Ruminant production systems are major contributors to greenhouse gases emissions, with animal feeding practices being the main cause for methane and nitrous oxide’s release. Although feeding animals forages has been proven to be more sustainable, traditional ryegrass monocultures still require a lot of input (e.g., fertilisers and pesticides). Multi-species swards, consisting of different swards, such as grasses, forage legumes and herbs, need less management and fertiliser, produce more dry matter, and also add a variety of phytochemicals into the animal diet. In particular, polyphenols have been associated with a positive impact on animal health and productivity. However, data on the …

Evaluation Of Wheat-Specific Peptide Targets For Use In The Development Of Elisa And Mass Spectrometry-Based Detection Methods, Jessica Humphrey Nov 2022

Evaluation Of Wheat-Specific Peptide Targets For Use In The Development Of Elisa And Mass Spectrometry-Based Detection Methods, Jessica Humphrey

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Individuals with IgE-mediated wheat allergy and celiac disease must avoid the consumption of wheat. Those with celiac disease must also avoid rye and barley in addition to wheat as these make up the gluten-containing grains. To ensure products are accurately labeled, ELISA methods may be used to monitor compliance with food allergen and gluten-free regulations. Currently, available ELISA methods for wheat detection utilize monoclonal antibodies that target peptides from the gluten fraction of proteins, and therefore, also detect rye and barley. Limitations such as differing antibody reactivity and unequal gluten content among wheat, rye, and barley have led to inconsistent …

Effect Of Drying Method On Biochemical Composition And Nutritional Quality Of Sandfish (Scincus Scincus) Consumed In South-East Algeria, Ikram Toumi, Ifriqya Medila, Hamdi Bendif Sep 2022

Effect Of Drying Method On Biochemical Composition And Nutritional Quality Of Sandfish (Scincus Scincus) Consumed In South-East Algeria, Ikram Toumi, Ifriqya Medila, Hamdi Bendif

Journal of Bioresource Management

Sandfish is highly consumed in South-East of Algeria for its gustative and nutritional qualities. The aim of this study was to evaluate the influence of drying methods on fatty acids and amino acids sandfish quality. Biochemical analyzes were performed using the analytical methods adopted by the Association of Official Analytical Chemists (AOAC) method. The fatty acid composition was evaluated using the gas chromatography and the high-performance liquid chromatography (HPLC) method was used for the amino acids analysis. Significant differences were found in the moisture, ash, protein and fat content. Chromatogram analysis revealed the existence of nine (9) fatty acids the …

Potential Psychoactive Effects Of Microalgal Bioactive Compounds For The Case Of Sleep And Mood Regulation: Opportunities And Challenges, Bozena Mccarthy, Graham O’Neill Dr, Nissreen Abu-Ghannam Prof. Jul 2022

Sleep deficiency is now considered an emerging global epidemic associated with many serious health problems, and a major cause of financial and social burdens. Sleep and mental health are closely connected, further exacerbating the negative impact of sleep deficiency on overall health and well-being. A major drawback of conventional treatments is the wide range of undesirable side-effects typically associated with benzodiazepines and antidepressants, which can be more debilitating than the initial disorder. It is therefore valuable to explore the efficiency of other remedies for complementarity and synergism with existing conventional treatments, leading to possible reduction in undesirable side-effects. This review …

Camp: Children’S Acceptance Of Muffins With Different Proteins, Amber Knoernschild May 2022

Camp: Children’S Acceptance Of Muffins With Different Proteins, Amber Knoernschild

Human Nutrition and Hospitality Management Undergraduate Honors Theses

In 2019, around 40% of school-aged children in Arkansas were classified as overweight (~17%) and obese (~23%), according to BMI data collected. Children with obesity have an increased risk of developing type 2 diabetes, hypertension, and dyslipidemia. Unhealthy eating habits, such as skipping breakfast, have been strongly associated with overeating, weight gain and obesity. Breakfast is a key component of a healthy diet and can positively impact children’s health and well-being. However, there has been a steady decline in breakfast consumption in US children over the past 40 years. Specifically, breakfast consumption declined among 8–10-yearold children by 9% and adolescents …

Characterization Of Gangliosides And Fatty Acids In Extracellular Vesicles From Human Milk, Aliya Amin May 2022

Characterization Of Gangliosides And Fatty Acids In Extracellular Vesicles From Human Milk, Aliya Amin

Food Science (MS) Theses

Extracellular vesicles (EVs) are bioactive components of human milk that may impact functionality to regulate growth, cognitive development, metabolism, and immunity in newborns. The biogenesis of EVs and the mechanism by which EVs elicit biologic effects in vivo have not been characterized entirely. Gangliosides and fatty acids are integral in the formation, release, stability, and functionalities of EVs. Presumably, EV function is related to EV composition and lipids in EVs influence the bioavailability of EV cargo and downstream functions of EVs. The objective of this research was to characterize the fatty acid and ganglioside composition of EVs in human milk. …

Evaluation Of Artificial Sweeteners: Their Effects On Ice Cream Properties And Public Acceptance, Gwyneth Hadasa Apr 2022

Evaluation Of Artificial Sweeteners: Their Effects On Ice Cream Properties And Public Acceptance, Gwyneth Hadasa

Honors Theses

Background: The public is becoming more health conscious while sugar consumption, particularly frozen desserts, remains high. An evaluation of sugar alternatives that can maintain integrity of a product while providing fewer deleterious effects is necessary.

Objective: To assess the impacts of sugar alternatives on homemade vanilla ice cream while gathering information on a community’s opinion of the effects.

Method: Ice cream samples made with sugar (control), Sweet’N Low®, Equal®, Splenda®, Stevia®, and monk fruit sweeteners were prepared for a taste test. A sensory evaluation was conducted on March 31, 2022 at Ouachita Baptist University. Microsoft Excel® was utilized to conduct …

Influence Of Fertilizer Rate On Swollen Stem Formation (“Bulbing”) And Vitamin C Content In Different Kohlrabi Cultivars, Mark Iradukunda, Paul E. Read Mar 2022

Influence Of Fertilizer Rate On Swollen Stem Formation (“Bulbing”) And Vitamin C Content In Different Kohlrabi Cultivars, Mark Iradukunda, Paul E. Read

Honors Theses

Kohlrabi (Brassica oleracea Gongylodes Group) is a vegetable crop found in the Brassicaceae, and it is rich in antioxidants such as vitamin C. Vitamin C helps in oxidative damage repair and strengthens the immune system, so exploring vitamin C sources may contribute to improving human health. The objective of this study was to determine the effect of different fertilizer rates on kohlrabi yield, in terms of the swollen stem and the vitamin C content, and if those effects are similar in different kohlrabi cultivars. In this greenhouse study, we fertilized four potted kohlrabi cultivars with a common water-soluble greenhouse fertilizer …
