This paper examines the context and meaning of the term ‘sustainability’, the factors that determine and govern climate on Earth, the population of the Earth and its trends and influencers, the requirements for sustaining life and the options that are available to humankind. The supply chains through which foods are produced, processed, and transported can have a significant impact on the environment in terms of the carbon dioxide (CO2) that is emitted during each of these phases; however, little research has incorporated information about environmental impact into supply chain scenarios. Moreover, many consumers are unaware of how their food choices may impact the environment in this way. To fill these gaps, a tool called CarbonScope was developed to show consumers the CO2 emissions associated with different food types and food transportation scenarios. It’s intended to show how communities—big or small—can incorporate green principles and technologies like energy efficiency and renewable energy into their rebuilding plans. The information in this guide is based on the real-life experiences of two U.S. Department of Energy (DOE) teams. One team worked with city leaders in New Orleans, Louisiana, after hurricanes Katrina and Rita in 2005, and the other assisted community leaders in Greensburg, Kansas, after a devastating tornado in 2007.
