The project aimed to explore the rich and multifaceted legacy of cacao and chocolate in Latin America, incorporating perspectives from various academic disciplines, including public history, chemistry, Spanish language, graphic design, culinary arts, and family science. Growing up in an urban food desert can significantly affect children's development, health, and well-being (Jencks et al., 1990; Leventhal et al., 2000). Compared to their more affluent peers, youth living in low-socioeconomic urban neighborhoods are at greater risk of experiencing poor-quality diets, food insecurity, unhealthy body weights, and mental health problems (Duncan et al., 1997; Sampson et al., 1997). Moreover, children living in food-insecure households are more likely to consume calorically dense diets high in trans fat and added sugar, putting them at risk for poor health, childhood obesity, and chronic, diet-related diseases as adults (Nielsen et al., 2002). …

This thesis focuses on the role of indigenous women in relation to ecotourism efforts and ecoinnovation. Through an analysis of three case studies, I discuss the need to account for both indigenous people and gender when engaging in ecotourism efforts. I first engage in a literature review that develops the complex relationship between the identity factors of indigeneity and gender. I then look at a case study of the hotel Taselotzin in Cuetzalan del Progreso, Mexico in which a cooperative group of indigenous women founded a hotel. Anthropological studies on Brazilian Catholicism traditionally focused on popular variants of this religious practice and their relationship with the official Catholicism. Encouraged by recent anthropological perspectives, which highlight the relevance of devoting researches not only on the margins, but also on the center of social practices, this paper analyzes contemporary practices of Brazilian Catholic friars and priests on health promotion. This thesis investigates the effects of the language barrier between English-speaking H-2A managers and their Spanish-speaking H-2A employees on Kentucky farms with special attention to the insights that can be gleaned from farm managers concerning the intersection of communication, language barriers, and the unique social and cultural environment created by the microcosm of the H-2A program. The project includes a literature review evaluating the currently documented effects of language barriers in various industries as they relate to the language barriers found within agriculture. IRB-approved interviews with farm managers provide original data to evaluate these potential effects, whether positive or negative. …

It argues that the experience of the agricultural working class is central not just to a physical movement towards tangible agricultural change but to a society's ability to understand its socio-cultural and natural environment. The unsettling short stories that comprise Samanta Schweblin’s 2008 collection Pájaros en la boca are textured and populated by the flesh of not only humans, but also the skins of species that belong to a wider zoological and mythical scope. Those creatures in Schweblin’s literary output who possess scales, feathers, and wings find themselves variously rubbing up against, crushed under, and orally engulfed by human dermis. There is growing evidence that bilingual individuals may have higher levels of empathy (Javor, 2016). One potential mechanism for this relationship is that bilingual individuals tend to have higher levels of executive functioning (Costa et al, 2008), which is linked to higher empathy because individuals are able to more easily adopt others’ perspectives. Mycobacteriophage (phage) are a diverse group of viruses that infect Mycobacterium. Their study allows further understanding of viral evolution and genetics. Phage tightly control gene expression and transcribe their genes using host RNA polymerases. This project identifies potential transcriptional control elements in the genome of mycobacteriophage Ukulele. Promoters are sequences of the genome that allow binding of RNA polymerase and initiation of transcription. 21 putative promoters were identified in the Ukulele genome. To confirm transcriptional activity from putative promoters, a GFP reporter system was developed in mycobacterial cells. It was also included by Justo Sierra in a history book for the Escuela Nacional Preparatoria, a decision which raised a lot of criticism from conservative groups. It is also discussed the implications of social Darwinism in the early Twentieth Century Mexico. The document we offer is a satire published in those years, which resembles the tone of Swift's Gulliver Travels.

Hexachlorocyclohexanes (HCHs) are a family of chlorinated organic compounds that were previously used as agricultural insecticides. HCHs are recognized as persistent organic pollutants due to their toxicity, recalcitrant properties, and tendency to bioaccumulate in food webs. Although HCH was first synthesized in 1825, its use was not widespread until the discovery of the insecticidal activity of the γ-HCH isomer in 1942. γ-HCH and its toxic waste isomers α-HCH and β-HCH were banned from production and use by the United Nations in 2009, yet these chemicals still present environmental problems due to their persistence in soils and surface waters. The primary goal of my sabbatical is to become more proficient in Spanish by cultural immersion. Additionally, I plan to study various forms of agriculture in Central America and possibly South America. The time afforded through this sabbatical will allow me to have an extended stay in Costa Rica to interact with colleagues teaching agriculture at the University of Costa Rica and to immerse myself in the Latino culture.
