Some of the most striking changes in the production and marketing of dairy products have occurred since World War II. Dairy farming, for instance, has become more specialized and more commercial. Modern techniques of refrigeration, bulk handling, and transportation have made it possible for market milk to be shipped many miles without appreciable loss of quality.

Within the boundaries of Utah are approximately 52.7 million acres of land. About 41 million acres are rangeland, of which 73 percent is federally owned and 5 percent state owned (6).1 The portion owned by the Federal government is administered by the Bureau of Land Management (BLM) and the Forest Service. Most of this land is either arid or mountainous and has been used mainly for grazing in the past. IT has other uses, however, such as mining, forestry, recreation, and watersheds. A current problem facing farmers is, how much should they mechanize their farm perations? As the relative price and productivity of factors change farmers usually have to adjust their operations to assure maximum profits. Technological advances often change the relative productiveness and the price of machinery. These changes have caused the progressive farmer to continually review his farm organization and make adjustments in levels of factor use. If he is to produce at maximum profits it is necessary that his machinery investment be in proper adjustment with other resources.

Dairying ranked second in producing farm income in the state of Utah in 1929 (II). Twenty-two and two tenths percent of cash receipts from the sale of agricultural products came from dairying. Beef enterprises were the only larger source of farm income in the state, with 24.7 per cent of the total cash receipts. Because of the importance of dairying in the state, much work has been done to provide dairymen with information that will enable them to obtain a higher net return from dairying.

Red sour cherries have been a dessert item for Americans since long before George Washington chopped down the cherry tree. In the past twenty years production of sour cherries has increased at a faster rate than population. Since 1938 population of the United States has increased approximately 43 million, a 25 percent increase, whereas sour cherry production has increased approximately 78 million pounds, a 38 percent increase. This trend is expected to continue in the future, in fact, according to a Michigan survey the production of sour cherries in relation to the population will increase more in the future.

The beef cattle industry in Utah is of major importance in the economy of the state. In terms of cash receipts it is the largest single agricultural enterprise. In 1957 cash receipts from the sale of cattle and calves amounted to $38,405,000. This figure represents approximately 70 percent of cash receipts from the sale of all meat animals. It comprises 33 percent of cash receipts from the sale of livestock and livestock products and 24 percent of total cash receipts from farm marketings (2).

Importance of lamb marketings

The production and marketing of lambs is important in Utah's economy. In 1956, Utah ranked fifth in the United States in lambs produced and saved, with 1,038,000 head produced and 840,000 marketed for consumption, table 1. Cash receipts from the lamb marketings during the year amounted to over 10 million dollars, and in addition, the state's economy benefited through revenues, employment, and raw materials which were provided by the lamb industry.

Man has always included some form of sugar in his diet. Only in the past two centuries has sugar been developed as an individual food. During that time vast amounts of money and time have gone into the development and improvement of sugar. In 1747, a German chemist by the name of Andreas Marggraf proved that sugar beets contained sugar. One of his pupils, Franz Karl Achard, in 1799 gave further evidence of this fact by his experiments.

Poultry and egg purchases represent a substantial part of the consumers' dollar spent for food. The Marketing and Transportation Situation reported that the average American family of 3.3 persons used 11.3 percent of its food expenditures for the purchase of chickens and eggs in 1953. This means that the average family spent $113.00 for eggs and chickens during that year.

The production of turkeys by farmers for market in Utah has risen from a meager beginning a few decades ago, to one of the important agricultural industries today. Utah's turkey industry has expanded tenfold from the 226,000 head sold in 1929 to the record high 2,285,000 head sold in 1954. Pounds sold was 13 times greater in 1954 than in 1929 due to the increased weight per bird as well as to the increase in number of head. The sheep industry of Utah began about the middle of the nineteenth century when the Mormon pioneers came to Utah. The first sheep in Utah were of Merino breeding, kept primarily for wool production. These breeds were decendants of the early Merino sheep from Spain and were probably introduced into this country by Spanish explorers. Sheep are produced to provide food and fiber in Utah. Utah's climate, topography, and natural vegetation are conducive to sheep production. Sheep do well in semi-arid climates and can economically harvest the natural vegetation on land not suited to crop production. Utah has large acreages …

Many of the fluid milk processing plants in Utah are relatively small. The typical small plant in Utah is generally family operated with some hired help. Although most of the small plants are individually owned, some are operated as partnerships. Often the same man picks-up, processes, and then delivers the milk. Some of the processors also own dairy herds. In these cases the same man performs all the functions necessary to carry the milk products from the farm to the consumer's door. It is not uncommon to find the plant owner and manager performing all these duties himself.

Animal feeding rations have long included carbohydrates as a primary constituent. Grains are included in most animal fattening rations, and the by-products of sugar beets have been used f or many years in livestock feeding (Kutish 1950 b). The use of molasses in commercial feed mixes in 1899 made possible its extended use in animal feeding practices (Hall 1950).

On January 1, 1952, 50,000 head of cattle were on feed for slaughter in the state of Utah (6). This was an increase over previous years. The average number of cattle on feed for slaughter January 1st during the 1948-52 period was 45,000 head. This number was 30 percent larger than the average number on feed during the 1943-47 period. As shown in figure 1, the number of cattle on feed has fluctuated from year to year. The principal problem confronting farmers is knowing how to manage the resources to attain maximum income over a period of time. In 1951 the cash receipts from turkeys amounted to $13,986,000, or 7.4 percent of the cash income from all farm commodities (4). Commercial egg production in Utah has developed largely since 1920. Prior to that time most farms had some chickens but the eggs were either used at home or consumed on the local markets. What few commercial poultry farms there were also supplied local markets. It has been estimated that the total egg production in the stat was just about equal to the consumption within the state. Soon after1920 however, egg production on a commercial basis began and thereafter expanded rapidly for a time.

Commercial egg production in Utah has developed gradually since 1920. Production of eggs increased from 142 million in 1924 to 433 million eggs in 1946. The percentage of total farm income of the state derived from the poultry industry increased from 5.3 percent in 1924 to 23.1 percent in 1946 and at the present time constitutes the largest income of any farm enterprise in this area.
