Cynthia Ruffin began her school nutrition career in Louisiana more than 35 years ago. She received a B.S. in Dietetics from Louisiana State University and an MBA from Southeastern Louisiana University. Cynthia has worked at the local school level, with the Louisiana Department of Education, and as the Director of Child Nutrition in St. Charles Parish Public Schools near New Orleans. Some of her career highlights include developing the Louisiana School Lunch Cycle Menus; expanding Breakfast-on-the-Go programs, implementing The Main Course, a culinary training program for food service technicians; and contributing significantly to district recovery after the devastation of Hurricane …

Lou Simoneaux spent twenty years traveling the world with her military family before returning to her home state of Louisiana and beginning a new career in school food service. She spent several years in the Panama Canal Zone and then moved to France. When her husband finally retired they returned to Lou’s hometown of Napoleonville, Louisiana, where she spent the next twenty-nine years providing healthy, nutritious meals to the children of Assumption Parish.

The University of Nebraska and AgBios, Inc. launched the AgBiosafety website (http://agbiosaftzy.unl.edu) with the purpose of educating the public about agricultural biotechnology risk and safezy issues through science-based content. This article discusses the creation ofthe website, its components, and data gathered from usage statistics and a web-delivered survey. Also included is a discussion of the results ofdata gathered and recommendations for future web-based educational efforts in biotechnology safety and risk assessment.

This paper examines the impact of the massive population increase in Africa in the post World War II era and the environmental challenges the continent confronts in trying to feed such a high number of people. The paper is divided into three sections. The first section examines the demographics of Africa, which show that the continent has increased its total population by 750 million people from 1950 to 2008. This study presents a quantitative examination of the demographics and profile of the 2009 Journal of Blacks in Higher Education annual study of the most cited Black scholars in the Social Sciences and Arts and Humanities in the United States. Among the variables examined in this study are institution of employment, academic department, institution of terminal or highest academic degree attainment and academic major, geographic region of employment and where terminal degrees were attained, types of degrees, and year of graduation with terminal or highest degree.

On June 4, 2009 U.S. President Barack Obama delivered a highly anticipated speech on U.S.-Arab / Muslim relations in Egypt, Africa. This paper examines Africa’s development in the President Barack Obama era. The paper makes an argument for a stronger federal African Union (AU). It argues that the sooner member states of the AU give to the organization a significant portion of their sovereignty the better equipped it will become in seeking a better life for the people of the continent and also compete in the international arena. This project examines how farmers prefer to learn and what that means for agricultural education, especially Extension educational program development and delivery. Extension educators use a variety of methods for teaching content and processes that enhance farmer learning and adoption of new practices. This research project specifically looked at farmer learning preferences and Extension educator’s instructional methods.

Walk into any public school and talk with the children about their experiences in nature and you will begin to see a pattern. Children have made few connections with the world around them. They do not spend much time outdoors and the time they do spend outdoors is not spent interacting directly with nature. Why does this matter? The controversy around evolution, creationism, and intelligent design resides in a historical struggle between scientific knowledge and popular belief. Four hundred seventy-six students (biology majors n=237, nonmajors n=239) at a secular liberal arts private university in Northeastern United States responded to a five-question survey to assess their views about: (1) evolution, creationism, and intelligent design in the science class; (2) students’ attitudes toward evolution; (3) students’ position about the teaching of human evolution; (4) evolution in science exams; and (5) students’ willingness to discuss evolution openly. There were 60.6% of biology majors and 42% of nonmajors supported the exclusive teaching …

Ohio’s physical education academic content standards provide clear, rigorous expectations for all students in kindergarten through 12th grade. Physical education is a critical component of a complete education. Beyond the physical benefits, quality physical education has been linked to cognitive, affective and quality of life benefits for students at elementary, middle and high school levels. The six National Association for Sport and Physical Education (NASPE) standards were adopted by the State Board of Education in December 2007. These standards represent physical education content that all students should know and be able to do as they progress through a kindergarten through …
