Antimicrobial interventions currently being applied to control foodborne pathogens in raw meat-based diets (RMBDs) for dogs are rare and costly, and yet their demand keeps rising. The objective of this study was to determine the antimicrobial efficacy of encapsulated lactic acid challenged againstSalmonella entericainoculated in model RMBD. Nutritionally complete model RMBDs were prepared with three levels of encapsulated lactic acid (1.0%, 2.0%, and 3.0%) and formed into approximately 100 g patties.
