Sporeforming bacteria and their endospores have the ability to survive thermal treatments and proliferate in the milk and dairy products to cause spoilages. We applied the effect of hydrodynamic cavitation in controlling these bacteria and their spores at pilot scale level. Our aim was to investigate a technology that would improve the microbial quality of milk and dairy products, and is capable of being scaled up to be adapted at industrial level. The objective of this study was to examine the effects of feeding exogenous amylolytic and proteolytic enzymes on lactation performance of dairy cows fed freshly ensiled corn silage-based diets. We hypothesized that the addition of these enzymes would improve nutrient utilization and consequently lactation performance. The main purpose of this body of research was to evaluate carinata meal as a feedstuff for dairy heifers and lay the foundations for its future evaluation in lactating dairy cow diets. This research focused on evaluating the taste preference of carinata meal compared with other oilseeds meals and distillers dried grains with solubles (DDGS). Three studies and a meta-analysis were conducted to determine the performance, nutrient digestion, and gas emissions of dairy cows fed diets with different starch concentrations (19 to 27% of DM). Study 1 evaluated the effects of reducing corn grain starch with non-forage fiber sources (NFFS, soybean hulls and beet pulp) in diets of soybean meal (SBM) or canola meal (CM). In study 1, reducing starch from 27 to 20% with soybean hulls and beet pulp had a negative effect on dry matter intake (DMI), milk yield and energy-corrected milk (ECM), regardless of the crude protein (CP) source. The second part evaluates a wiped film evaporator (WFE) to concentrate MCC. The third part evaluates heat stability of the high concentration MCC produced by WFE. The purpose of this research was to study the differences in the quality of 100% whole wheat flour (WWF) when the bran fraction was subjected to mild solvent treatment before reconstitution with the endosperm. The bran treatments included water washing and washing with ethanol solutions (50% and 100%). WWF prepared with untreated bran served as the control. Effects of these treatments on particle size, chemical composition, color, dough rheology, product formulation, and sensory characteristics of 100% whole wheat flour were studied. The first study evaluated the efficacy of different water sources and treatment systems on ruminal parameters using an in vitro gas production system. Studies were conducted to determine the effectiveness of ultrasonication and hydrodynamic cavitation, in a continuous mode, alone and in combination with thermal treatments, on heat resistant aerobic sporeformers and spores in skim milk, and skim milk concentrate. The first study was conducted to investigate the effectiveness of a continuous ultrasonication process to reduce thermoduric Bacillus coagulans cells in skim milk. A 25% reduction was obtained by lab pasteurization alone, whereas ultrasonication alone resulted in an inactivation of 92% after 12 passes (80 sec exposure time per pass). Ultrasonication when combined with pasteurization resulted in further increased inactivation to 99.98%. It …

The objective of this study was to investigate the effect of substituting soybean meal products with yeast-derived microbial protein [(YMP) DEMP; Alltech Inc., Nicholasville, KY] in diets containing two forage concentrations. Sixteen Holstein cows (4 primiparous and 12 multiparous) were randomly assigned to a replicated 4 × 4 Latin square in a 2 × 2 factorial arrangement of treatments. Regional integration of potato and dairy farms has developed in Maine through arrangements where manure, feed, and sometimes land, are exchanged between neighboring farms. The effects of integration on soil quality, crop production, nitrogen (N) cycling, and N loss were investigated in field and laboratory studies of contrasting amended (manure, compost, green manure, and supplemental fertilizer) and nonamended (fertilizer only) soil management systems within 2-year potato (Solanum tuberosum L.) rotations in the Maine Potato Cropping Systems Project (MPEP). This thesis examines the profitability of and sustainability indicators for potato and dairy farms in Maine integrating crops and livestock in two different ways. The first is inter-farm coupling, where two or more specialized producers are close enough to exchange manure applications for crops used as livestock feed. Land base is shared between farmers. The second is where farms are on-farm integrated. Here crops and livestock are raised on the same farm and manure is applied to cash crops and livestock feed crops. Research to date has focused on increasing the supply of glucose precursors in transition dairy cows to reduce ketosis. Ketones and ketone bodies represent energy sources for body tissues; therefore, conserving blood glucose for lactose synthesis in the mammary gland. This led to the hypothesis that transition cows might benefit from diets formulated to stimulate rumen epithelial ketogenesis or dietary ingredients supplying ketone precursors.
