Growing up in an urban food desert can significantly affect children's development, health, and well-being (Jencks et al., 1990; Leventhal et al., 2000). Compared to their more affluent peers, youth living in low-socioeconomic urban neighborhoods are at greater risk of experiencing poor-quality diets, food insecurity, unhealthy body weights, and mental health problems (Duncan et al., 1997; Sampson et al., 1997). Moreover, children living in food-insecure households are more likely to consume calorically dense diets high in trans fat and added sugar, putting them at risk for poor health, childhood obesity, and chronic, diet-related diseases as adults (Nielsen et al., 2002). …

Ecoturismo Y Empoderamiento: La Ecoinnovación De Las Mujeres Indígenas En América Latina, Kathleen Sinatra

This thesis focuses on the role of indigenous women in relation to ecotourism efforts and ecoinnovation. Through an analysis of three case studies, I discuss the need to account for both indigenous people and gender when engaging in ecotourism efforts. I first engage in a literature review that develops the complex relationship between the identity factors of indigeneity and gender. I then look at a case study of the hotel Taselotzin in Cuetzalan del Progreso, Mexico in which a cooperative group of indigenous women founded a hotel. We Speak English Here: An Exploratory Study Of Language Barrier Effects In Agriculture, Camryn Clift

This thesis investigates the effects of the language barrier between English-speaking H-2A managers and their Spanish-speaking H-2A employees on Kentucky farms with special attention to the insights that can be gleaned from farm managers concerning the intersection of communication, language barriers, and the unique social and cultural environment created by the microcosm of the H-2A program. The project includes a literature review evaluating the currently documented effects of language barriers in various industries as they relate to the language barriers found within agriculture. IRB-approved interviews with farm managers provide original data to evaluate these potential effects, whether positive or negative. …

Literatura Viva reflects the links between agriculture and literature in Chiapas, Mexico, demonstrating how the ways of knowing the environment which are culturally expressed through literature and the practices of sustainable agriculture are deeply linked. It argues that the experience of the agricultural working class is central not just to a physical movement towards tangible agricultural change but to a society's ability to understand its socio-cultural and natural environment. Empathy is of critical public health importance due to its association with relationship satisfaction and well-being (Davis & Oathout, 1987; Davis, 1983). There is growing evidence that bilingual individuals may have higher levels of empathy (Javor, 2016). One potential mechanism for this relationship is that bilingual individuals tend to have higher levels of executive functioning (Costa et al, 2008), which is linked to higher empathy because individuals are able to more easily adopt others’ perspectives. Language barriers can impede access to healthcare and compromise quality of care for limited English proficiency (LEP) patients. Although a rights-based framework would suggest and federal mandates require healthcare facilities to provide language access services, multiple factors result in the persistence of language barriers in healthcare. As the literature review shows, these factors include limitations in policy, enforcement, standardization, resources, and ability to recruit and retain professional interpreters.
