Course-based Undergraduate Research Experiences (CUREs) are an increasingly utilized model for exposing students to research. The lack of robust assessments is a major hurdle to wider adoption of CUREs. The Coronavirus Infectious Disease 2019 (COVID-19) pandemic necessitated a drastic shift of in-person courses to the online format. Using the Participant Perception Indicator (PPI) survey, we measured students’ self-reported changes in learning from such a biochemistry course at a large university in south Florida based on the Biochemistry Authentic Scientific Inquiry Lab (BASIL) model. In the past hundred years, there have been a number of pandemics that have affected the entire world, including the 1918 H1N1 influenza pandemic, the 1957 H2N2 influenza pandemic, and the 2009 H1N1 influenza pandemic. Youth today have tendencies for unhealthy lifestyles, being sedentary, consuming high fat diets low in fruits and vegetables, all contributing to child obesity, type 2 diabetes, hypertension, and precedence for life-long health concerns. School lunch programs provide opportunity for youth to consume balanced diets but does not make a significant change in lifestyle. Research has identified that youth participating in gardening at home were positively impacted with making lasting healthy choices by improved knowledge and garden connection. This paper outlines the conceptual framework of an inclusion initiative for programs serving secondary students from economically challenged communities. It proposes the use of distance learning technologies to afford these students access to learning resources, experiences, and environments in STEM. One stumbling block for students considering becoming a STEM major has been introductory math courses. A new, innovative precalculus course being developed and delivered by five USG institutions may provide a solution. MATH 1113e Precalculus Emporium combines lessons learned from the Math Emporium model pioneered at Virginia Tech with elements of MOOC delivery to create a highly interactive and support rich online course model. While the pilot debuted in January 2014 with students and faculty from five institutions, the larger vision is for the course to become available for all USG institutions in the near future.

One might argue that the word technology is one of the most misunderstood and misused terms in common usage today.
