This document outlines a project sponsored by Elizabeth Mentel and Michael Clausson that addresses the shortcomings in current splinting options, particularly for wrist fractures in elderly patients. Stakeholders include clinicians, patients, and emergency medical technicians. Multiple improvements can be made to current splinting options to help alleviate inflammation along with splint versatility, affordability, accessibility, and ease of use. After determining the critical customer requirements, the primary objective of this project was to find a way to manage inflammation. Broiler production in Arkansas was valued at over $3.6 billion in 2013 (University of Arkansas Division of Agriculture Cooperative Extension Service). Consequently, improvement in any phase of the production process can have significant economic impact and animal welfare implications. One area of concern for the poultry industry is thermal stress experienced by the birds after arrival at the processing plant and before they are taken in to be processed, during which time they are left to wait in holding sheds. Abstract
Poultry health and mortality rates are important considerations in poultry production, as companies can minimize product loss and appeal to a consumer base whose concern for animal welfare continues to grow. Although animal welfare is a consideration for the entire poultry production process, this project focuses on the live-haul phase of the process, specifically during transport from grow houses to processing facilities. During the summer months, broiler chickens being transported can suffer from heat stress that can lead to death. The meat industry is required to comply with processing performance standards for preventing the growth of foodborne pathogens in products. These performance standards, established by the United States Department of Agriculture - Food Safety and Inspection Service (USDA-FSIS) require a reduction of Salmonella spp (lethality standard) and limit the growth of sporeforming bacteria (stabilization standard) in certain processed meat products. In general, strategies used to comply with these standards are associated with thermal processing. Meat processors have difficulties complying with these performance standards.
