genotypes (cultivars and selections) with bronze (T:T), heterozygote black (C:T), and homozygote black (C:C) berries. The objectives of this study were to determine whether there was a correlation between berry skin color and total anthocyanin content and to calculate additive and dominance effects of VrunGST4 in determining total anthocyanins in the berries of two biparental F1 …

The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. The aim of this study was to assess how the DYD program impacted users’ food accessibility and how the program could be improved for the future. Sulfur dioxide is an inorganic compound (IC) and air pollutant that causes health risks in humans. The buildup of sulfur dioxide (SO2) in enclosed indoor spaces is, therefore, a concern to human health, especially since the average person spends 90% of his/her time indoors. This study focused on decreasing SO2 concentration in a cost-effective and simple way—by using botanical biofiltration, or the uptake of pollutants by plants. Research in biofiltration has focused mostly on the remediation of volatile organic compounds (VOC). Globally, rice producers are faced with the temporal problem of deciding the optimal time to harvest rice. When harvested, paddy rice is typically at a harvest moisture content (HMC) between 15% and 22% and subsequently dried by the mill to a moisture content (MC) of 12.5%. Riceland Foods Inc., the largest miller of rice in the world, uses a stair-step pricing model to charge farmers to dry, which can complicate the timing of harvest as producers try to balance the tradeoff of minimizing drying costs by waiting to harvest at lower HMC vs. maintaining higher rice quality typically observed when …

Formation of harmful microbes and their associated mycotoxins on rough rice during storage presents negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Freshly-harvested long-grain, hybrid, rough rice (XL 745) with initial moisture content (IMC) of 18.4% wet basis (w.b.) was used. Taking advantage of inherent natural systems, aquaponic practices hold the potential to serve as an educational, sustainable, and profitable hobby for home gardeners facing common constraints such as temperature, space, and pests. The goal of this research was to assess the feasibility of implementing a small scale (4,542-liter) home -based aquaponic system in a small (48.768 square meter) greenhouse to produce fresh produce and fish protein. This thesis provides a culturally-comprehensive review of the plants utilized for food in the Bitterroot Salish tribe of northwestern Montana. As part of the larger Confederated Salish and Kootenai Tribes (CS&KT) of the Flathead Indian Reservation, the Bitterroot Salish historically utilized hundreds of plants for food, medicine and hygiene. This thesis aims to highlight food plants and their important cultural components. The information herein is a combination of history, ethnography, linguistics, ethnobotany, and first-hand experience with the current Salish community to provide a holistic framework of understanding traditional food plants today. Polyunsaturated fatty acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are major maternal dietary supplements due to their positive benefits on neurological tissue growth during the first 12 weeks of gestation. Previous studies show that EPA and DHA inhibit muscle formation but promote adipogenesis. However, no research has addressed the question whether high intake of EPA and DHA affects brown fat development during gestation.
